Steps:
- Preheat oven to 200 degrees F (95 degrees C). Prepare a jelly roll pan with cooking spray.
- Beat egg white and sugar together in a large bowl.
- Mix cinnamon, vanilla extract, and salt together in a small bowl; stir into the egg mixture. Fold walnuts into the mixture to coat; spread onto prepared jelly roll pan.
- Bake in preheated oven until the coating on the nuts is crusty, about 1 hour 15 minutes. Cool nuts 5 minutes before serving.

OLD-FASHIONED WALNUT BALLS RECIPE
Steps:
- Gather the ingredients.
- Preheat oven to 375 F. Cream butter, sugar, and vanilla in a stand mixer or with an electric hand beater at medium speed until fluffy; the butter should approximately double in size and turn pale yellow.
- Sift flour and salt together.
- Add it in two or three batches to the creamed mixture; mix gently to incorporate it between each addition. Stir in walnuts.
- Pinch a walnut-size chunk of dough off, roll it into a ball, and place it on an ungreased cookie sheet. Repeat with remaining dough, leaving about 1 inch of space between each ball.
- Bake cookies for 12 to 15 minutes. Transfer walnut balls from cookie sheet to a wire rack using a spatula. Cool for 10 to 15 minutes.
- Roll cooled cookies in sifted confectioners sugar.

This is an old, old recipe that has been in the family for years. The origin is unknown. Recipe uses very little sugar in it and is rolled in superfine sugar to sweeten.

- Preheat oven to 350 degrees F (180 degrees C).
- Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
- Shape into 1 inch balls. Bake for 15 minutes, remove from oven and allow to cool for 3 minutes. Roll in super fine sugar. When cool, roll again, if desired.

- Roll dough into a 20x6-in. rectangle. Brush with butter. Combine the brown sugar, walnuts and cinnamon; sprinkle over dough. Roll up jelly-roll style, starting with a long side. Cut into 20 slices, 1 in. thick. Place in a greased 13x9-in. baking pan. Cover and let rise in a warm place until doubled, about 45 minutes., Drizzle with cream. Bake at 350° for 25-30 minutes or until golden brown. Invert onto a serving platter. In a small bowl, combine the confectioners' sugar and milk; drizzle over rolls. Serve warm.

CINNAMON WALNUT BALLS
Steps:
- Preheat oven 350 degrees. Spread the walnuts on a baking sheet and toast in the oven, tossing occasionally until fragrant, 6-8 minutes, let cool. In a food processor , process the walnuts until finely ground. In a large bowl, whisk together walnuts, flour, cinnamon and salt, set aside. using an electric mixer, beat the butter, 1/3 cup sugar on medium high until light and fluffy, 2-3 minutes. Beat in the vanilla. Reduce mixer speed to low and gradually add the flour mixture, mixing until just combined. Do not over mix.
- Shape the dough into 1-inch balls and place 2 inches apart on baking sheet. Bake 12-14 minutes, until just beginning to brown. Let cool slightly on baking sheet, then transfer to wire rack. Place the remaining 1/3 cup powdered sugar on a platter. Roll cookies in sugar to coat, then dust with cinnamon. Makes about 36 cookies.
