Coconut Crumb Cake Made With Vanilla Wafers Recipes

VANILLA WAFER COCONUT CAKE

Steps:

• In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each until light and fluffy. Add wafers to creamed mixture alternately with milk. Fold in coconut and nuts. , Pour into a greased and floured 10-in. tube pan with a removable bottom. Bake at 350° for 1-1/2 hours, testing after 1 hour. Cool on wire rack 15 minutes before removing from pan. Cool completely. If desired, garnish with whipped cream or ice cream.

COCONUT CRUMB CAKE (MADE WITH VANILLA WAFERS!!)

Steps:

• Preheat oven to 325°F Grease and flour a Bundt pan - I used the Pam cooking spray with flour already in it.
• Place vanilla wafers in a food processor and pulse until you end up with fine crumbs.
• Combine crumbs with coconut, sugar and pecans in a large bowl; mix.
• In a medium bowl, whisk eggs, butter and milk together. Pour egg mixture over dry ingredients and mix well; batter will be thick.
• Pour batter into prepared pan; bake 1 hour and 35 minutes.

• 1. Ingredients 1 (12-ounce) box vanilla wafers 1 (7-ounce) can coconut 2 cups sugar 1 cup pecans, chopped 6 eggs 2 sticks butter, melted 1/2 cup 2% low-fat milk
• 2. Instructions 1. Preheat oven to 325F. Grease and flour a Bundt pan. 2. Place vanilla wafers in a food processor and pulse until fine crumbs. 3. Combine crumbs, coconut, sugar and pecans in a bowl; mix well. 4. In a medium bowl, whisk together eggs, butter and milk. 5. Pour egg mixture into dry ingredients and mix well (batter will be thick). Pour batter into prepared pan. Bake 1 hour and 35 minutes. Serves 20.
