Twist on the traditional sweet potatoes. Also a nice way to serve a healthy holiday side dish during warmer months!

2 large sweet potatoes, peeled and cubed
1/2 cup cream of coconut
1 scallion, thinly sliced (1 c)
1/2 teaspoon sea salt
1/4 teaspoon fresh cracked black pepper
1/4 teaspoon grated lime zest
handful sweetened flaked coconut
lime slice (to garnish)

Steps:

  • .In medium pot, combine potatoes with enough cold water to cover. Bring to boil over high heat. Reduce heat to medium. Cook until knife easily pierces potatoes (12-15 minutes).
  • Drain potatoes well. Return to pot over medium-low heat. Add cream of coconut. Mash until liquid is absorbed and potatoes are mashed but still slightly chunky.
  • Remove from heat. Stir in scallion, salt, pepper and lime zest until combined. Transfer to serving bowl.
  • Garnish with coconut flakes and lime slices.

This flavorful vegan side dish is ever-so-slightly adapted from a recipe in The Millennium Cookbook. These yams are truly addictive. They are a beautiful bed for a filet of fish, and a perfect complement to Caribbean-inspired dishes such as jerked meat or tempeh. I've even been known to eat the leftovers cold, straight from the refrigerator! This is a savory sweet potato dish, rather than the traditional sweet ones - It emphasizes the flavors of garlic and thyme.

3 large garnet yams, peeled
1 teaspoon olive oil
4 garlic cloves, minced
1 teaspoon dried thyme
1/4 teaspoon allspice
1 teaspoon sea salt
1/2 cup coconut milk (full-fat, no sugar added)
1/4 teaspoon white pepper

Steps:

  • Heat oil in small saute pan over medium heat. Add the garlic and thyme and saute until the garlic is golden. Remove from heat.
  • Slice the yams into 2-inch cubes. Bring 2 quarts of water to a boil. Add the yams and boil for 15 minutes or until the yams are soft. Drain in a strainer and then return to pot. Add sauteed garlic and remaining ingredients. Mash until creamy, using a potato masher. Serve hot.

1 1/2 lbs sweet potatoes
3/4 cup light coconut milk
1 tablespoon minced fresh ginger
1/2 teaspoon salt

Steps:

  • Prick sweet potatoes with a fork in several places.
  • Microwave on High until tender all the way to the center, 10 to 15 minutes.
  • Alternatively, place in a baking dish and bake at 425 degrees F until tender all the way to the center, about 1 hour.
  • When cool enough to handle, peel off and discard skin.
  • Transfer the sweet potatoes to a medium microwaveable bowl and mash thoroughly with a potato masher.
  • Add coconut milk, ginger and salt; stir well.
  • Reheat in the microwave for 1 to 2 minutes, or in the oven for 8 to 10 minutes. Serve warm.

1-1/2 pounds sweet potatoes (about 6 medium)
1/3 cup crushed pineapple
2 tablespoons butter, melted
1 tablespoon orange juice
1 large egg, lightly beaten
1 teaspoon salt
1/4 teaspoon ground mace
1/8 teaspoon ground ginger
1/3 cup sweetened shredded coconut
1/3 cup finely chopped pecans
2 tablespoons brown sugar

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 30-35 minutes or until tender. Drain; cool slightly. , Peel the potatoes and place in a large bowl; mash. Add the pineapple, butter, orange juice, egg, salt, mace and ginger; mix well. , Transfer to a greased 11x7-in. baking dish. Bake, uncovered, at 400° for 20-30 minutes or until heated through., Combine the coconut, pecans and brown sugar; sprinkle over the top. Bake 8-10 minutes longer or until topping is lightly browned.
