RASPBERRY CLAFOUTIS RECIPE

Melissa Clark's clafouti recipe is a light and custardy baked dessert (like a baked pancake) with juicy raspberries and a hint of lavender. This elegant dessert is a few steps above your homey cobbler or crisp, but it couldn't be easier to make. Perfect for dessert or brunch!

Unsalted butter (for baking dish)
3 cups (350 grams) raspberries
1/2 cup plus 1 tablespoon granulated sugar (divided)
1 teaspoon dried lavender buds ((optional))
1/2 cup (120 millilitres) whole milk
1/2 cup (114 grams) crème fraiche, more for serving (optional)
4 large eggs
Pinch salt
1/3 cup (43 grams) all-purpose flour
Confectioners' sugar (for serving)

Steps:

  • Heat the oven to 375 degrees F. Butter a 9-inch ceramic baking dish, or a 2-quart gratin dish, or a 9-inch cake pan.
  • In a medium bowl, toss the raspberries with 1 tbsp sugar. Let them sit while you prepare the remaining ingredients
  • In a food processor or blender, combine the remaining ½ cup sugar with the lavender; process until the lavender is mostly ground, about 2 minutes. Then pour the milk, crème fraiche, eggs, and salt, and process to combine. Add the flour and pulse just to combine.
  • Arrange the sugared berries in the prepared baking dish, then pour the egg mixture over them. Bake until the cake is golden and the center springs back when lightly touched, about 35 minutes.
  • Transfer the baking dish to a wire rack and let the cake cook for at least 15 minutes before serving. Then dust it with confectioners' sugar, slice it, and serve it with a dollop of whipped crème fraiche if you like (I used Greek yogurt to serve along).

Cherry Clafoutis is a surprisingly easy yet elegant french dessert that everyone is going to love! This custard-like base is studded with sweet pitted cherries and flavored with vanilla and almond, so scrumptious!

4 large Eggs
½ cup sugar
½ tsp salt
1 cup milk
1 Tablespoon vanilla extract
1 teaspoon almond extract
2 Tablespoons unsalted butter (melted)
¾ cup all purpose flour
2 cups sweet cherries (pitted and halved)
Powdered sugar for dusting

Steps:

  • Preheat oven to 350 degrees. In a blender, combine eggs, sugar, salt, milk, and both extracts. Blend until combined. Add in the flour and blend again for about 30 seconds until combined. Add in the melted butter and pulse the blender a couple times to mix it in.
  • Pour the batter into the prepared 10x6 oval dish, but it can also be done in a 9 inch round dish. Place the cherries on top of the batter. You can arrange them however you prefer.
  • Bake for 45-55 minutes, or until fully set and a knife comes out mostly clean. Remove from the oven and allow to cool at least 15 minutes.
  • You may serve this warm or cold. Dust with powdered sugar and, if desired, serve with fresh whipped cream or vanilla ice cream.

Delicious Cherry Clafoutis is one of our favorite French desserts, with a creamy, custard-like texture and sweet bites of cherries throughout. Dust with powdered sugar and serve warm or cold with a dollop of whipped or vanilla ice cream.

1 1/2 cups Fresh sweet cherries, pitted or canned cherries, drained ((about 1 can))
3 large eggs (, room temperature)
1/2 cup flour
1/2 cup granulated sugar (, plus 2 Tablespoons for topping)
1 cup whole milk or Half and Half
1 1/2 teaspoon Vanilla extract
1/2 teaspoon Almond extract
1/4 teaspoon salt
powdered sugar (, for dusting on top)

Steps:

  • Preheat oven to 350 degrees F. Generously butter the bottom of a 9 or 10 inch round or oval baking dish. (I use a pie dish.)
  • Arrange cherries evenly around on bottom of dish.
  • In a blender, add all remaining ingredients: eggs, sugar, milk, flour, vanilla, almond extract and salt. Blend until smooth.
  • Pour the batter over the cherries and sprinkle with the 2 Tablespoons sugar.
  • Bake just until custard is set, about 35-45 minutes.
  • Clafoutis is delicious served warm, room temp or cold.

Clafoutis is one of the simplest French desserts and yet its elegant and delicious. Somewhere between a cake and a flan, the black cherries provide juicy bursts of fruit between the rich bites of tahitian vanilla spiked custard.

1 tsp butter - cultured unsalted
1 c cherries
2 large eggs
1/4 c heavy cream
1/4 c milk - whole
1/4 c sugar - granulated
1/4 c flour - all-purpose
1/2 tahitian vanilla bean

Steps:

  • 1. Move your oven rack to the middle position and preheat to 350 degrees F.
  • 2. Generously butter an 7" tart dish and then arrange the pitted cherries in an evenly spaced fashion.
  • 3. Add the eggs, cream, milk, sugar and flour to a blender or small food processor and then scrape the vanilla beans into it as well. Blend until smooth and free of lumps.
  • 4. Slowly pour the mixture over the cherries, being careful not to clump the cherries together.
  • 5. Place on a baking sheet and bake until puffy and golden brown (about 25-30 minutes).
  • 6. Slice and serve hot or at room temperature dusted with powdered sugar.
