My coconut bars are an American version of a Filipino coconut cake called bibingka. These are a crispier, sweeter take on the Christmas tradition I grew up with. —Denise Nyland, Panama City, Florida

2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted
FILLING:
3 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup butter, melted
3 teaspoons vanilla extract
1/2 teaspoon salt
4 cups sweetened shredded coconut, divided

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

⅓ cup shortening
1 cup dried bread crumbs
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup chopped walnuts
1 cup shredded coconut
1 ⅔ cups sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees F.
  • Melt shortening over low heat. Pour into 9 inch baking pan. Layer bread crumbs evenly in bottom of pan.
  • Layer coconut, chocolate chips, butterscotch chips and nuts over bread crumbs. Drizzle condensed milk over top.
  • Bake 25 to 30 minutes. Let cool before cutting into bars.

1 cup butter, softened
1-1/2 cups sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup baking cocoa
1/2 cup chopped walnuts
1 can (14 ounces) sweetened condensed milk
1 cup sweetened shredded coconut
ICING:
2 cups confectioners' sugar
1/4 cup baking cocoa
5 tablespoons evaporated milk
2 tablespoons butter, melted
1/2 teaspoon vanilla extract

Steps:

  • In a bowl, cream butter and sugar. Add eggs and vanilla; mix well. Combine flour, cocoa and walnuts; add to the creamed mixture. Spread into a greased 13x9-in. baking pan. Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. , Combine condensed milk and coconut; carefully spread over the hot chocolate layer. Bake at 350° for 20 minutes or until coconut is lightly browned. , Combine icing ingredients until smooth; spread over warm bars. Refrigerate at least 1 hour before cutting.

1/2 cup butter or 1/2 cup margarine, softened
1 cup flour
1 tablespoon brown sugar
2 eggs, beaten
1 1/2 cups brown sugar, firmly packed
1/2 teaspoon vanilla
1 cup coconut
1/2 cup chopped nuts
1/2 teaspoon baking powder

Steps:

  • Combine the first three ingredients and pack the mixture into a buttered 8 inch square pan.
  • Bake at 350 degrees for 15 minutes.
  • Combine ALL remaining ingredients and pour over baked layer.
  • Return to oven and bake 30 minutes longer.
  • Cool completely and cut into squares.

  • Preheat in 350 degree oven.
  • Cream butter and 1/4 cup sugar till light and fluffy.

  • (You may have to press it out to a thin layer.) Meanwhile, mix remaining 1/2 cup sugar, 2 tbsps.

1 egg

Steps:

  • Preheat oven to 350 degrees.
  • Place pineapple in a strainer over a bowl.
  • Reserve juice for another use.
  • In a medium bowl beat the butter and sugar together until well blended.
  • Stir in flour and salt until combined.
  • Press into an ungreased 8 inch square baking pan.
  • Press pineapple with a spoon to remove the remaining juice.
  • Sprinkle pineapple evenly over crust.

1 package (11 ounces) butterscotch chips
1 cup peanut butter
1 cup miniature marshmallows
1/2 cup sweetened shredded coconut

Steps:

  • Grease a 9-in. square pan with 1-1/2 teaspoons butter; set aside. In a microwave or heavy saucepan, melt the butterscotch chips, peanut butter and remaining butter until smooth. Cool for 20 minutes. Stir in marshmallows just until combined (do not melt marshmallows). Pour into prepared pan; sprinkle with coconut. Refrigerate, uncovered, for 2 hours or until firm. Cut into 1-1/2-in. pieces. Store in an airtight container.

This recipe was re-tested and updated on 05 April 2011. It now uses 250g of sweetened condensed milk and works beautifully.

250g sweetened condensed milk
250g icing sugar, sifted, plus extra for dusting
200g dessicated coconut
pink edible food colouring, optional

Steps:

  • Using a wooden spoon, mix together the condensed milk and icing sugar in a large bowl. It will get very stiff. Work the coconut into the mix until it's well combined - use your hands, if you like.
  • Split the mix into two and knead a very small amount of food colouring into one half. Dust a board with icing sugar, then shape each half into a smooth rectangle and place one on top of the other. Roll with a rolling pin, re-shaping with your hands every couple of rolls, until you have a rectangle of two-tone coconut ice about 3cm thick.
  • Transfer to a plate or board and leave uncovered for at least 3 hrs or ideally overnight to set. Cut into squares with a sharp knife and pack into bags or boxes. These will keep for up to a month at least, if stored in an airtight container.

⅔ cup dried apricots
1 cup water
2 eggs

1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup chopped walnuts
¾ cup flaked coconut
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together butter, sugar, and 1 cup flour. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
  • In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared crust.
  • Bake for an additional 20 minutes in the preheated oven, or until firm. Cool, and dust with confectioners' sugar before cutting into squares.
