Only the best chocolate cupcakes, stuffed with cheesecake filling and topped with a chocolate cream cheese frosting. These Chocolate Cheesecake Cupcakes are perfectly moist, fluffy, soft, flavourful and the easiest cupcake recipe by far.

130 g plain (all purp) flour ((1 cup / 4.6oz) )
½ cup dutch processed cocoa ((40g / 1.4oz) )
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, melted ((113g / 1 stick) )
½ cup caster (superfine) sugar ((100g / 3.5oz) )
½ cup packed dark brown sugar ((100g / 3.5oz) )
2 large eggs, room temp
2 teaspoons vanilla extract
¾ cup buttermilk
250 g cream cheese, softened
2 ¼ cup icing (confectioners / powdered) sugar, sifted
½ cup thickened (heavy cream
1 teaspoon vanilla extract
85 g unsalted butter, softened ((¾ stick) )
¼ cup cocoa
¼ teaspoon salt

Steps:

  • Preheat your oven to 350F / 180C / 160C fan and line your muffin tins with paper cases
  • In a bowl, sift together the flour, cocoa, baking soda, baking powder and salt. Mix well to combine.
  • In a separate bowl or the bowl of a stand mixer, beat together the melted butter and both sugars until smooth.
  • Add the eggs one at a time, scraping down the sides of the bowl each time and beating well after each. Add the vanilla and beat to combine.
  • Add ⅓ of the flour mixture to the wet ingredients. Stir through gently until just combined.
  • Now add half of the buttermilk, mix gently again. Continue like this until all the flour and buttermilk is combined... just. It is important not to overmix or be too heavy handed otherwise your cupcakes will turn out dense and tough.
  • Fill the cupcake cases to about only to about ½ full. Bake in the oven for around 18-20 minutes, turning the pan around in the oven half way through to make sure they bake evenly. When a toothpick inserted comes out with just a crumb or two, they are done.
  • Cool in the tin for 5 minutes before turning out onto a cooling rack. Make sure they are completely cool before frosting.
  • For the cheesecake filling, add the cream cheese, cream, vanilla and half the icing sugar to a bowl and beat using a handheld beater until smooth and creamy.
  • Use a sharp knife or cupcake corer to cut a hole in the top of each cupcake, then fill each with around 1 teaspoon of the cheesecake filling. Set aside the rest.
  • In another bowl, beat the butter and remaining sugar until smooth and creamy. Add the leftover cheesecake filling, cocoa and salt and beat just until smooth (don't overbeat).
  • Pipe the frosting on top of your cupcakes then roll the edges in cookie crumbs.

Nonstick baking spray
1 cup plus 2 tablespoons lightly salted butter, room temperature
1 cup granulated sugar
1 cup light brown sugar
3 eggs
2 1/2 cups plus 2 tablespoons all-purpose flour
1 cup cocoa powder
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups whole milk yogurt
8 ounces semisweet chocolate
3/4 cup sour cream
1 teaspoon vanilla extract
1 tablespoon cocoa powder
4 tablespoons light corn syrup

Steps:

  • Preheat the oven to 350 degrees F. Spray the bottoms 24 the cupcake molds with nonstick spray. Fill each with a double layer of cupcake papers. Alternatively, use a nonstick cupcake tin and spray the sides and bottoms with nonstick spray. Set aside.
  • In the bowl of a stand mixer fitted with a whisk attachment, "cream" together the butter and granulated sugar until smooth, 3 to 5 minutes. Scrape down the sides with a rubber spatula and mix to blend. Add the brown sugar and continue mixing until both sugars are fully integrated and the butter soft, 3 to 5 additional minutes. With the mixer on a slow speed, add the eggs, 1 at a time.
  • In a medium bowl, sift together the flour, cocoa powder, baking powder, salt and cinnamon. With the mixer still on low speed, gradually incorporate about half of the flour mixture. When fully mixed, add half of the yogurt. Add the remaining flour and the remaining yogurt. The batter will be fairly dense and thick. Fill the tins a little more than 3/4 full. For a mold that has between 3 and 4-ounce holes, I like to use a 1/3 cup measure, leveled, to fill each one with the same amount of batter. When the tray(s) are full, tap the tray a few times on a flat surface to level the batter out and put the tray(s) in the center of the oven.
  • Bake for 8 minutes then rotate the cupcakes halfway. Bake for an additional 10 minutes. A cake tester, when inserted into the center of a cupcake, should emerge clean. Remove the cupcakes from the oven and allow them to cool for 5 minutes. Gingerly remove them from the tins so the heat from it doesn't continue to cook the cupcakes and risk drying them out. Set aside to cool completely.
  • In a small, heatproof bowl, melt the chocolate over a pot of simmering water (a double boiler). In a small saucepan, gently heat the sour cream over low heat. When the cream begins to simmer, shut off the heat and whisk in the vanilla. Use the tablespoon measure to measure out the cocoa powder and add it to the sour cream. Whisk to blend. Without cleaning the spoon, measure the corn syrup and add it to the chocolate. The layer of cocoa powder on the spoon will prevent the corn syrup from clinging to the spoon making it easier to add the precise amount of syrup. When the chocolate has melted, remove from the heat and allow the cream and chocolate to "rest" for 5 minutes. Gently stir them together and set aside.
  • When the cupcakes are cooled, spread the chocolate glaze over the tops and serve.

