FRESH SOUTHERN PEACH COBBLER

I've been experimenting with cobbler for some time and this recipe is the final result. Loved by all. Use fresh Georgia peaches, of course!

8 fresh peaches - peeled, pitted and sliced into thin wedges
¼ cup white sugar
¼ cup brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
¼ cup white sugar
¼ cup brown sugar
1 teaspoon baking powder
½ teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
  • Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

My Hubby brought in some fresh peaches today and requested a cobbler or pie...I opted to make a cobbler. I usually make this double and put in a 9x13-inch cake pan. BUT..since it is just the 2-of us I made 1/2 the recipe and put it in a round deep dish cake pan. I also love making cobbles with a pastry crust.

I USE THIS SAME RECIPE TO MABE BOTH 'FRESH PEACH OR CHERRY COBBLERS'
4 large peaches (peeled, seed removed and sliced)
1/3 c white sugar (i use splenda)
1 Tbsp cornstarch (may also use flour instead)
1/4 tsp cinnamon
1 Tbsp lemon juice; *plus 1-teaspoon of burnt sugar flavor (x-tra-touch)
BATTER FOR CRUST PART
1/3 c butter
1/2 c all-purpose flour
1/2 c white sugar (i use splenda)
1/2 tsp baking powder
1/2 c milk
1 pinch of fresh ground sea salt

Steps:

  • 1. Preheat oven to 350 F.
  • 2. Mix first 6-ingredients in a micro-safe bowl and stir together. Place in microwave on high for 30-seconds; remove stir and place back to repete for another 30 seconds (should be begining to thicken).
  • 3. Melt butter in cake pan (either in the oven or melt in microwave and pour into cake pan).
  • 4. Combine next 5-ingredients together, stirring just until dry ingredients are moistened.
  • 5. Pour the batter over melted butter in cake pan..do not stir.
  • 6. Pour hot fruit filling over batter in cake pan..do not stir (although sometimes I swirl a knife through it). Can also sprinkle top with a mix of cinnamon-sugar if desired.
  • 7. Bake for 25 to 35 minutes. P.S. When I double this recipe to make in a 9x13-inch cake pan, I bake it around 370 dF for 40 to 50 minutes. Sometimes I make this using a pastry crust instead of a batter. We like it both ways.
  • 8. Serve hot with ice cream, also good warm or cold.
  • 9. *Hey Y`all..I forgot to put in with the 'filling ingredients' that I aslo put in 1 teaspoon of the "Burnt Sugar Flavor" (it's by X-TRA-TOUCH) ADDING IT NOW!!!
  • 10. ***MADE THIS AGAIN TODAY (11-17-2013)....WITH A FEW CHANGES; AND NEW PIX (pix by CinStraw). THIS TIME I USED USED...(INSTEAD OF THE FLOUR MIXTURE), 1 cup SUGAR & 1 cup BISQUICK & THE 1 C MIXTURE OF 1/2 cup MILK & 1/2 cup HEAVY CREAM. Also heated the fresh peaches (about 2 1/2 cups) with 1/2 cup sugar & 2 T tapioca to a boil then turned down to simmer until starting to thicken. Melted butter in a 8x8 square pan, poured in the Bisquick - sugar - milk mixture on top of the hot butter. Then poured the hot peach mixture over that. Baked in a 350° oven for 35 minutes. OFCOURSE IF YOU ARE A DIABETIC, USE YOUR FAVORITE "SUGAR SUBSTITUTE" SO YOU CAN ENJOY THIS TOO♥

5 fresh peaches - peeled, pitted, and sliced
5 slices white bread, crusts trimmed
1 ½ cups white sugar
2 tablespoons all-purpose flour
1 egg, lightly beaten
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • Place peaches in prepared dish. Cut each slice of bread into five fingers, and lay the fingers over the peaches. In a medium bowl, combine sugar, flour, egg and butter and mix until well blended. Pour over bread and peaches.
  • Bake in preheated oven 35 to 45 minutes, until golden.

6 -7 cups fresh peaches, sliced (or equivalent canned peaches)
1 cup sugar (omit if using sweetened canned peaches)
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter, softened
1 cup sugar
2 cups flour
1 1/2 cups milk
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups sugar
2 tablespoons cornstarch
cinnamon, to taste
nutmeg, to taste
1/2 cup boiling water

Steps:

  • Preheat oven to 375 degrees F.
  • In a mixing bowl, combine tapioca, peaches, sugar (if used), cinnamon and nutmeg.
  • Mix thoroughly.
  • Pour the fruit mixture into a buttered 9" X 13" baking dish.
  • In a bowl mix thoroughly the ingredients for the Cobbler Dough.
