DIRTY SOUTH BISCUIT

2 quarts old-fashioned buttermilk
2 cups hot sauce, such as Texas Pete
2 tablespoons kosher salt
1 tablespoon fresh cracked black pepper
2 pounds chicken tenders
Canola oil, for frying
4 cups all-purpose flour
2 tablespoons iodized salt
1 tablespoon ground white pepper
Biscuits and sausage gravy, for serving

Steps:

  • Combine the buttermilk, hot sauce, kosher salt and black pepper in a bowl and add the chicken tenders. Allow to marinate, refrigerated, for at least 2 hours or, for best results, overnight.
  • Fill a large cast-iron pan with enough oil for deep-frying; heat until the oil registers 350 degrees F on a deep-frying thermometer. Set a cooling rack over a baking sheet. Stir together the flour, iodized salt and white pepper. Remove the chicken from the marinade, letting excess drip off, and roll in the flour mixture to coat. Fry in batches until golden brown, 4 to 5 minutes per side. Drain on the cooling rack. Serve with biscuits and sausage gravy.

LIGHT AS A FEATHER COATED BISCUIT

2 1/2 cups self-rising flour
1/2 cup vegetable shortening
1 to 11/4 cups buttermilk
1/4 cup melted butter

Steps:

  • Preheat oven to 450 degrees. Put self-rising flour in a large bowl. Cut in shortening with a pastry blender or two knives until it is the size of grains of rice. Add buttermilk and toss gently with a fork until the mixture leaves the side of the bowl ? mixture should be very wet and sticky. Turn out onto a lightly floured surface and knead just until the mixture holds together. Divide dough into 12 equal pieces and round into a ball. Dip each biscuit into melted butter then into one of the desired coating mixtures below. Place in an ungreased 12 ? inch round pan. Once all of the biscuits are in the pan, press the tops slightly so that they spread and are just barely touching. If there is any coating left over, sprinkle it evenly on top. Bake in a preheated 450 degree oven for 10 to 12 minutes until golden brown.
  • Cinnamon/Sugar Coating: In a small bowl combine 2 teaspoons cinnamon 1/3 cup granulated sugar and 1/3 cup unbleached flour.
  • Herb Coating: In a small bowl combine 1/3 cup Parmesan cheese, ? cup finely chopped fresh basil, 2 tablespoons unbleached flour, and 1 teaspoon garlic powder.
  • Spiciy Coating: In a small bowl combine 1/3 cup finely chopped Cheddar cheese and 3 tablespoons unbleached flour.

3 cups all-purpose flour, plus more for dusting
2 tablespoons baking powder
2 tablespoons za'atar
1 tablespoon sugar
1 1/2 teaspoons salt
6 tablespoons cold butter, cut into cubes
1 1/2 cups cold milk
2 tablespoons vegetable oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the flour, baking powder, 1 tablespoon of the za'atar, the sugar and salt in a medium bowl using a whisk. Using a bowl scraper or your fingers, mix in the butter until the mixture resembles coarse meal; using your fingers will create a more cake-like texture. Make a well in the center and pour in the milk. Stir until just combined.
  • Turn the dough out onto a floured surface and knead 5 or 6 times. Roll the dough into a 1-inch-thick disc and cut out biscuits using a 3-inch biscuit cutter. Make sure you don't twist the cutter otherwise you'll squish the sides and the biscuit won't rise. Knead the scraps together, re-roll and cut out biscuits until all the dough has been used.
  • Place the biscuits bottom-side up on a baking sheet lined with parchment paper. Whisk together the vegetable oil with the remaining 1 tablespoon za'atar and brush the mixture on each biscuit. Bake until golden brown, 18 to 20 minutes.

TROPICAL JACONDE

13 ounces plus 4 ounces egg whites
7 ounces granulated sugar
6 ounces almond flour
3 ounces all-purpose flour
6 ounces confectioners' sugar
1 1/2 ounces heavy cream
Handful desiccated coconut
Fruit puree of your choice
16 ounces heavy cream
16 ounces white chocolate

Steps:

  • For the jaconde: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper and coat lightly with butter.
  • Combine the 13 ounces egg whites and the granulated sugar and whip into a meringue with stiff peaks, using an electric mixer.
  • Sift the almond flour, all-purpose flour and confectioners' sugar into a bowl. Add the heavy cream and the remaining 4 ounces egg whites to make a paste. Fold one-third of the meringue into the paste; once incorporated, fold in the remaining meringue. Pour into the prepared baking sheet and sprinkle the top with desiccated coconut.
  • Bake for 15 minutes, then flip the cake out of the baking sheet and let cool. Soak the jaconde with fruit puree, making sure the sponge is wet but not soaked.
  • For the ganache: Heat the heavy cream in a saucepan until boiling. Remove from the heat and pour into a bowl with the white chocolate. Let sit for 5 minutes, then stir until smooth. Let sit until cool, about 30 minutes.
  • Whip the ganache with an electric mixer until thick and creamy.
  • Spread the ganache on the cake, and slice. The cake can also be chilled.

1 egg white
2 fluid ounces melted butter

Steps:

  • Preheat oven to 350 degrees F.
  • Into a large bowl, sift together the flour and sugar.
  • In a small bowl, mix the egg whites and butter together. Slowly add to dry ingredients. Mix so all lumps are removed.
  • Using a silicone mat, lay out a stencil (whatever shape you desire), and spread batter with a pallet knife so the batter is the same thickness as the stencil.
  • Place in the freezer for 3 to 4 minutes and remove. Run a knife around the inside edge of the stencil, making sure not to alter the shape of the biscuit.
  • Bake on a sheet pan for 4 to 6 minutes until lightly brown around the edges.
  • Remove from the sheet pan with a metal spatula, as biscuit will continue to bake on hot pan. Serve.

  • In a bowl, combine dry ingredients; cut in butter until crumbly. Stir in milk just until moistened. Drop by 1/4 cupfuls onto a greased baking sheet. Brush with melted butter and sprinkle with cinnamon-sugar. Bake at 450° for 10-12 minutes or until lightly browned. Serve warm.
