COLD ARMENIAN YOGURT-BARLEY SOUP BY SY
This delicious yogurt soup just "Hits The Spot" on a hot summers day! You can find variations of this recipe from Eastern Europe to the Middle East. I especially loved the yogurts in Turkey, Iran and Greece. If possible, try making your own home made yogurt. I use a Salton Yogurt Maker and the yogurt comes out rich and creamy. However, a good substitute is the Greek yogurts found in some of the bigger supermarkets.

Steps:
- In individual bowls add 1/2 cup of yogurt, some barley, a pinch of salt and water.
- Mix into a nice medium thick consistency (like the thickness of buttermilk), sprinkle some dried mint leaves on top.

Steps:
- Heat oil in a heavy pot and saute onions until translucent.
- Add barley and saute, stirring lightly, until translucent and slightly toasty-smelling.
- When onion is well browned, add stock and cook until barley is well done, 45 minutes to an hour (or 25 minutes in a pressure cooker).
- Remove from heat, let cool a bit, and slowly add buttermilk and more stock to thin it if necessary. Sprinkle in dill and add butter or margarine.

SPICY CUCUMBER SOUP WITH YOGURT BY SY
This is a wonderful Cold Yogurt Soup for a hot summers day! Try chopping up the cucumbers very fine or leave them on the chunky side! It you chop up the cucumbers real fine and add more water, you then have a good "Yogurt Drink" instead of a soup! Also, other variations for this Cold Yogurt Soup are using chicken stock, buttermilk, sour cream, touch of tabasco... Enjoy!

Steps:
- Put cucumbers in a bowl or colander and sprinkle with salt and toss; let stand for about 15-30 minutes
- Put yogurt, sour cream and about 1 cup water into a bowl and blend till smooth (Like the consistency of buttermilk)
- Add cucumber, scallion, garlic, lemon, jalapeno pepper to yogurt mixture. Use a motorized hand blender to chop the cucumber finer and leaving some small chunks; not to fine though. (A Braun hand mixer-chopper works well for blending the yogurt in step #2 and this step #3
- Put into refrigerator to chill
- Serve cold and topped with any combo of fresh dill, mint leaves, chivesà Mrs. Dash spices and/or salt to taste.
MADZOON -ARMENIAN YOGURT
This is a wonderful way to make your very own yogurt! Once you start this process you may never run out of yogurt again! Why pay a lot of money for those measley little containers? Mix in your own fruit in a batch also.

Steps:
- Pour the milk into a saucepan and bring to a boil, stirring constantly.
- When it comes to a boil, add 1/2 pint of heavy cream, and pour into an earthen bowl or Pyrex dish.
- When it is lukewarm, stir the madzoon starter with a spoon until it is smooth and dilute it with some of the warm milk.
- Pour this mixture into warm milk and stir.
- Set your oven to 200F degrees.
- When heated, turn off oven and place bowl in oven.
- Check in 2 hours for firmness.
- Variation: Use skim milk instead of whole milk and eliminate cream.
- Note: You may use commercial plain yogurt as your starter.

Steps:
- Bring the barley and water to a boil in a large pot. Simmer, covered, while proceeding with the rest of the recipe.
- Saute the onions in the butter until translucent.
- Add the carrots and cook, stirring frequently, until the carrots are tender.
- Add water as necessary if the vegetables start to stick.
- When the barley is tender, add the vegetables, mint, and seasonings to the pot.
- Simmer for another 10 minutes.
- Add the yogurt and parsley.
- Carefully warm the soup on low, adding some stock if you want a thinner soup.
- Done!
