OLD FASHIONED BEEF STEW
This Old Fashioned Beef Stew is pure comfort in a bowl with tender beef, hearty vegetables, and all the right herbs and spices-it's the best!

Steps:
- Dust beef stew meat with 2 tablespoons cornstarch and season with salt and black pepper. In a large pot over medium-high heat, heat olive oil. Add beef stew meat, and sear until all sides are browned, about 5 minutes
- Add in minced garlic and tomato paste and cook 1 to 2 minutes, until fragrant.
- Pour in the beef broth and worcestershire sauce to deglaze the pan. Add red potatoes, pearl onions, carrots, and celery. Season with salt, sugar, parsley, paprika, oregano, basil, black pepper, and allspice.
- Bring to a boil over high heat, reduce heat to low and simmer, covered, for 90 minutes, stirring occasionally.
- In a small bowl, mix together remaining 2 tablespoons cornstarch with 1/4 cup cold water. Stir until completely dissolved. Pour the mixture into the stew. Stir over low heat until stew thickens.
- Season with more salt and pepper to taste. Serve hot.

Steps:
- Boil the beef to your taste as soft as possible using plain seasonings, salt, garlic, onions.
- Blend pepper to a not so fine particle size and soak in water for some minutes.
- Chop Basil leaves and set aside.
- Set pot on cooker with medium heat and allow to dry.
- Pour in the palm oil, leave to get hot and pour in the diced onion. Allow onion to fry for a minute afterwards, add the pepper.
- Add the beef and beef stock to the mixture and leave to cook for 5minutes.
- Open the pot, stir the soup and sprinkle the Basil leaves. Cover and leave to cook for another 5 minutes.
- Stir and enjoy stew with rice.

- Sprinkle beef with salt, pepper and flour; toss to coat., In a large skillet, heat oil over medium-high heat. Brown beef in batches. Remove with a slotted spoon. Reduce heat to medium. Add garlic; cook and stir 1 minute., Add wine to skillet, stirring to loosen browned bits from pan. Transfer to a 5- or 6-qt. slow cooker. Stir in tomatoes, broth, carrots, onions, tomato paste, rosemary, thyme, bay leaves, cloves and beef., Cook, covered, on low 8-10 hours or until beef is tender. Remove bay leaves. STEWED BEEF WITH CLOVES

Steps:
- Salt and pepper the meat, and drizzle a little olive oil over it, mix well and allow to stand for about 1/2 hour (more if you have time).
- Mash garlic with a bit of salt and the parsley leaves using a mortar and pestle.
- Heat about 2-3 tablespoons olive oil over medium-high heat and sauteé the onion, garlic, and vegetables until the onion becomes translucent, then add cloves, herbs, saffron or tumeric and boullion cube.
- Stir well, and cook until fragrant.
- Add beef and stir well, browning the meat a bit.
- Add water and bring to a boil.
- Cover and simmer 1 1/2 hours or until tender, stirring every once in a while.
- Remove cover and reduce sauce a bit, until it thickens.
- Serve with french fries and Garlic Mayo (ali-oli), or steamed rice.

CRAIG CLAIBORNE'S BEEF STEW
It would be hard to find a simpler meal than Mr. Claiborne's hearty beef stew, which goes beautifully with buttered noodles and a stout glass of red wine. (Or, for the children, a glass of milk.) A small scattering of cloves adds a floral note to the gravy, augmented by just a little thyme, and the combination pairs beautifully with the carrots you add near the end of the cooking process, to prevent them from going mushy in the heat. - Cut the meat into two-inch cubes.
- Using a large skillet, heat the oil and add the beef cubes in one layer. Add salt and pepper and cook, stirring and turning the pieces often, for about 10 minutes.
- Add the garlic and onions and cook, stirring occasionally, for another 10 minutes. Sprinkle with flour and stir to coat the meat evenly.
- Add the wine and stir until the mixture boils and thickens. Stir in the water. Add the cloves, bay leaf, thyme and parsley. Cover closely and simmer for one hour.

- Pour in enough olive oil into a large stockpot to coat the bottom; add 1 onion, carrots, garlic, red pepper flakes, Greek seasoning, rosemary, thyme, basil, Italian seasoning, bay leaf, salt, and pepper. - Heat vegetable oil in a skillet over medium heat. Place flour in a resealable bag; drop in half the beef cubes and shake to coat. Shake off excess flour and add meat to pan. Repeat with remaining beef. Season meat with salt and pepper to taste.
- Stir onion into beef and cook, stirring often, until the meat is browned on all sides and onion is translucent, about 5 minutes. Sprinkle in sugar.
- Combine water, beef bouillon, garlic, bay leaf, parsley, and basil in a pressure cooker over medium-high heat. When bouillon cubes are dissolved, fit the pressure cooker's rack in the cooker (if it has one). Layer potatoes, carrots, and meat mixture in the pressure cooker, seasoning with salt and pepper to taste. Seal the lid and bring the cooker up to full pressure.
- Reduce heat to medium-low, maintaining full pressure, and cook for 8 minutes. Remove from heat. Let the pressure drop naturally, about 15 minutes before releasing lid. Transfer the meat and vegetables to a serving bowl and pour pan juices over meat and vegetables.
