2 teaspoons ground cinnamon
3 tablespoons olive oil
2 pork tenderloin
1 onion, finely chopped
2 garlic cloves, finely chopped
1 1/2 cups fresh cranberries or 1 1/2 cups frozen cranberries
1/4 cup honey
1/2 cup chicken stock

Steps:

  • Put grill in the center of the oven.
  • Preheat oven at 375°F.
  • In a bowl, mix cinnamon and 1 tablespoon of oil.
  • Baste tenderloins with this cinnamon oil.
  • Salt and pepper if wanted.
  • In a big skillet oven proof, brown pork tenderloins in the remaining oil at high heat.
  • Set aside on a plate.
  • In the same skillet, grill onion and garlic.
  • Add oil if needed.
  • Add remaining ingredients and bring to boil.
  • Put back the tenderloins and cook in the oven 15 to 20 minutes for a medium cooking.
  • Cover with aluminium paper and let stand 5 minutes.
  • Slice pork tenderloins and sprinkle with the cooking juices.
  • Delicious with leek potatoes gratin, rice or couscous.

1 cup cranberry juice
1/3 cup red currant jelly
1 tablespoon dijon mustard
1/4 cup dried cranberries
1 pork tenderloin (about 1 pound)
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with foil. Combine the cranberry juice, jelly and mustard in a medium skillet over medium-high heat; cook, stirring occasionally, until thick enough to coat the back of a spoon, about 15 minutes. Remove 3 tablespoons of the glaze and set aside for brushing. Stir the cranberries into the remaining glaze; set aside for drizzling.
  • Meanwhile, rub the pork with the olive oil, 1/2 teaspoon salt and a few grinds of pepper. Place on the prepared baking sheet and roast, turning once, 15 minutes. Remove the pork from the oven and brush all over with the reserved 3 tablespoons glaze. Continue to roast until a thermometer inserted into the thickest part of the meat registers 145 degrees F, 5 to 10 more minutes. Let rest 5 minutes, then slice and drizzle with the cranberry glaze.

3 tablespoons sherry or chicken broth
1 tablespoon brown sugar
1-1/2 teaspoons honey

Steps:

  • In a large resealable plastic bag, combine the first six ingredients. Add the pork; seal bag and turn to coat. Refrigerate 4-6 hours. , Drain and discard marinade. Grill pork, covered, over medium heat for 15-20 minutes or until a thermometer reads 160°, turning occasionally. Let stand for 5 minutes before slicing.

1 tbsp plain flour
500g pork tenderloin , sliced into steaks
1 tbsp oil
2 red onions , cut into wedges
400ml chicken stock
4 tbsp cranberry sauce
1 tbsp honey

Steps:

  • Season the flour and dust the pork slices. Heat the oil in a large frying pan, then cook the pork for 3-4 mins each side until browned and cooked through. Transfer to a plate and set aside.
  • Add the red onion wedges to the pan and fry for 5-8 mins until soft and starting to turn golden. Stir in the stock, cranberry sauce and honey and simmer for 10 mins. Return the pork with any resting juices and gently cook for 1-2 mins until hot through. Serve with some mash or jacket potatoes and vegetables.

  • Remove the silverskin and any visible fat from pork. Pat dry with a paper towel and sprinkle pork with salt and pepper. Sear pork in hot skillet, cooking on all sides, until golden brown, about 5 minutes. Place skillet with pork into the preheated oven. Roast pork until thermometer inserted into centre registers 145° F, about 15-20 minutes, depending on the size of your pork.