They're so delicious, they're easy to make, and everyone always wants the recipe. :) My mom used to spread the extra glaze between graham crackers and we would eat them after they hardened. Those were so good that sometimes we would just make the glaze recipe minus the cupcakes!

devil's food cake mix (and whatever else the cake mix calls for- eggs, oil, water usually)
8 ounces cream cheese
1/3 cup granulated sugar
1 egg
1 cup semisweet mini chocolate chips
1/4 cup butter
1 cup granulated sugar
1/4 cup milk
2/3 cup semi-sweet chocolate chips

Steps:

  • Preheat oven according to cake mix box directions.
  • Line muffin tins with paper liners.
  • Prepare cake mix according to box directions.
  • Fill paper liners 2/3 full and set aside.
  • Prepare the filling:.
  • Beat cream cheese, sugar and egg.
  • Add mini chocolate chips and stir until combined.
  • Drop 1 tablespoon filling into center of each batter section.
  • Bake according to cake mix box directions & cool.
  • Prepare the glaze:.
  • Melt together on stove top the butter, sugar, and milk.
  • Boil 30 seconds.
  • Add chocolate chips and stir until completely combined.
  • Dip cupcakes (tops) into the glaze while it is hot. Twist and turn right side up to let the glaze settle on the tops of the cupcakes.
  • Enjoy! :).

6 tablespoons unsweetened dark baking cocoa
1/2 teaspoon instant espresso coffee powder or granules
1/2 cup fat-free (skim) milk
3/4 cup white whole wheat flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup fat-free egg product
1/2 cup granulated sugar
1/4 cup packed brown sugar
3 tablespoons canola oil
2 teaspoons vanilla
2 teaspoons fat-free (skim) milk
1 tablespoon unsweetened dark baking cocoa
1 oz fat-free cream cheese (from 8-oz package)
1/3 cup powdered sugar
1/8 teaspoon vanilla
Pinch salt
1/4 oz bittersweet baking chocolate (1/2 square from 4-oz bar), grated

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In small bowl, add 1 1/2 oz chocolate, 6 tablespoons cocoa and the espresso powder; set aside. In small microwavable measuring cup, microwave 1/2 cup milk uncovered on High (100%) 30 seconds or until steaming but not boiling. Pour over chocolate mixture; stir. Cover; let stand 5 minutes. Stir until smooth.
  • Meanwhile, in medium bowl, stir flour, baking soda and 1/4 teaspoon salt; set aside. In large bowl, beat egg product with electric mixer on medium speed 30 seconds. Gradually add sugars, about 1/4 cup at a time, beating well after each addition. Beat 2 minutes longer. Beat in oil and 2 teaspoons vanilla. Beat about one-third of the flour mixture and about one-half of the chocolate mixture at a time alternately into sugar mixture on low speed until blended.
  • Divide batter evenly among muffin cups, filling each about 2/3 full. Bake 20 to 25 minutes or until tops spring back when touched lightly in center. Cool 5 minutes; remove from muffin cups to cooling rack. Cool completely before glazing.
  • In small bowl or microwavable custard cup, heat 2 teaspoons milk uncovered on High (100%) about 10 seconds or until hot. Stir in 1 tablespoon cocoa until smooth; set aside.
  • In separate small bowl, stir cream cheese until smooth. Stir in cocoa mixture until blended. Stir in powdered sugar. Stir in vanilla and salt until mixture is smooth and shiny.
  • Spoon about 1 teaspoon glaze over each cupcake; spread to edge with back of spoon. Sprinkle about 1/4 teaspoon grated chocolate over each glazed cupcake.

1-1/3 cups sour cream, divided

CHOCOLATE GLAZE:
3 ounces semisweet chocolate
2 tablespoons butter
1/3 cup sifted confectioners' sugar
1 tablespoon water

Steps:

  • Place an ungreased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil around pan. Combine cookie crumbs, 1/4 cup sugar and butter. Press onto the bottom and 2 in. up the sides of prepared pan; set aside., In a large bowl, beat one 8-oz. pkg. cream cheese and 1/4 cup sugar until fluffy. Add one egg and 1/4 teaspoon vanilla; blend well. Stir in chocolate and 1/3 cup sour cream.
