Grilled cod fillets basted with butter, lemon, and green onion.

2 (8 ounce) fillets cod, cut in half
1 tablespoon Cajun seasoning
½ teaspoon lemon pepper
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter
1 lemon, juiced
2 tablespoons chopped green onion (white part only)

Steps:

  • Stack about 15 charcoal briquettes into a grill in a pyramid shape. If desired, drizzle coals lightly with lighter fluid and allow to soak for 1 minute before lighting coals with a match. Allow fire to spread to all coals, about 10 minutes, before spreading briquettes out into the grill; let coals burn until a thin layer of white ash covers the coals. Lightly oil the grates.
  • Season both sides of cod with Cajun seasoning, lemon pepper, salt, and black pepper. Set fish aside on a plate. Heat butter in a small saucepan over medium heat, stir in lemon juice and green onion, and cook until onion is softened, about 3 minutes.
  • Place cod onto oiled grates and grill until fish is browned and flakes easily, about 3 minutes per side; baste with butter mixture frequently while grilling. Allow cod to rest off the heat for about 5 minutes before serving.

Alfred Portale's Roast Whitefish With Garlic Butter image

From the Gotham Bar and Grill in New York City, this was clipped from a recent issue of Coastal Living. Alfred Portale uses cod but that is not my favorite fish so I recommend you try using your favorite whitefish of choice, preferably a thicker filet of fish.

1/4 cup unsalted butter, softened
1 1/2 tablespoons flat leaf parsley, chopped
1 large garlic clove, peeled and minced
2 teaspoons shallots, minced
1/2 teaspoon Dijon mustard
1 1/2 tablespoons prosciutto di Parma, minced
1 tablespoon flour
2 tablespoons lemon juice, freshly squeezed
salt, to taste
fresh ground black pepper, to taste
2 tablespoons canola oil
28 ounces skinless white fish fillets, boneless
lemon wedge

Steps:

  • Stir together first 10 ingredients in a small bowl; set aside.
  • Heat oil in a wide, deep, ovenproof skillet over medium-high heat. Season the fillets with salt and pepper and cook 4 minutes. turn fillets over and cook 1 minute.
  • Spoon 1 tablespoon butter mixture over the top of each fillet; transfer skillet to oven and bake at 450 for 2 minutes or until fish is just cooked through and opaque in the cenhter.
  • Add any remaining butter to pan and let melt, stirring with juices in pan; spoon over fish and garnish, if desired. Serve immediately.

2 onions, thinly sliced
2 T olive oil
2 cloves garlic, finely chopped
4 cups potatoes, peeled and thinly sliced on a mandolin
3 plum tomatoes, sliced
1/4 c oil-cured black olives, drained, pitted and finely chopped
2 pounds fresh cod fillets
1 cup chicken broth
salt and pepper

Steps:

  • 1 soak terracotta dish for 15 minutes 2 in a skillet over medium heat, caramelize the onions in oil. Season with salt and pepper Add garlic and continue cooking for 1 minute Set aside 3 remove terracoota dish from water 4 cover bottom of a dish with one quarter of the potato slices Add half the tomatoes and olives Season with salt and pepper Cover with another quarter of the potatoes Cover with onion and garlic mixture, Cover with another quarter of potatoes and then lay the fish on top Season with salt and pepper Cover with remaining potatoes, tomatoes and olives Add the broth Adjust seasoning 5 cover the dish and place it in the centre of the oven Turn oven on to 400F Bake until the potatoes are tender About 1 1/4 hour Let stand for 15 minutes and serve

MACADAMIA AND PANKO CRUSTED COD RECIPE



Macadamia and Panko Crusted Cod Recipe image

1/2 cup orange juice
1/4 cup dry white wine
1 small shallot, finely chopped
10 Tbsp. unsalted butter
salt
pepper
1 cup roasted macadamia nuts, chopped
3/4 cup panko
2 eggs, beaten
4 (four ounce) cod fillets, patted dry
1/4 cup vegetable oil

Steps:

  • In a saucepan, bring orange juice, wine and shallot to a boil over medium-high heat. Cook until reduced, 10-12 minutes. Lower the heat and whisk in 6 tablespoons butter, one tablespoon at a time; season with salt and pepper. Using a food processor, pulse the macadamia nuts with 1/4 cup panko until coarsely chopped. Transfer to shallow bowl and stir in the remaining 1/2 cup panko. Put the beaten eggs in a separate wide, shallow bowl. Season the fish with salt and pepper, dip in the egg and coat with the panko mixture. Heat 2 tablespoons butter and 2 tablespoons oil over medium-high heat until melted. Add fillets and cook, turning once, until golden, about 8 minutes.
