JEFF AND GEOFFREY'S ULTIMATE MEATLOAF

- Preheat the oven to 350 degrees F. Spray an 8 1/2-by-4 1/2-inch loaf pan with cooking spray. Line the pan lengthwise with a long strip of parchment, rubbing it to adhere it to the pan and making sure it is long enough to hang over the ends of the pan.
- Put the beef, lamb and pork into a large mixing bowl and add the olives, onions, crushed saltines, yogurt, mint, oregano, cumin, garlic and egg. Add the hot sauce, salt and some ground pepper and very gently mix with your hands until the ingredients are evenly incorporated. Add the feta and mix lightly, incorporating the feta in whole crumbles if possible. Try not to overmix; it can make the meatloaf tough.
- Transfer the meat mixture to the pan and press it gently to eliminate any air pockets. Set the loaf pan on a baking sheet and bake until an instant-read thermometer inserted into the center registers 155 degrees F, 40 to 45 minutes.
- Let the meatloaf cool in the pan for about 20 minutes before using the parchment paper to lift it out of the pan and transfer it to a serving platter. Slice while warm and serve with the Mint Tzatziki on the side.
- Grate the cucumber on the large holes of a box grater into a large fine-mesh strainer set over a bowl. Sprinkle the cucumber generously with salt, tossing a few times with your hands to evenly distribute it; let stand for 10 minutes to drain.
- Using your hands, squeeze the cucumber to drain any excess moisture. Transfer to a mixing bowl and add the yogurt, mint and garlic. Stir well to combine, taste and adjust the seasoning with salt if necessary.
- Store the tzatziki in an airtight container for up to 3 days.

- 1. Preheat Oven to 375 degrees. In the meantime, gather your ingredients.
- 2. Prepare a baking sheet with non-stick aluminum foil.
- 3. To a gallon size Ziploc bag or a bowl, add Ground turkey, soup mix, bread crumbs, salt and pepper. Mix LIGHTLY!
- 4. Next, add the eggs, garlic and tomato paste. Mix well, but try not to over mix.
- 5. Turn out onto prepared baking sheet and shape into a loaf. It should be about the size in width and length of a loaf of bread, about 5 inches high. Sprinkle Paprika evenly over the top.
- 6. In a small bowl mix the Balsamic Ketchup, Tobasco sauce and sugar.
- 7. Pour over top of meatloaf and spread evenly, "frosting" the sides as well.
- 8. Put into preheated oven and bake for 1 to 1 1/2 hours or until internal temp reaches 160 - 165 degrees.
- 9. Let stand for 5 to 10 minutes before slicing. Serve with mashed potatoes and side salad. ENJOY!!
THE MOST EASY AND DELISH MEATLOAF EVER!
This meatloaf only calls for a few easy ingredients, no chopping whatsoever! If you wish to add ketchup on top, remove the meatloaf at 50 minutes, add ketchup, then return to oven for the remaining 10 minutes.

- Preheat an oven to 375 degrees F (190 degrees C).
- Beat the egg in a mixing bowl, then add the ground beef, tomatoes, and crushed crackers. Season with onion flakes, garlic powder, seasoned salt, and pepper. Mix until evenly combined. Pack into a 9x5 inch loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

CONDUCTOMAN'S MEATLOAF
In this recipe, I use Peter Luger Steak House Old Fashioned Sauce, which is their signature steak sauce. This sauce contains horseradish, which is imperative to the recipe. In Southern New England this can be found in major supermarkets in the refrigerated meat case.

Steps:
- 1. Set tomato ketchup aside. Preheat oven to 350 degrees.
- 2. Put all other ingredients into a 1 gallon ziploc bag.
- 3. Push out most of the air and zip closed.
- 4. Mix (squish) all ingredients through the bag until completely mixed.
- 5. Put into a loaf pan large enough to hold 2 Lbs.
- 6. Spread the ketchup over the top and cover loosely with a foil tent.
- 7. Put loaf pan onto a shallow baking sheet lined with aluminum foil. There will be a good amount of grease so foil the pan well to help cleanup.
- 8. Bake for 1 hour.
- 9. Remove foil tent and continue baking for 30 minutes more or until internal temperature reaches 170 degrees.
- 10. Let rest 10 minutes before cutting into 1" slices.
- 11. Serve with Heinz Tomato Ketchup blended with Balsamic Vinegar on the side and your favorite side dishes. ENJOY!!
