WILD RICE 'N' BREAD DRESSING



Wild Rice 'n' Bread Dressing image

Hearty wild rice is and appealing addition to traditional bread stuffing, while chopped carrot adds pretty color.

3/4 cup chopped celery
2/3 cup chopped onion
2/3 cup chopped carrot
1/3 cup vegetable oil
3 tablespoons dried parsley flakes
4 teaspoons chicken bouillon granules
1 teaspoon garlic powder
1 teaspoon dried marjoram
1 teaspoon dried rosemary, crushed
1 teaspoon rubbed sage
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning
2 cups chicken broth
8 cups day-old bread cubes
3 cups cooked wild rice

Steps:

  • In a large skillet, saute the celery, onion and carrot in oil until tender. Stir in the parsley, bouillon, garlic powder, marjoram, rosemary, sage, pepper and poultry seasoning. Add the broth; heat through., In a large bowl, combine bread cubes and wild rice. Stir in broth mixture; toss to coat. Transfer to a greased shallow 2-1/2-qt. baking dish. , Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until heated through.

RISOTTO WITH WILD MUSHROOMS, PINE NUTS AND PARSLEY



Risotto with Wild Mushrooms, Pine Nuts and Parsley image

Number Of Ingredients 15

3 tablespoons olive oil
3 tablespoons raw pine nuts
1 large onion, peeled and finely chopped 2 cloves garlic, peeled and smashed
2 cups risotto rice
1½ cups dry white wine
10 cups warm chicken broth, water or a combination
Sea salt and freshly ground black pepper
4 tablespoons unsalted butter
3 ounces freshly grated Parmesan
Sea salt
½ cup mascarpone cheese, at room temperature
Topping:
1 tablespoon unsalted butter
1 pound mixed wild mushrooms, such as cremini or shiitake, trimmed and halved
2 tablespoons freshly chopped parsley

Steps:

  • 1. For the risotto: Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add the pine nuts and cook, stirring frequently, until golden, about 3 minutes. Remove the pine nuts and set aside. Return the pot to the heat and add the remaining 2 tablespoons oil, onion and garlic. Season with 1 teaspoon sea salt. Cook, stirring frequently, until softened but not brown, about 15 minutes.
  • 2. Increase the heat to high and stir in the rice. Cook, stirring, until the rice is lightly toasted, about 2 minutes. Add the wine and keep stirring until the liquid has almost completely evaporated. Lower the heat, add a ladle of warm broth (about 1/2 cup) and a pinch of salt to the pot. Cook, stirring, until most of the liquid has evaporated. Keep adding the broth, one ladle at a time, stirring until each portion is absorbed. Continue until the rice is soft and creamy with just a little bite (al dente), 25 to 30 minutes total. Stir in the butter, Parmesan and mascarpone. Stir in toasted pine nuts.
  • 3. For the topping: Meanwhile, heat the oil and butter in a large skillet. Add the mushrooms and cook until softened but still meaty, 8 to 10 minutes. Season with salt and pepper.
  • 4. Divide the risotto between 4 bowls. Top with the mushrooms and parsley. Serve warm.

I was looking for a dressing to go with a goose for Christmas when I came up with the idea to combine my 2 favorite dressings. Turned out to be a huge hit.

1 lb sausage (removed from casings)
1 cup onion, chopped
4 stalks celery, chopped
1 medium shallot, minced
2 garlic cloves, minced
1 1/2 cups wild rice
2 tablespoons olive oil
4 cups fresh cornbread, crumbled
2 1/2 cups chicken stock (giblet stock works best)
2 cups water
2 tablespoons rubbed sage
1 teaspoon sea salt
1 teaspoon ground black pepper

Steps:

  • Preheat oven to 375°F.
  • Combine 2 cups of stock, water and rice in a medium saucepan.
  • Bring to a boil then turn down heat, cover, and simmer until tender, about 1 hour.
  • Drain, put in large mixing bowl with cornbread and set aside.
  • Heat olive oil in a large skillet.
  • Sauté onion, celery, garlic and shallot over medium heat until translucent.
  • Add sausage. Brown.
  • Add sage, salt, and pepper.
  • Add to rice/cornbread mixture. Toss.
  • Put mixture into baking dish (10 X 15 works well) drizzle with remaining stock.
  • Cook on lower shelf until top is crispy, about 25 minute.

