BABY BOOMER CORNFLAKE COCONUT COOKIES

There are several recipes posted which are similar to this, but by the Gods of the 60's, this is the basic one so many of our bridge-playing, menthol-cigarette-smoking, cream-of-mushroom-soup-casserole-making mothers had ready for us after school. I do the same for mine (without the bridge, cigs or Campbells) and they are always devoured. The recipe doubles and triples, butter substitutes well for the shortening and I use whatever nuts are on hand - they all work.

1/2 cup shortening
1/2 cup white sugar
1/2 cup brown sugar (packed)
1 egg
1/2 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup white flour
1 cup coconut
1 cup corn flakes
3/4 cup walnuts, chopped

Steps:

  • Preheat oven to 375°.
  • Cream shortening and sugars.
  • Add egg and vanilla and combine.
  • In a separate bowl, sift together the dry ingredients.
  • Add the dry to the creamed mixture and stir well.
  • Add the coconut, cornflakes, walnuts and combine (hands help).
  • Drop by teaspoon on cookie sheet.
  • Press fairly flat with fork dipped often in cold water.
  • Bake 7-8 minutes.

Mom makes these and I love them so I thought I'd share them with you. They don't stay around long! They are soft and yummy and kids love them.

1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 large eggs
1 ¾ teaspoons vanilla extract
2 cups all-purpose flour
2 ½ tablespoons all-purpose flour
¼ teaspoon salt
1 ½ teaspoons baking soda
¼ teaspoon baking powder
1 ¾ cups rolled oats
1 ¾ cups corn flake cereal
½ cup flaked coconut

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter, brown sugar, and white sugar together in a bowl until creamy.
  • Beat in eggs and vanilla extract until smooth.
  • In a separate bowl, whisk together both amounts of flour, salt, baking soda, and baking powder. Mix flour mixture into the liquid ingredients.
  • Gently mix rolled oats, corn flakes, and coconut into the dough until thoroughly combined.
  • Drop the dough by tablespoons onto baking sheets.
  • Bake in the preheated oven until the cookies are light golden brown, 10 to 12 minutes.
  • Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

½ cup butter
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup crushed cornflakes cereal
1 cup rolled oats
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon baking powder
1 ⅓ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla. Sift together the flour, baking soda, salt and baking powder; stir into the creamed mixture. Add the oatmeal, crushed cereal and coconut and mix until combined.
  • Drop dough by teaspoonfuls onto a cookie sheet. Cookies should be about 2 inches apart. Bake for 10 to 12 minutes in the preheated oven. Cookies should be light brown at the edges and on the bottom. Remove from baking sheets to cool on wire racks.

4 egg whites
1 cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
3 cups corn flake cereal
1 cup sweetened flaked coconut
½ cup chopped walnuts

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line baking sheets with parchment paper sprayed with cooking spray.
  • Beat the egg whites in a bowl with an electric mixer until they form stiff peaks. Gradually beat in the sugar, adding about 2 tablespoons at a time. Beat in the salt and vanilla extract until the mixture is glossy and holds its shape. Gently and lightly use a rubber spatula to fold the corn flakes, coconut, and walnuts into the meringue. Gently run the spatula through the center of the bowl, then around the sides of the bowl, repeating until fully incorporated. Drop the mixture by rounded tablespoons onto the prepared baking sheets.
  • Bake in the preheated oven until the cookies are very lightly browned and set, 20 to 30 minutes. Let cool completely before removing with a metal spatula; warm cookies are very fragile.

A fast and easy recipe that is great for mailing to friends and family, festively snowy white, and very tasty with a pleasantly crunchy and chewy texture. This recipe originally comes from my great-grandmother and has been handed down through four generations. My Grandma Sally makes these almost every year for Christmas and it is one of my favorite Christmas cookie recipes. The cookies will be chewy-crunchy when finished cooling, not gooey.

1 egg white
½ cup white sugar

½ cup shredded coconut

These little cookies are a bunch of good things all at once: crunchy and chewy, sweet and salty, craggy and never neat, or ever the same, which is just as they should be. The must-have ingredients are melted chocolate, either dark or white (or both), and cornflakes. The coconut is optional, and the cranberries are up for grabs - you can swap them for raisins or small bits of other dried fruit. Since these require nothing but melting and stirring, and because the ingredients are so basic, these can be a spur-of-the-moment cookie, a boon when there's often not enough time.

6 or 8 tablespoons/85 or 113 grams unsalted butter, cut into chunks
12 ounces/340 grams white chocolate bars, chopped, or semisweet chocolate chips
4 cups/113 grams cornflakes
1 cup/120 grams moist, plump dried cranberries (see Tip)
1/3 cup/25 grams unsweetened shredded coconut (optional)
Fleur de sel or fine sea salt, for finishing
Sprinkles, for finishing (optional)

Steps:

  • Line a baking sheet with parchment paper or a baking mat or with 40 mini-muffin liners.
  • If you're using white chocolate, use 6 tablespoons/85 grams butter. For semisweet chocolate, use 8 tablespoons/113 grams butter. Put the butter in a small saucepan, top with the chocolate and cook over very low heat, stirring almost constantly, until smooth. (Alternatively, you can stir in a heatproof bowl set over simmering water or in a microwave-safe bowl in a microwave, stirring in 20-second increments.)
  • Meanwhile, toss the cornflakes, cranberries and coconut, if using, in a large bowl. Pour over the melted chocolate and gently stir in with a flexible spatula. Some of the cereal will break - it's inevitable - but keep working until you've coated all of the flakes.
  • Use a medium cookie scoop or two spoons to shape sweets either on the lined baking sheet or in the paper liners. Gently press the mixture into the scoop or a spoon, binding the elements, before releasing the scoop or scraping the mixture off the spoon with another spoon onto the sheet or into the liners. Finish with salt and sprinkles, if using.
  • Refrigerate or freeze (my preference) for about 30 minutes, or until set, before serving. To keep, cover and refrigerate for up to a week or freeze for up to a month. These are good straight from the fridge or just a few minutes out of the freezer.

2 cups quick-cooking oats
2 cups cornflakes
1 cup sweetened shredded coconut
1 cup chopped pecans
1 cup each butterscotch, semisweet and milk chocolate chips

Steps:

  • In a large bowl, cream the butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and baking soda; gradually add to creamed mixture and mix well. Transfer to a larger bowl if necessary. Stir in the remaining ingredients until well blended. , Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until golden brown. Remove to wire racks to cool.
