These are fabulous as a side dish with stir-fry dishes. Serve warm with egg roll sauce or soy sauce if desired.

1 pound ground pork
1 teaspoon ground ginger
1 teaspoon garlic powder
1 quart peanut oil for frying
2 tablespoons all-purpose flour
2 tablespoons water
2 cups shredded cabbage
2 ounces shredded carrots
8 (7 inch square) egg roll wrappers
2 tablespoons sesame seeds

Steps:

  • Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
  • In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
  • Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
  • Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.

This is my mom's best eggroll recipe. This recipe seriously spoiled me because I've never been able to enjoy any other eggrolls anywhere! The brand of eggroll wrapper is ABSOLUTELY KEY in this recipe! It looks like a lot of steps, but most of them are how to roll an eggroll :D

2 chicken breasts, thin sliced
1 tablespoon soy sauce
1 tablespoon cornstarch
1/4 teaspoon garlic powder
1 tablespoon oil
1/2 head cabbage, shredded
1 carrot, shredded
2 celery ribs, diced
1/2 onion, thin sliced
5 green onions, stalks sliced
3 garlic cloves, minced
2 teaspoons ginger, minced
3 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon cornstarch
10 -12 square spring roll wrappers, I use Wei Chuan (for frying)
1 egg white
oil (for frying)

Steps:

  • Marinate sliced chicken for 5-10 minutes.
  • Heat wok on high, and add chicken, stirring until lightly cooked. (NOTE: Do not over cook, chicken will be reheated later). Remove chicken from wok and set aside.
  • Heat a little oil in wok and add garlic and ginger. Brown very lightly, then add cabbage carrot, onion, celery, and green onion. Stir until cabbage and onion is slightly limp. Stir in soy sauce, oyster sauce, and cornstarch mixture. Add salt to taste. Remove from wok and allow to cool to room temperature or colder (very important!).
  • Heat oil in sauce pan or wok for deep frying. Do not get too hot; about medium to med-high is fine.
  • Beat egg white in a bowl until fluffy.
  • Separate eggroll wrappers and store under a towel to prevent drying.
  • On a plate, lay out a wrapper diagonally (with a corner pointing to you) and fill with about 1/2 cup filling (It is important for the filling to be cooled. If it is hot, the wrapper will tear). Fold corner closest to you over filling and tuck under.
  • Gently but tightly roll about halfway up.
  • Fold side corners toward the middle.
  • Continue rolling up and leave about 2 inches unrolled.
  • Brush a small amount of egg white on the exposed corner and finish rolling.
  • Fry eggrolls until crispy golden brown.
  • Remove and place on paper towels to drain.

10 ounces smoked beef brisket, finely chopped
Water, to moisten egg roll wrapper
Favorite tomato based BBQ sauce
Favorite mustard BBQ sauce
Favorite vinegar based BBQ sauce

Steps:

  • Place 1 egg roll wrapper on a work surface. Point the egg roll corner towards you, then place 1-ounce of chopped brisket on top of the egg roll sheet. Brush the top 2/3rds of the wrapper with water, fold up bottom corner over beef and then fold in side corners and continue rolling until the egg roll is formed. Repeat process with all remaining wrappers..
  • Fry egg rolls in 350 degree F vegetable oil until crispy golden brown. Cut on bias. Place on plate, drizzle with BBQ Sauces.

1 cup diced onion
4 garlic cloves, minced
1 tablespoon minced fresh ginger
3 cups diced green cabbage
2 cups diced celery
1 cup diced drained bamboo shoot
1 cup diced drained water chestnut
1/2 cup diced fresh shiitake mushroom
1/2 cup diced white button mushrooms
2 tablespoons low sodium soy sauce
1 tablespoon rice wine
1 tablespoon honey
24 egg roll wraps
2 tablespoons dark sesame oil, warmed

Steps:

