CINNAMON SWIRL POUND CAKE LOAF
Delicious vanilla pound cake loaf with a swirl of cinnamon and a brown sugar and cinnamon topping.

- Preheat oven to 325F (not fan assisted) and grease an 8 x 4-inch or 4 x 10-inch loaf pan. Set aside.
- In a large bowl with an electric mixer or the bowl of a stand mixer with the paddle attachment, beat together the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs, one a time, beating well after each addition and scraping down the sides of the bowl as needed. Beat in the vanilla.
- In a medium bowl, whisk together the flour, salt, baking soda and baking powder. Add 1/2 of the dry mixture to the butter mixture, then the sour cream, then the rest of the flour mixture, mixing just until combined.
- Remove 1 cup of the batter to a medium bowl. Add the cinnamon swirl ingredients to it - the brown sugar, cinnamon and milk and stir to combine.
- Spoon a thin layer of the plain batter into the bottom of your prepared loaf pan. Using a spoon, drop alternating spoonfuls of the plain and the cinnamon batter into the pan. Top with the remaining plain batter and smooth the top. Using a long skewer or knife, run through the batter in the pan a few times (either lengthwise or from side to side). Just about 3 lengthwise or 4-5 side to side should do it).
- Make topping by combining the brown sugar and cinnamon in a small bowl. Sprinkle over the top of the loaf.
- Bake loaf in the preheated oven for 55-65 minutes, or until a knife inserted in the centre of the loaf comes out clean. (4x10 pan will cook more quickly, 55-60 minutes, while an 8x4 will take a bit longer, closer to 65 or a few minutes more).
- Allow loaf to cool in the pan about 10 minutes, then run a knife around the outside and remove to a cooling rack to cool.

- Heat broiler, with rack 4 inches from heat. In a small bowl, combine frozen strawberries, thawed, 1 tablespoon sugar, and fresh lemon juice. In another small bowl, combine 4 teaspoons sugar and ground cinnamon.
- On a baking sheet, place pound cake in a single layer. Brush one side with 1 tablespoon butter, room temperature; sprinkle with half the cinnamon-sugar mixture. Flip and repeat. Broil, flipping once, until golden, about 2 minutes per side. Serve with ice cream and strawberries.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch fluted tube pan.
- Whisk flour, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
- Cream sugar and butter together in a large bowl using an electric mixer until light and fluffy. Beat in eggs, 1 at time, mixing thoroughly after each addition. Mix in sour cream, vanilla extract, and almond extract. Mix in half the flour mixture on low speed until just combined. Pour in amaretto and mix gently. Add in remaining flour mixture; blend until just combined. Batter will be somewhat thick; pour evenly into prepared tube pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 60 minutes. Let cake cool for 10 minutes in the pan. Remove to a wire rack to cool completely, at least 40 minutes.
- To make glaze: Whisk powdered sugar, heavy cream, amaretto, vanilla extract, almond extract, and salt together until smooth. Add more heavy cream if glaze is too thick. Pour glaze over cooled cake; top with sliced almonds and a sprinkling of cinnamon.

- Preheat oven to 370 degrees.
- In small bowl, mix the 1 Tablespoon sugar and cinnamon and set aside.
- In large bowl, beat eggs well. Add rest of ingredients and beat until smooth (about 4 minutes)
- Pour 1/3 of batter into greased bundt pan. Sprinkle with 1/2 of sugar mixture. Add another 1/3 of batter followed by remaining sugar mixture. Add last 1/3 of batter.

- 1. Preheat oven to 350 degrees.
- 2. Mix together eggs, oil, and water on low speed.
- 3. Add yellow cake mix. Beat for 3 or 4 minutes on medium speed.
- 4. In a small bowl, combine brown sugar and cinnamon until thoroughly blended.
- 5. Add instant vanilla pudding to cake batter. Beat for 1 or 2 minutes on low speed.
- 6. Grease bundt pan with non-stick cooking spray.
- 7. Pour 1/3 of batter in bundt pan.
- 8. Sprinkle 1/3 of cinnamon/brown sugar mixture on batter.
- 9. Repeat steps 6 and 7 twice.
- 10. Swirl with butter knife. NOTE: I have found that the best way to swirl it is by inserting the knife near the center and moving toward the outside of the pan - pulling up and out of the batter and then re-inserting each time. Doing it this way seems to help keep the cake from sticking to the pan.
- 11. Bake for 45-50 minutes (sometimes it takes a few more). Cake is done when toothpick comes out clean.
- 12. Let cool for about 45 minutes to an hour - this will also help keep the cake from sticking to the pan.
