CHERRIES IN THE SNOW CAKE I
This cake made my grandmother famous on her block!! So easy too!! Great for block parties, picnics, or holidays.

Steps:
- Prepare and bake cake according to directions given on cake mix box using a 9 x 13 inch pan. Cool in pan.
- Prepare pudding according to directions. Pour on top of cooled cake. Pour cherries on top of pudding. Serve. Refrigerate any leftovers.

This recipe was given to me about 30 years ago by a co-worker. It has been loved by my family all these years. When I moved to the area I am in now I shared the recipe with some friends and it has become a favorite of many people in my area.I hope you enjoy it as much as they do.

Steps:
- 1. Mix powdered sugar and cream cheese together until well mixed and smooth. I use a mixer on high after gettin well mixed.
- 2. Beat in Cool Whip until very creamy and smooth. Divide in half.
- 3. Slice Angel Food cakes into thin [about 1/4 th of inch] slices
- 4. Line a 9 by 13 inch pan with slices of cake,cover with 1/2 of cream cheese mixture.
- 5. Add another layer of cake slices and remainder of cream cheese mixture.
- 6. Gently spread cherry pie filling over the top of Cool Whip. Refrigerate for a least 1 hour.

I have been making this for several years. It is really a hit in the winter because it looks like it's name. Easy to do, no baking if you buy the angel food cake.

- 1. Beat the cream cheese at medium speed of mixer until smooth. Gradually add the powdered sugar, beating until blended. Gently fold in coolwhip.
- 2. Place half the cake cubes in a trifle dish or large glass bowl; top with half the cheese mixture. Spread half the cherry pie filling over cheese mixture. Repeat layers with remaining cake cubes, cheese mixture and cherry pie filling. cover and chill.

This is one of those recipes you can make when there is little time and you have unexpected guests for the weekend. This also makes a great dessert for holiday buffet; and this can be made by using any canned pie -filling- I have made it with pineapple pie filling and blueberry; both turned out great.

- 1. Crust: Mix in a medium bowl, the flour, sugar and nuts. Mix in butter until crumbly. Pat down in a 9x13-inch baking pan. Bake in 350^ oven for about 12 minutes.( or you can use your favorite pie crust or refrigerated cookie dough.) Pat down and bake the same. Set aside to cool. --- Filling: In a large bowl mix until smooth the cream cheese, and vanilla , stir in powdered sugar and Cool whip. Spread over cooled crust. Topping: Spread cherries over filling in spoonsful evenly and carefully. Top with mini chocolate chips, if desired

Steps:
- In a saucepan, combine cherries, sugar and flour. Bring to a boil over medium-high heat, stirring constantly. Continue to boil for 5 minutes. Remove from heat and set aside to cool.
- In a large bowl, beat cream cheese and vanilla until smooth. fold in whipped topping. Pour half of the cream cheese mixture into a 9x12 inch glass dish.
- Crumble the angel food cake and sprinkle evenly over the top of cream cheese mixture in dish. Spread remaining cream cheese mixture over cake. Cover top with cherry mixture. Refrigerate for at least 5 hours.

- Bake & Cool cake as directed on box.
- Combine Dream Whip, milk and vanilla.
- Beat until stiff peaks appear.
- Mix Cream Cheese, sugar & Dream Whip mix.
- Beat until smooth.

- Cream the butter and powdered sugar together until fluffy. Add the half & half and vanilla. Beat until blended.
- Whisk the flour and salt together in another bowl and then gradually mix into the creamed mixture. After all of the flour and salt has been mixed in, divide the dough into even quarters.
- Roll each quarter into a log shape and then cut each log into 6 even pieces. Roll the pieces into balls.
- Roll the pieces into balls. Flatten each ball and wrapped around a cherry.
- Roll back into a ball shape and place on an ungreased cookie sheet.
- Bake at 350°F for approximately 18 minutes or until the bottom edge is just beginning to brown. Remove from the oven, allow them to cool for about 5 minutes on the cookie sheet and then roll them in powdered sugar to coat evenly. Place on a wire rack to cool.
- Glaze: After the cookies are cooled combine all the ingredients for the glaze and stir with a fork until smooth.
- Place the glaze in a small bag, clip one corner of the bag, and then drizzle the glaze over the cookies. If you want thinner glaze...add some half & half till desired consistency.
CHERRIES IN THE SNOW CAKE
This makes the best family reunion dessert. It will go fast. If you have a jelly roll pan, you could make 2 of these and slide them side by side on that and then cover with the pudding and make a bigger cake.

- Prepare cake to box instructions in a 9”x13” cake pan. Poke regularly-spaced holes in the cake using chopstick or skewer. Allow to cool.
- While cake is cooling prepare the instant pudding using the 2 cups of milk. Spread pudding over the cake. Make sure to guide the pudding into the holes in the cake.
- Refrigerate for 2 hours. Once cake is cold, spread the whipped topping over the pudding. Then pour the cherries over the top, making sure to leave some of the white showing for the "snow". Cut into 12 squares.
