FRITTATA WITH SPINACH, OLIVES AND CHICKEN SAUSAGE



Frittata with Spinach, Olives and Chicken Sausage image

6 large eggs
1/4 cup whole milk
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 fully precooked chicken sausages, sliced into thin rounds (or removed from casing)
1/2 small red onion, thinly sliced
1 teaspoon kosher salt
2 garlic cloves, thinly sliced
3 cups baby spinach
1/3 cup pitted, roughly chopped Kalamata olives (or Turkish gemlik olives)
1/3 crumbled feta cheese (preferably French), plus more for garnish
Flaky sea salt and freshly cracked black pepper
Chopped fresh parsley, for garnish
Olive oil, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium bowl, whisk the eggs and milk until frothy.
  • In a large ovenproof skillet, heat 2 teaspoons of the olive oil over medium-high heat. Add the chicken sausage coins and brown them on all sides, 4 to 6 minutes, turning often. Transfer the sausage to a plate until ready to use.
  • Add 1 tablespoon of the olive oil to the skillet and heat it over medium-high heat until shimmering. Add the onion and 1/2 teaspoon of the salt. Cook, stirring often, until the onion is soft but not browned. Add the garlic and cook, stirring often, until fragrant, about 1 minute. Add 1 tablespoon room temperature water to the pan to stop the garlic browning, and the remaining tablespoon of olive oil, then stir in the spinach and the remaining 1/2 teaspoon of the salt. Cook, stirring often, until the spinach is wilted and the water in the pan evaporates, about 2 minutes. Spread this frittata filling evenly in the skillet and layer with the chicken sausage.
  • Pour the egg-milk mixture over the frittata filling and use a silicone spatula to scrape the sides of the pan and gently pull eggs from the edges toward the middle so that soft curds form and the frittata begins to firm up.
  • Give the pan a couple of good shakes to release the frittata from the pan bottom (the top of the frittata will still be raw). Sprinkle the olives and feta over the eggs. Transfer the skillet to the oven and cook until the fritatta is mostly dry (the feta will release some liquid--this is fine--but just be sure the egg is completely cooked) and lightly browned on top, 5 to 7 minutes.
  • Let rest 5 minutes, then slide the frittata onto a large plate and sprinkle with flaky sea salt and pepper to taste. Top with more feta, parsley and olive oil. Slice into wedges and serve warm or at room temperature.

2 pounds skinless, boneless chicken thighs, cubed
1 pound pork fatback, cubed
1 tablespoon coriander seeds, toasted and ground
2 cloves garlic, minced
1/4 cup chopped fresh mint
Finely grated zest of 3 lemons
Kosher salt
1/2 cup crumbled feta cheese
1/4 cup extra-virgin olive oil, plus more for serving
1/4 cup white wine, chilled
1 8-foot hog casing, soaked in water 30 minutes and then flushed with water
Sliced tomatoes, for serving
Chopped fresh parsley, for serving
Freshly ground pepper

Steps:

  • Combine the chicken, pork fatback, coriander, garlic, mint, lemon zest and 2 tablespoons salt in a large bowl. Transfer to a large plastic zip-top bag and refrigerate overnight.
  • At least 30 minutes before grinding the meat, place all of your tools (including the meat grinder parts, stand mixer bowl, stand mixer paddle attachment and sausage stuffer parts) in the freezer to chill.
  • Using your meat grinder, grind the marinated meat mixture through the small die plate into the chilled bowl of the stand mixer. Refrigerate at least 30 minutes, then return the mixture to the mixer. Add the feta, olive oil and wine and beat on medium speed using the chilled paddle attachment until combined. Refrigerate until ready to use.
  • Stuff the sausages (see Cook's Note) and, for best results, refrigerate overnight.
  • Before cooking, pierce each sausage several times with a pin. Grill over medium heat until the center registers 160 degrees F, 10 to 12 minutes. (You can also pan-fry or broil the sausages.) Drizzle the tomatoes with olive oil, sprinkle with parsley and season with salt and pepper. Serve the sausages with the tomato salad.

4 chicken feta spinach sausage links
1/2 medium yellow onion, minced
4 medium garlic cloves, minced
1 1/2 Tbsp vegetable oil
1 box small pasta shells
SPICY SAUCE:
1 can(s) petite diced tomatoes w/green chilies 14.5 oz.
1 can(s) tomato paste 6 oz.
2 tsp basil
1 Tbsp tone's spicy spaghetti seasoning (includes salt, dehydrated onion, spices, dehydrated red and green bell pepper, sugar, parsley, dehydrated garlic, red pepper.) ----bought this at sam's club
1 Tbsp sugar
NON-SPICY SAUCE:
1 tsp basil
1 c fresh mild salsa
1/2 can(s) (hunt's) whole plum tomatoes w/basil
TOPPINGS FOR PASTA
parmesan cheese
3 Tbsp fresh parsley, chopped
CREAMY VERSION
1/2 - 3/4 c sour cream

Steps:

  • 1. Saute onion for 5 - 7 minutes and add garlic. Then saute for 2 to 3 more minutes. Remove the casing from the sausage and place the sausage in with onions and garlic. Cook on a medium heat.
  • 2. Cook your pasta while preparing sauce. Prepare spicy hot sauce: 1 can petite diced tomatoes with green chilies 14.5 oz., 1 can tomato paste 6 oz. 2 tsp. basil, 1 tbsp. Tone's spicy spaghetti seasoning, 1 tbsp sugar. Non-Spicy Sauce: 1/2 can of whole plum tomatoes w/basil cut up, 1 cup of fresh salsa and a tsp of basil.
  • 3. Add sausage mixture to pasta.
  • 4. Finish with sauces, parmesan cheese and fresh parsley on top.
  • 5. Ready to eat.
  • 6. June 5th, 2014 --- Decided to make this dish a little different and added 1/2 - 3/4 cup sour cream. Gave it a creaminess and lightened up the tomato flavor...very tasty this way as well.
