2 lb ground beef chuck
4 teaspoons Worcestershire sauce
2 teaspoons kosher (coarse or sea) salt
2 teaspoons cracked black pepper
4 hamburger buns, split
4 lettuce leaves
4 large tomato slices
4 red onion slices
Mustard and mayonnaise, if desired

Steps:

  • Heat gas or charcoal grill. Place meat in large bowl; pour Worcestershire sauce over beef and gently mix with hands. Divide meat into 4 very loose balls, then gently shape into patties 1/2 to 3/4 inch thick and about 1/2 inch in diameter larger than your hamburger buns. Slightly press center of each patty.
  • Sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on 1 side of each patty. Place patties, seasoned side down, on grill over medium heat. Sprinkle top of each patty with 1/4 teaspoon salt and 1/4 teaspoon pepper. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 160°F.
  • Serve burgers on buns with lettuce, tomato, onion, mayonnaise and mustard.

Just plain and simply the delicious classic version of an old timey cheeseburger. It will bring back long ago memories of food at the local drive-in where all the teens hung out. Special Note: Have plenty of napkins on hand.

1-1/2 pound(s) 85/15 ground hamburger meat***
1 teaspoon(s) sea salt
1 teaspoon(s) fresh ground black pepper
1/2 teaspoon(s) garlic powder
4 leaves - romaine lettuce
1 large beefsteak tomato
1 medium red onion
To taste - dill pickle hamburger chips
4 slice(s) cheese of your choice (we like provelone)
4 large hamburger buns or kaiser rolls

Steps:

  • ***I grind my own meat. For this recipe, I would either use a chuck roast with some marbling or a sirloin tip roast. Or you can buy already ground sirloin or chuck with 85/15 rating. https://www.justapinch.com/recipes/main-course/beef/grind-your-own-meat.html?p=1
  • Wash and tear 4 leaves of romaine lettuce (or shred if you prefer) and set aside. Cut 4 tomato slices to your desired thickness Cut 4 onion slices to your desired thickness Set aside.
  • Divide meat into 4 equal balls. Hand form into patties large enough to cover the buns (or use method shown in next step) Lay patties on a piece of parchment or waxed paper as you form. Sprinkle each patty with salt, pepper and garlic powder to taste.
  • ****TIP FOR FORMING PATTIES**** I use two of the heavy flexible cutting sheets that you can buy at Dollar Tree (2 in a pak for $1) I anchor one of the sheets on a dishtowel, then place the balls of meat on it. Then I cover the balls with the other sheet and either use the rolling pin or the heel of my hand to flatten the balls into nicely formed patties between the two sheets.
  • if you have an electric griddle, this is a good time to use it. Preheat griddle (or large heavy skillet) to medium high heat (375º to 400º). Sprinkle a little salt onto the surface of the griddle or skillet.
  • When griddle or pan is at correct temperature, slide the patties onto the surface to begin cooking. If you are using an electric griddle, place the patties at the bottom of the cooking surface; you are going to use the top part for the buns.
  • Place the top part of the buns cut side down on top part of cooking surface of griddle to toast. Put bottom part of bun on the top part of buns.
  • Cook for about 3 to 5 minutes on one side, then flip the patties over.
  • Place the cheese on top of the meat, and cover with the toasted top part of the bun. Place the bottom part of the bun on the top of cooking surface of the griddle to toast.
  • Cook for about 3 more minutes until meat is nicely browned and cheese has melted.
  • Remove to serving plate and add desired condiments. Best served immediately.

1 tablespoon vegetable oil
2 slices cheese, such as swiss, cheddar, or american, optional
2 hamburger buns
topping of your choice, for serving

Steps:

  • Divide the beef into 2 patties, each about ¾-inch (2 cm) thick and 3 ½ inches (9 cm) in diameter. Transfer the patties to a plate or a baking sheet lined with parchment paper and refrigerate for 30 minutes.
  • Remove the patties from the fridge and season on both sides with salt and pepper.
  • Heat a large cast-iron skillet over medium-high heat. Add the oil to the pan and swirl to evenly coat. Place the patties in the skillet and cook, undisturbed, on the first side for 5 minutes, until a brown crust forms.
  • Flip the patties, top each with a slice of cheese (optional), and cook, undisturbed, until the patties are browned on the other side, the cheese is melted, and the meat is cooked through, about 5 minutes more for medium-well doneness.
  • Remove the patties from the pan and transfer to a clean cutting board. Let rest for about 5 minutes.
  • Place the burger patties on buns and serve with your favorite toppings and sauces.
  • Enjoy!

1 ½ pounds ground chuck (80/20)*
1 1/2 teaspoons ground black pepper
1 teaspoon salt
2 teaspoon paprika
1/2 teaspoon brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon cayenne pepper
6 buns (, toasted, if desired)
6 slices cheddar cheese (, or your favorite cheese)
6 Lettuce leaves
1 Beefsteak tomato (, sliced)
1/2 of a Red or white onion (, thinly sliced)
6 Pickle slices

Steps:

  • Make burger seasoning by combining all spices in a bowl. Set aside.
  • Divide ground chuck into 6 equal portions and gently from into 1/2 inch thick patties that are wider than the burger buns (as they will shrink). Use your thumb to press an indentation into the center of each patty. Cover and set aside.
  • Preheat grill to medium high heat. Just before cooking, sprinkle seasoning over the patties, then place on hot grill, indent-side up. Close grill lid and cook for 3-4 minutes, until the bottom of the burger is seared and juices are accumulating on top of the burger. Flip and cook an additional 3-4 minutes or until the beef reaches 160 degrees F.
  • Place cheese on burgers during the last minute of cooking. Remove to a plate and allow to rest for a few minutes before serving in a bun, with toppings.

Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.
  • Combine all ingredients.
