BOBBY FLAY'S CRISPY COCONUT SCALLION RICE RECIPE

Steps:
- Combine the coconut milk, 2 teaspoons salt, 1/4 teaspoon pepper and 1 cup water in a medium saucepan and bring to boil over high heat. Stir in the rice and bring back to a boil. Reduce the heat to medium-low, cover, and cook until the liquid has been absorbed and the rice is tender, about 18 minutes.
- Remove the pan from the heat and let sit, covered for 5 minutes. Remove the lid and fluff the rice with a fork. Spread the rice in an even layer over a large baking sheet and let cool completely, about 30 minutes. The rice can be made up to 24 hours in advance; store it on a baking sheet, covered with plastic wrap, in the refrigerator.
- Combine the rice and scallions in a large bowl. Heat the oil in a large cast-iron or nonstick pan over high heat until it begins to shimmer. Add the rice and, using a heavy-duty metal spatula, immediately press the rice down into the pan until the top is flat. Cook, without stirring, until the bottom has become golden brown and crispy, about 5 minutes (start checking at 4 minutes, making sure not to burn it). Turn the rice over and press down firmly on the top again. Cook until the bottom is golden brown and crispy, about 5 minutes more. Transfer to a platter, sprinkle with more scallions, and serve.

COCONUT RICE KRISPIE® TREATS
A coconut twist in the classic school lunch treat! Perfect for kids and if you snag some for yourself too, we won't tell. One thing I love about these is how customizable they are. Lemon coconut? Chocolate coconut? Sure! You can do practically anything with add-ins. These are also good because unlike other recipes, they use condensed milk, which gives it a rich sweetness. It's safe to say these beat the store-bought ones!

Steps:
- Combine condensed milk, coconut milk, and butter in a medium pan over low heat. Stir until butter has melted and everything is fully incorporated. Stir in salt.
- Increase heat to medium-low and add marshmallows. Stir until marshmallows are fully melted into liquid and you have a thick, almost jelly-like consistency; it should stick together and come clean off the sides of the pan.
- Increase heat to medium and melt the mixture a little bit more so it's a thinner liquid. Remove from the heat and stir in rice cereal and 1/2 cup coconut flakes, making sure all are evenly coated. Let sit and cool for 30 minutes.
- Wearing plastic gloves, use your hands to roll mixture into 1-inch diameter balls. Top with additional coconut flakes if desired.

- Preheat oven to 350 degrees Celsius if using a metal pan, 325 degrees Celsius for a glass pan.
- Line a 9" X 9" square pan with foil. Lightly grease bottom and sides.
- In large bowl, combine all the ingredients and mix well.
- Spread in pan.
- Bake fore 25-30 minutes or until top is golden. Be careful not to overbake.
- Turn out onto cooling rack. Remove foil and cut into bars before it cools completely.

THE ORIGINAL RICE KRISPIES TREATS SQUARES
This is the recipe for the original rice krispies treats squares...It never fails! Plus, it is a great way to use up a box of cereal! For best results, use fresh marshmallows. I have replaced the butter once with Mott's Healthy Baking butter or oil substitute (it was basically an unsweetened apple sauce) and they still turned out great!

- Melt butter in a large saucepan over low heat.
- Add marshmallows and stir until completely melted.
- Remove from heat.
- (It would be perfect to be measuring out all of the cereal at this time, having it ready in a large bowl.).
- Working quickly, add rice krispies cereal, and stir until the cereal is well coated.
- Using a buttered spatula or waxed paper, press the mixture evenly into a greased 13 by 9 by 2 inch pan (or whatever pan you have on hand).
- When the treats are cooled, cut into squares.
- Serve, and enjoy!

- Put the rice in a large bowl and add enough warm water to cover by 2 inches. Let soak at room temperature for 2 hours, swirling occasionally. Drain well.

- In a large nonstick skillet, heat the oil. Scrape the rice into the skillet, press it into an even layer and cook over moderate heat until the edge and bottom are golden and crisp, 12 to 15 minutes. Invert the rice onto a platter and serve.
