GINGERBREAD CUTOUT COOKIES

Our two boys linger around the kitchen when these homemade gingerbread cookies are baking. I make this gingerbread cookie recipe throughout the year using a variety of cookie cutters. —Christy Thelan, Kellogg, Iowa

Number Of Ingredients 12

3/4 cup butter, softened
1 cup packed brown sugar
1 large egg, room temperature
3/4 cup molasses
4 cups all-purpose flour
2 teaspoons ground ginger
1-1/2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
3/4 teaspoon ground cloves
1/4 teaspoon salt
Vanilla frosting of your choice
Red and green paste food coloring

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Add egg and molasses. Combine the flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Cover and refrigerate until easy to handle, about 4 hours or overnight., Preheat oven to 350°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with floured 2-1/2-in. cookie cutters. Place 1 in. apart on ungreased baking sheets. , Bake until edges are firm, 8-10 minutes. Remove to wire racks to cool completely. Tint some of the frosting red and some green; leave remaining frosting plain. Decorate cookies.

I found this to be the best sugar cookie recipe for cutouts! very good flavor even without the frosting.

Number Of Ingredients 8

1 cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
3 ¾ cups all-purpose flour
2 teaspoons baking powder
¼ cup heavy whipping cream
½ cup colored sugar for decoration

Steps:

  • In a medium bowl, cream together the butter and sugar. Stir in the eggs and vanilla. Sift together the flour and baking powder, stir into the creamed mixture alternately with the heavy cream. Cover dough, and chill for 2 to 3 hours, until firm.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 1 inch apart on the prepared cookie sheets. Sprinkle with colored sugar if desired.
  • Bake for 12 to 14 minutes in the preheated oven, until bottoms and edges of cookies are light brown. Remove from baking sheet and cool on wire racks. Store in an airtight container.

1/4 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 teaspoon 2% milk
1/2 teaspoon vanilla extract
1-1/2 cups self-rising flour
Additional sugar

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, milk and vanilla. Gradually add flour and mix well. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with 3-in. cookie cutters dipped in flour. Sprinkle with additional sugar. , Place 1 in. apart on greased baking sheets. Reroll scraps if desired. Bake at 375° for 7-8 minutes or until edges are lightly browned. Remove to wire racks to cool.

1 cup sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Tinted frostings, colored sugars, edible glitter and nonpareils

Steps:

  • In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Chill until firm, 1 hour. , On a lightly floured surface, roll out dough to 1/4-in thickness. Cut out with Christmas cookie cutters of your choice. Using a floured spatula, transfer cookies to greased baking sheets. Bake at 375° until lightly browned, 8-10 minutes. 2 cups all-purpose flour
1 cup butter
1 cup water
1 1/2 cups granulated sugar
1/3 cup cocoa powder
1 tablespoon instant espresso powder or 1 tablespoon granulated coffee
2 eggs
1/2 cup Carnation Evaporated Milk
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon white chocolate, chopped or 1/2 teaspoon white chocolate chips
1/3 cup Carnation Evaporated Milk
1/4 cup butter
1/4 cup cocoa powder
1 teaspoon vanilla
3 1/2 cups confectioners' sugar

Steps:

  • CAKE:.
  • Preheat oven to 375°F Grease and line a 15x10 jellyroll pan with parchment paper, overlapping it on the 2 longer sides for easy removal.
  • Place flour and sugar in a large mixing bowl, Reserve.
  • Bring butter, water, cocoa powder and coffee granules to a bil in a saucepan. Remove from heat and add to flour mixture. Beat until well combined. Add next 6 ingredients and beat well. Stir in white chocolate. Spread batter evenly over prepared poan.
  • Bake in preheated oven 17-20 minutes or until a toothpick inserted into center of cake comes out clean.
  • ICING:.
  • Meanwhile, place milk, butter and cocoa powder in a saucepan over medium heat. Stir until butter has melted . Add vanilla and icing sugar. Stir on low heat until melted and combined. Immediately spread over hot cake.
  • TIPS: use different shaped cookie cutters instead of cutting into squares.
  • Decorate with colored sprinkles or chopped nuts.

This recipe always comes out perfect. My toddlers and I make these often. I throw the dough together in the morning and let it sit in the fridge. I take it out at dinner time to let it warm just a bit, and we roll them out and ice them after for dessert. You use different flavors of extract and add spices. For fall, I use maple extract and add cinnamon and nutmeg. I use my mixer to prepare dough and it comes together super easy.

6 tablespoons unsalted butter
½ cup confectioners' sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt

Steps:

  • Beat butter and sugar with an electric mixer in a large bowl until smooth. Blend egg and vanilla extract into the butter mixture.
