1/2 cup butter
4 ounces cream cheese
1 cup all-purpose flour (divided)
2 tablespoons all-purpose flour (divided)
10 ounces package frozen spinach
1 cup cheddar cheese, grated
1 cup swiss cheese, grated
3 whole eggs, lightly beaten
1/2 cup mayonnaise
1/2 cup milk
1/2 cup bacon bits or 10 slices bacon, crisply cooked and crumbled
8 ounces fresh mushrooms, sliced
1 bunch green onions or 1 bunch scallion, trimmed and sliced

Steps:

  • Combine the butter, cream cheese, and 1 cup of the flour in a small bowl. Mix with a pastry blender or fork, cutting the butter and cream cheese into the flour until a consistently crumbly mixture is formed.
  • Place the flour mixture in a 10" pie plate or quiche pan, and press evenly to form a crust. Refrigerate. Pre-heat the oven to 350°F.
  • Cook the spinach in a pot of lightly salted boiling water, drain well, and chop. Drain the spinach again on paper towels to remove all excess moisture.
  • In a large bowl, combine the spinach with the two tablespoons flour. Add the cheddar and Swiss cheeses, eggs, mayonnaise, milk, bacon bits or crumbled bacon, mushrooms, and green onions.
  • Pour the mixture into the chilled pastry shell and bake for 1 hour, or until set. Serve warm.

1 pound ground pork sausage with sage
1 teaspoon baking powder
20 grape tomatoes, sliced in half and sprinkled with salt
6 large eggs
10 ounces sharp Cheddar cheese, grated (about 2 1/2 cups)
Salt and pepper
Two 9-inch unbaked frozen pie shells (set them out to thaw while preparing the other ingredients)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, cook the sausage until browned and cooked through, about 10 minutes. Then remove with a slotted spoon and reserve.
  • In a large mixing bowl, whisk the baking powder, tomatoes and eggs together. Add the cooked sausage and the cheese to the egg mixture and stir together with a large spoon. Add salt and pepper and divide the mixture between both unbaked pie shells. Bake until the filling is set, about 30 minutes. Serve warm or at room temperature.

1/2 cup butter or 1/2 cup margarine
1 (3 ounce) package cream cheese
1 cup flour
1 lb spinach, washed and trimmed
2 tablespoons flour
1 cup shredded cheddar cheese
1 cup shredded swiss cheese
3 eggs
1/2 cup mayonnaise
1/2 cup sour cream
8 slices bacon, cooked and crumbled
1 cup sliced fresh mushrooms
1/2 bunch green onion, sliced

Steps:

  • In food processor with steel blade or in large mixer bowl, cut butter and cream cheese into the 1 c flour until mixture forms a smooth dough. Refrigerate for 1 hour.
  • Roll doughh out to fit a 9" pie pan or quiche pan. Freeze 10 minutes.
  • In a large saucepan, cook the spinach over medium heat for a few minutes, until the spinach wilts, Drain and chop. Drain on paper towel.
  • In a large bowl, combine spinach with the remaininng 2 Tbsp flour, Mix in the remaining ingredients. Pour into prepared pie shell.
  • Bake at 350 degrees for 50-60 minutes until quiche has set in the center.

8 slices bacon
1 small onion, chopped
4 eggs
2 tablespoons milk
2 tablespoons all-purpose flour
1 teaspoon dried parsley
¼ teaspoon dried thyme
salt and pepper to taste
1 (9 inch) unbaked pie crust
¼ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain (reserving 1 tablespoon of grease) crumble bacon and set aside. Heat reserved bacon grease in skillet and saute onion until soft.
  • In a large bowl, beat together eggs, milk, flour, parsley, thyme, salt and pepper. Add bacon, onion, mozzarella and cheddar cheese; mix well. Pour mixture into pie crust.
  • Bake in preheated oven for 45 minutes, or until lightly brown on top and firm in the middle. Serve warm.

1 teaspoon unsalted butter or 1 teaspoon margarine
1/2 cup onion, chopped
2 cups swiss cheese, shredded
6 slices lean bacon, cooked and crumbled
2 tablespoons flour
3 large eggs
1 cup 1% low-fat milk
1/4 teaspoon salt
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 400 degrees. Line a 9 inch quiche dish with the pastry and flute the edges. Fill with dry beans and bake for 15 minutes or until light brown. Discard the beans and cool on a rack.
  • Meanwhile, in a 6 inch nonstick skillet, melt the butter over moderately high heat. Add the onion and saute for 5 minutes or until soft and then transfer to a medium size bowl. Toss with the cheese, bacon and flour. Spread in the pie crust.
  • In the same bowl, whisk the eggs with the milk, salt and nutmeg. Pour over the pie mixture and bake, uncovered for 35 minutes or until the center is set.

I am not taking much credit for this recipe; I combined two awesome recipes Recipe #261072 and Recipe #165801 to make my favorite version. I am posting for safe keeping. I cannot get over thaT 4 eggs can stretch this far. It works as a wonderful hearthy lunch or a lighter dinner served with a salad UPDATE - the butter in this recipe is really not necessary, I have made it without and didn't miss it at all.

4 eggs
1 1/2 cups 1% low-fat milk
3 tablespoons butter, melted
1/2 cup self rising flour
1 cup cheddar cheese, shredded
1 small onion, shredded on cheese grater
1 medium potato, shredded on cheese grater
3/4 cup lean turkey sausage, precooked (you can also use bacon or any other meat you'd like)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried basil or 1 tablespoon fresh basil

Steps:

  • Whip eggs and milk (I use KitchenAid).
  • Add butter and flour, whip some more.
  • Stir in cheese, bacon, potato and onion.
  • Add salt, pepper, basil.
  • Spray some non-stick spray into a pie dish, pour in egg mix and bake at 375F for 45 minute.

6 slices cooked bacon

1 frozen 9-inch pie shell

Steps:

  • Preheat oven to 400 degrees.
  • Melt the butter in a heavy nonstick skillet over medium high heat.
  • Saute onions for 5 minutes, or until tender.
  • Transfer the onions and next 3 ingredients to a bowl.
  • Combine the eggs, milk and nutmeg in another bowl.
  • Season with salt to taste and stir in onion mixture.
  • Pour into pie shell and bake 25-35 minutes or until center is set.

1 double-crust pie dough, preferably made with shortening
1 1/4 pounds coarsely ground sirloin, flank or chuck steak (or you may chop into 1/4-inch dice)
2 russet potatoes, peeled and thinly sliced
1 large onion, halved and thinly sliced
1 medium rutabaga, peeled and thinly sliced
Salt and pepper to taste
2 tablespoons butter

Steps:

  • Divide the pie dough into 6 equal portions, press each into a flat disc, then stack them on a plate, cover with plastic wrap and refrigerate for 1 hour.
  • Preheat the oven to 400. Line a baking sheet with parchment paper.
  • Combine all the filling ingredients in a large bowl (be liberal with the salt and pepper) and mix well.
  • Roll out each dough disc into a 9-inch circle and brush edges with water. Place about 1/6 of meat-vegetable mixture off-center on each circle, topping each with 1/6 of the butter. Fold the large side of the dough over the filling, then crimp the edges to seal. Place on the prepared pan and cut several slits in the tops.
  • Bake about 15 minutes, then reduce heat to 350 and continue to bake (20 to 30 minutes) until the tip is golden brown. Serve with plenty of ketchup.
