1-1/2 pounds lean ground beef (90% lean)
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 small green pepper, chopped
1 can (4 ounces) chopped green chilies
1/2 cup minced fresh parsley
1 tablespoon chili powder
1 garlic clove, minced
1-1/4 teaspoons salt
1/2 teaspoon paprika
1/4 teaspoon pepper
Hot cooked rice or pasta
Optional toppings: shredded cheddar cheese, sour cream and sliced green onions

Steps:

  • Crumble beef into a 3-qt. slow cooker. Add the next 11 ingredients and mix well. Cover and cook on high for 4-6 hours or until meat is no longer pink. Serve with rice or pasta and the toppings of your choice.

1 TBS Olive Oil
1 Pound Ground Meat (Beef, Turkey or Sausage) ( - at room temperature & gently patted dry (SEE NOTES))
Kosher Salt & Ground Black Pepper
1 small Yellow Onion ( - small dice( about 1 ½ cups))
1 small Bell Pepper ( - small dice (about 1 cup))
2 cloves Garlic ( - minced)
1 TBS Chili Powder
2 tsp EACH: Ground Cumin, Smoked Paprika & Dried Oregano
2 TBS Tomato Paste
1 Cup Beer OR Beef Broth
1 (14 ounce) Can Fire Roasted Diced Tomatoes
1 (8 ounce) Can Tomato Sauce
1 ½ tsp EACH: Dark Brown Sugar & Worcestershire Sauce
1 Bay Leaf

Steps:

  • Brown beef: In a large pot or Dutch oven, heat oil over medium-high heat. Add the beef and cook, undisturbed for 2-3 minutes, or until edges start to brown. Season with a ½ teaspoon of salt and a ¼ teaspoon of pepper. Use a spatula to flip the beef over and use the back of a wooden spoon to break up the beef into large crumbles. Cook, stirring occasionally, until beef is browned, but not completely cooked through, about 3-4 additional minutes. Use a large slotted spoon to transfer the beef to a plate or bowl. Drain off all but 1 tablespoon of oil from the pan, or if the pan seems dry, add a splash of oil (SEE NOTES).
  • Sauté vegetables: Reduce heat to medium. Add the onion and bell pepper. Cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, chili powder, cumin, paprika and oregano. Season to taste with salt and pepper. Cook, stirring, until fragrant, about 1 minute. Add the tomato paste and cook, stirring, until the tomato paste is caramelized, about 1-2 minutes.
  • Add the liquids: Add in the beer (or broth), using the back of a spoon to scrape of any brown bits stuck on the bottom of the pan. Let cook for 1-2 minutes. Add the diced tomatoes, tomato sauce, sugar, Worcestershire and bay leaf. Add in the beef along with any accumulated juices. Bring to a gentle boil over medium-high heat. Immediately reduce heat to simmer and cover.
  • Simmer: Cook, uncovering to stir a couple times, for 30 minutes. Uncover and cook for 10 minutes, or until chili is thick and saucy. Use tongs to remove bay leaf and discard. Taste and adjust for seasoning with salt and pepper.
  • Serve: Ladle warm chili into individual bowls and garnish with optional toppings. Enjoy!

My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

1 pound ground beef
2 cloves garlic, minced
1 large onion, chopped
2 tablespoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon hot pepper sauce
1 (28 ounce) can crushed tomatoes
¼ cup red wine vinegar

Steps:

  • Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.
  • Season with chili powder, oregano, cumin and hot sauce. Stir in the tomatoes and vinegar. Bring to a boil, then reduce heat to low, and simmer for about 1 hour - or longer if you have time. Stir occasionally to prevent burning on the bottom.

1 medium green pepper, chopped
2 medium onions, chopped
1/2 cup chopped celery
1 tablespoon vegetable oil
2 pounds ground beef
2 cans (28 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup water
2 tablespoons Worcestershire sauce
1 to 2 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
2 cans (16 ounces each) kidney beans, rinsed and drained
Tortilla chips, optional

Steps:

  • In a Dutch oven or large soup kettle, saute green pepper, onions and celery in oil until tender, about 5 minutes. Add ground beef and cook until browned; drain. Stir in tomatoes, tomato sauce, water, Worcestershire sauce and seasonings. Bring to a boil; reduce heat. Cover and simmer for 1-1/2 hours, stirring occasionally. Add kidney beans. Simmer, uncovered, 10 minutes longer. If desired, serve with tortilla chips.

2 pounds ground beef (can mix it up w/ ground pork or turkey also)
1 green bell pepper (diced)
1 large onion (diced)
4 cloves garlic (minced)
2 tablespoons chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon salt (plus more to taste)
½ teaspoon black pepper (plus more to taste)
¼ teaspoon cayenne pepper (optional)
2 tablespoons tomato paste
1 ½ cups beef broth
1 14.5 oz can diced tomatoes
1 10 oz can diced tomatoes and chilies
1 8 oz can tomato sauce
1 ½ tsp Worcestershire sauce
1 tsp granulated sugar

Steps:

  • Add ground beef to a large Dutch oven set over medium-high heat. Cook the beef for 5-6 minutes, crumbling it as it cooks, until it begins to brown. Drain off any excess fat.
  • Reduce the heat to medium, then add the green pepper, onion, and garlic and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.
  • Season the mixture with chili powder, paprika, cumin, salt, pepper, and cayenne. Stir in the tomato paste and cook for 1-2 minutes. Add the broth and deglaze the pot with a wooden spoon, reduce for about 2 minutes.
  • Stir in the diced tomatoes, tomato sauce, Worcestershire sauce, and sugar. Bring the mixture to a boil, reduce the heat, cover, and simmer for at least 20-25 minutes.

7 tablespoons chili powder

1 tablespoon paprika

Steps:

  • Brown beef in a large deep pan.
  • Drain fat.
  • Add the garlic, 6 tbsp of the chili powder, and cumin, stirring to coat beef.
  • Add the tomato sauce and the beef broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour (add some water if your heat is too high and chili gets too thick).
  • Add masa gradually, stirring after each addition, until chili reaches desired thickness.
