Now that our three children are grown, I am cooking just for my husband and me - though few weeks pass without visitors. 1 pound ground beef
3/4 cup onion
2 garlic cloves, minced
3 tablespoons canola oil, divided
1 cup chopped fresh mushrooms
1 tablespoon tomato paste
1/2 cup beef broth
2 teaspoons prepared horseradish
1 teaspoon ground mustard
1-1/2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup diced green pepper
1/2 cup diced sweet red pepper
8 medium potatoes, peeled and cubed
1/3 cup hot whole milk
1 cup shredded cheddar cheese
2 large egg whites

Steps:

  • In a large skillet, brown beef, onion and garlic in 2 tablespoons of oil. Add the mushrooms. Cook and stir for 3 minutes; drain. Place the tomato paste in a bowl. Gradually whisk in broth until smooth. Stir in horseradish, mustard, 1 teaspoon salt and pepper. Add to meat mixture. Pour into a greased 11x7-in. baking pan; set aside. , In the same skillet, saute the peppers in remaining oil until tender, about 3 minutes. Drain and spoon over meat mixture. Cook potatoes in boiling salted water until tender; drain. Mash with milk, cheese and remaining salt. Beat egg whites until stiff peaks form; gently fold into potatoes. Spoon over pepper layer. Bake, uncovered, at 425° for 15 minutes. Reduce heat to 350°; bake 20 minutes longer or until meat layer is bubbly.

The best breakfast casserole I've ever made. I combine a few different recipes and this is my picky hubby's most favorite!

cooking spray
1 (12 ounce) package bacon
1 teaspoon butter, or as desired
1 (20 ounce) package frozen cubed hash brown potatoes
salt and ground black pepper to taste
1 (12 ounce) package sliced fresh mushrooms
3 green onions, minced
2 cups shredded Cheddar cheese, divided
10 eggs
2 cups milk
1 teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray. Arrange bacon slices in a single layer on a baking sheet.
  • Bake in the preheated oven until browned and crisp, 20 to 25 minutes. Drain bacon slices on paper towels and transfer 1 to 2 tablespoons bacon grease to a skillet, reserving the remaining bacon grease. Add butter to skillet.
  • Cook and stir potatoes in the hot bacon grease-butter until lightly browned, about 10 minutes; season with salt and black pepper. Transfer potatoes to the prepared baking dish.
  • Heat about 1 tablespoon reserved bacon grease in the skillet over medium heat; cook and stir mushrooms until softened, 5 to 10 minutes. Layer mushrooms over potatoes.
  • Place green onions in the same skillet and remove from heat. Allow green onions to soften from the residual heat in skillet; layer over mushrooms. Crumble bacon over green onion layer; top with 1 cup Cheddar cheese.
  • Blend eggs, milk, and 1 teaspoon salt in a blender until smooth; pour over Cheddar cheese layer. Top casserole with remaining 1 cup Cheddar cheese.
  • Bake in the preheated oven until casserole is set and a knife inserted in the middle comes out clean, 30 to 40 minutes.

Shepherd's Pie is one of those dishes done differently by every person. I don't consider this recipe a "pie" because there is no crust. Also, the peas should be with the rest of the beef/vegetable mix, but my husband prefers them on top of the potatoes (as shown). For me, this is a good leftover dish. Whatever type of leftover beef, whatever leftover vegetables, wherever they are placed...it's all good.

1-2 pound(s) ground beef
1 medium onion, chopped small
2-4 large carrots, chopped small/thin
1 can(s) peas, drained
salt & pepper to taste
GRAVY/SAUCE
2 tablespoon(s) salted butter
2 tablespoon(s) flour
1 tablespoon(s) worcestershire sauce (optional)
1 1/2 cup(s) beef broth/stock
1 - beef bouillon cube or you can use kitchen bouquet
MASHED POTATO TOP
8 servings of prepared instant mashed potatoes
1 egg yolk
1/4 cup(s) heavy cream
1/2 cup(s) grated parmesan cheese (separated into 1/4 cups)
paprika to sprinkle

Steps:

  • Preheat your oven to 400. Prepare a 9X13 casserole dish (or something similar) by spraying it with Pam.
  • Prepare your Instant Mashed Potatoes using the directions on the box. Thoroughly mix in heavy cream, egg yolk, and 1/4 cup of parmesan cheese. Set aside. *You can also make mashed potatoes from scratch using approximately 4 medium potatoes, a splash of milk, 4 TBSP. butter, salt & pepper. Even better would be to use left-over mashed potatoes if you have them.
  • In a large skillet, brown and drain your ground beef.
  • Add your onions and carrots to the ground beef and continue to heat until the carrots and onions begin to soften, and the beef is brown. Turn off heat and set aside.
  • In a small saucepan, make a rue with your butter and flour. Add the Worcestershire sauce and beef broth/stock. When the mixture is heated add the beef bouillon cube (or kitchen bouquet). Whisk constantly until the sauce/gravy is thickened, turn off the heat, and set aside.
  • Add your peas and gravy/sauce to your beef mixture (or you can save your peas for the top of the casserole like my husband prefers). Mix thoroughly and add salt and pepper to taste.
  • Spread your beef/gravy mixture evenly on the bottom of your prepared casserole dish.
  • Layer your mashed potato mixture on top. Spread evenly. Use fork tongs to create lines on the top of the mashed potatoes and to help with browning.
  • Sprinkle the last 1/4 cup of parmesan over the top of the casserole and then sprinkle it with the paprika.
  • Bake at 400 degrees for 20-25 minutes.

I have several shepherds pies that I make, but this is my favorite...great comfort food on a cool day.. and your in a rush..I use Bob Evans Cheddar Mashed Potatoes already prepared and found in the meat section usually at the supermarket...Just heat up and put on top

1 lb ground sirloin
3 (10 ounce) cans tomato soup
1 (16 ounce) bag frozen mixed vegetables
1 tablespoon italian seasoning
1 teaspoon oregano
32 ounces already prepared cheddar mashed potatoes

Steps:

  • Cook ground beef, drain and crumble meat.
  • Cook frozen vegetables according to directions.
  • Add vegetables, soups, seasonings to meat and simmer 5 minutes.
  • Pour into a greased casserole dish.
  • Warm up potatoes and put on top.
  • Dot butter on top and salt and pepper to taste.
  • Bake at 350 degrees in oven for 20 to 25 minutes until bubbly and potatoes have started to brown.
  • Serve -- .

1 (14 ounce) can green beans, drained
1 can hunt manwich sloppy joe sandwich sauce
1 cup shredded cheddar cheese
2 1/2 cups seasoned mashed potatoes

Steps:

  • Cook beef and onion until meat loses redness.
  • Drain fat.
  • Stir in green beans, Hunt's sauce and 1/2 cup cheese.
  • Pour in shallow 10" x 6" x 2" casserole.
  • Spread mashed potatoes over meat mixture.
  • Sprinkle remaining cheese over top.
  • Bake at 375 degrees for 20 minutes.