  • Preheat oven to 400°.
  • Heat 1/4 cup water in a wok until simmering; cook the onion, garlic, and ginger for about 5 minutes or until the onion is soft but not browned.
  • Add in the cabbage, celery, bamboo shoots, water chestnuts, and mushrooms; cook about 8 minutes or until the vegetables are softened.
  • Remove wok from heat; add in the soy sauce, rice wine, and honey; toss well.
  • Place the mixture in a colander over a bowl and let stand 10 minutes to drain of any excess moisture.
  • Make sure your work surface is dry; stack the egg roll wrappers with 1 corner pointing away from you.
  • Have a small bowl of water ready; spoon 1/4 cup of filling into the center of each wrapper.
  • Lightly brush the edges of the wrapper with water.
  • Fold the side corners to the center, covering the filling; next bring the bottom corner to the center, tuck slightly under the filling and continue to roll the wrapper into a cylinder, sealing the top corner by moistening it slightly with water and pressing it down.
  • Place the egg rolls, seam sides down, on two nonstick baking pans without crowding; lightly brush eggrolls with sesame oil.
  • Bakein the center of the oven, turning once, for 15-20 minutes or until golden and crisp.
  • Remove from the oven and serve immediately.

1 tablespoon canola oil
1 1/2 cups napa cabbage, chopped in small pieces
3/4 cup carrot, shredded
3/4 cup bean sprouts, rinsed and drained
1 tablespoon low sodium soy sauce (to taste)
1/2 tablespoon brown sugar
1 lb ground pork
1/2 tablespoon sesame oil
4 large garlic cloves, pressed
1 tablespoon ginger, minced
1 tablespoon hoisin sauce
1 tablespoon oyster sauce
1/4 teaspoon Chinese five spice powder
1/2 teaspoon black pepper, to taste
1/3 cup chives (substitute nira grass aka Chinese leek)
24 egg roll wraps (-6 inch square )
3/4 cup brown sugar
1/2 cup shaoxing wine
1/4 cup pineapple juice
3 tablespoons ketchup
1 tablespoon low sodium soy sauce
1/2 teaspoon chili oil
1/2 teaspoon sea salt
1/4 teaspoon ground ginger
1 tablespoon cornstarch (mixed with 1/4 cup water)

Steps:

  • In a large skillet over medium heat, add canola and when hot, add cabbage and carrots; sauté for 2 minutes. Add bean sprouts and sauté for 2 minutes. Stir in soy sauce and brown sugar; cook for 2 minutes. Using a slotted spoon, transfer cabbage mixture to a large bowl and set aside.
  • Add ground pork and cook half way, breaking down the meat into small pieces. Add some sesame oil and cook until almost done. Add garlic and ginger; sauté until the meat is completely cooked. Add hoisin sauce, oyster sauce, Chinese 5 spice and freshly ground black pepper; cook until the liquid is almost gone. Add chives and continue cooking until liquid is all evaporated, about 1 ½ to 2 minutes, stirring constantly.
  • Transfer meat mixture to cabbage mixture; stir well and let it cool for 25 to 30 minutes.
  • Preheat oven to 400ºF.
  • Fill the wrappers by placing 2 tablespoons of filling on the front third of the egg roll wrapper, close to one corner. Compact the mixture and bring the corner over. Roll it once then fold the sides in and roll it up all the way to the end. Transfer egg rolls (seam side down) to a baking dish lined with lightly greased foil. Spray them with cooking oil and transfer to the preheated oven; bake for 9 minutes.
  • When time is up, flip them, seam side up, and bake for another 7 to 8 minutes or until golden brown.
  • Meanwhile, in medium saucepan, add brown sugar, Shaoxing wine, pineapple juice, ketchup, soy sauce, chili oil, salt and freshly ground ginger. Whisk very well and bring the mixture to a boil. Reduce heat to low and keep it warm until needed. If sauce is not thick enough, add cornstarch mixture.
  • Remove egg rolls from heat and transfer to a baking sheet lined with a wire rack; cool for 10 to 12 minutes before serving. Makes 24 egg rolls.
