COCONUT FLOUR PEANUT BUTTER OATMEAL COOKIES
I took a coconut flour peanut butter recipe I found online and added more ingredients. I love the taste and the texture!

Steps:
- 1. Mix together peanut butter, sugar, eggs, vanilla and salt. Stir in coconut flour, oats, amaranth and flaxseed meal.
- 2. Make small balls of batter, flatten and place on greased cookie sheet. Bake at 375
- Degrees F for about 15 minutes.
- 3. Cool slightly and remove from cookie sheet.
COCONUT FLOUR OATMEAL COOKIES
Soft and chewy Coconut Flour Oatmeal Cookies with a great melt-in-your-mouth texture from the coconut flour. They are gluten free and naturally sweetened with only maple syrup and chocolate chips! These cookies are also dairy free because they call for coconut oil rather than butter. I debated calling them "Triple Coconut Cookies" because they have coconut flour, shredded coconut and coconut oil in them -- a delicious trio!

- Preheat the oven to 350 degrees. Prepare two cookie sheets with parchment paper.
- In a medium-sized bowl combine coconut flour, oats, shredded unsweetened coconut, baking soda and salt. Whisk together thoroughly.
- In a small saucepan melt ½ cup + 1 tbsp of coconut oil on low heat until melted. Set aside to cool slightly.
- In a separate small bowl, combine maple syrup, vanilla and eggs and whisk together.
- Pour in the melted coconut oil (after it has cooled) to the wet ingredients and whisk together thoroughly. Add the wet ingredients to the dry ingredients and stir together. Add the chocolate chips and stir again.
- The batter may seem wet at first but coconut flour begins to soak up excess moisture quickly. Roll the dough into balls of approximately 2 tbsp. Place 6 at a time on the cookie sheet (If the dough seems too sticky and the balls aren't holding together, place the dough in the fridge for 10 minutes before rolling).
- Flatten each cookie gently with a fork. Bake at 350 degrees F for 10-12 minutes.

FAMOUS PEANUT BUTTER OATMEAL COOKIES
John was hinting for oatmeal cookies and I came across Katzen's Recipe #360115 recipe and thought why not tweak it to make it with oatmeal and gluten free and this is what I came up with. Thanks Katzen. ;) FYI almond flour can be made by simply processing raw almonds in the blender until they have turned into fine crumbs. Don't over blend, otherwise you'll make almond butter! It usually takes 5 second pulses for about 20 times.

- Heat oven to 350°F.
- Mix flour, oatmeal, baking powder, baking soda and salt; set aside. Beat coconut oil, peanut butter and sugars in large bowl with mixer until light and fluffy.
- Blend in eggs and vanilla. Gradually add flour mixture, beating well after each addition.
- Fold in Chocolate chips.
- Roll into tablespoonful size balls of dough, 2 inches apart, onto greased baking sheets. Sprinkle with sugar if desired. Flatten each, in criss-cross pattern, with tines of fork.
- Bake for 10 minute or until golden brown. Cool on baking sheets 5 minutes; transfer to wire racks. Cool completely.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container.