1 1/2 cups wild rice, rinsed and drained
salt & freshly ground black pepper
3 tablespoons butter
3 celery ribs, with leaves finely chopped
2 medium onions, finely chopped
1 clove garlic, minced
3 cups store-bought cornbread stuffing mix, crumbled
3 cups chicken broth, heated (homemade or canned)
3 tablespoons minced fresh parsley

Steps:

  • In a 3-quart saucepan, bring 3 cups water to a boil.
  • Stir in wild rice and 1 teaspoon salt.
  • Return to a boil, cover, and simmer over low heat 50 minutes.
  • Drain in a large coarse sieve.
  • In a 12-inch skillet over medium heat, melt butter.
  • Add celery, onions and garlic; sauté, stirring, for 10 minutes or until softened.
  • Add cooked wild rice and stuffing mix or cornbread; heat through, stirring.
  • Add broth, parsley and salt and pepper to taste.
  • Spread evenly in a 9" x 13" glass baking dish, and cover tightly with aluminum foil.
  • (Dressing may be prepared up to 6 hours ahead and refrigerated.) Bake until heated through, about 30 minutes.
  • Serve hot.

2 1/2 c chicken stock
2 c water
1 c wild rice
1 Tbsp evoo
1 c chopped onion (fine)
1 c chopped celery (fine)
1 tsp salt
1 tsp pepper
1 tsp ground sage
2 Tbsp fresh parsley chopped
1 tsp fresh thyme chopped
1/4 c butter, unsalted melted
"BIG BILL'S" BASIC CORNBREAD
2 eggs
1 1/2 c buttermilk
4 Tbsp butter, unsalted melted
1 1/2 c yellow cornmeal
1/2 c all purpose flour
2 tsp baking powder
2 tsp sugar
1 tsp salt
1/2 tsp baking soda

Steps:

  • 1. First things first....let's make the cornbread!!! preheat oven to 375*. In a large mixing bowl combine eggs, buttermilk and 4 tbs of melted butter whisk to combine. in a separate large bowl combine your cornmeal, flour, baking powder, sugar, salt and baking soda whisk to combine. Add your wet ingredients to your dry and stir until just combined. pour batter into prepared 9" baking dish bake for 30 minutes at 375* remove from oven and let stand 10 minutes.
  • 2. I always cook my rice ahead of time. Combine 2 cups chicken stock water and rice in medium saucepan bring to just a boil cover reduce heat and simmer 1 hour, drain rice and transfer to large bowl.
  • 3. Heat EVOO in skillet add onion and celery, salt, pepper, and a dash of sage. cook until softened about 5 minutes, add the fresh parsley and thyme and cook 1 more minute, remove from heat and add to bowl of rice mixture.
  • 4. at this time take your cooled cornbread and crumble it into the large bowl of rice mixture and stir to combine.
  • 5. Transfer Mixture into prepared baking dish (13x9x2) drizzle with 1/2 cup of chicken stock and 1/4 cup of melted butter. Bake until golden and crispy, about 25 minutes

WILD RICE WITH PINE NUTS

1 large shallot, minced
1 large carrot, finely chopped
2 tablespoons butter
4 ounces wild rice
3 to 4 cups hot chicken stock
1 cup pine nuts
Coarse salt and freshly ground pepper to taste

Steps:

  • Soften the shallot with the carrot in the butter in a saucepan. Add rice and two cups chicken stock. Cover and simmer gently. As the liquid dries, add more stock. The rice should take about an hour and is done when it is open and soft.
  • Meanwhile, toast the pine nuts. Mix them into the rice, season and serve at once.
