ARTILLERY PUNCH
Charles Fassinger and his wife Janet have served this potent punch at many a military bash over the years and the drink's name is highly appropriate: Fassinger, who retired from the Army as a Brigadeer General and now lives in Nashville, spent 20 of his 44 years of military service as an Artilleryman. "My last Artillery assignment was as an Artillery Battalion Commander," he says, "and the 'charge 7' and 'charge 5' references in the recipe are artillery speak for 'weaken the alcoholic continent of the punch.' Charge 7 is the largest propellant powder charge used in an artillery shell."

- Add ingredients in order to a punch bowl, add ice. To convert from charge 7 to charge 5 (weaken) add another bottle of soda or sparkling Burgundy.
FOUR CHEESE MANICOTTI IN CREAM SAUCE
A delicious alternative to a redsauced-covered manicotti. This is delicious served with a crisp green salad and fresh bread.

Steps:
- Saute onion and mushrooms (if using) in butter 5 minutes; stir in flour.
- Gradually stir in milk; stir over low heat until sauce bubbles and thickens.
- Stir in 1 cup Parmesan cheese and salt and pepper to taste; set aside.
- Cook manicotti shells according to package directions; drain and cover with cold water.
- Mix together ricotta, mozzarella, Romano and remaining Parmesan cheese; add walnuts, parsley and eggs.
- Season to taste with salt, pepper and nutmeg.
- Drain manicotti shells; stuff with cheese mixture.
- Place shells side by side in a greased shallow baking pan; spoon sauce over all.
- Bake in preheated 400F oven 20 to 25 minutes or until bubbly and golden.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and cool on waxed paper or aluminum foil to prevent the noodles from sticking together.
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, salt and pepper; fill manicotti with cheese mixture.
- In a 9x13 inch baking dish, spread a thin layer of spaghetti sauce on the bottom and arrange manicotti in a single layer; cover with remaining sauce. Cover dish with aluminum foil and bake in preheated oven for 40 minutes. Remove foil and bake for 15 minutes longer; serve.

CINCINNATI MARRIOTT'S WHITE PUNCH
This recipe was made after I changed up the San Francisco Marriott's Pink Punch. (My sister in law didn't want a red/pink punch in case of spills). I didn't feel it was fair to rate the Pink Punch, so decided to post my own variation. The colors make it nice for Christmas! You can change your fruit if desired.

- Mix sugar and cranberry juice thoroughly until sugar dissolves and refrigerate until cold (1-2 hours).
- Prior to serving, mix pineapple juice, and cranberry/sugar mix together.
- Slowly add sprite
- Float lime slices.
- You can add the cherries alone and they will sit on the bottom of the bowl, or you can freeze them in ice cube trays filled with the juice and float them.
