COCONUT-CURRY MONKFISH SOUP

Coconut-Curry Monkfish Soup image

A soothing coconut curry really satisfies on a cold night and this one comes together quickly. If you can't find monkfish, make this dish with any firm, meaty fish, such as halibut, haddock, rockfish, or sablefish.

Time 40m

Number Of Ingredients 13

1 tablespoon vegetable oil
1 small onion, halved and thinly sliced (1 cup)
1 red bell pepper, stems, ribs, and seeds removed, cut into 3/4-inch pieces
1 tablespoon minced fresh ginger (from a 1-inch piece)
2 tablespoons chopped cilantro stems, plus 1/2 cup leaves for serving
Kosher salt and freshly ground pepper
2 tablespoons green curry paste, such as Maesri
2 tablespoons white-wine vinegar
1 can (13.5 ounces) light coconut milk
8 ounces clam juice
1 1/4 pounds monkfish fillet, skin and dark membrane removed, cut into 1-inch pieces
Cooked rice, for serving (optional)
1 serrano, red-finger, or Thai chile (ribs and seeds removed for less heat, if desired), thinly sliced, for serving

Steps:

  • Heat oil in a large straight-sided skillet over medium. When oil shimmers, add onion, bell pepper, ginger, and cilantro stems; season with salt. Cook, stirring occasionally, until vegetables are tender and golden in places, 12 to 15 minutes. Add curry; cook until fragrant, about 1 minute. Add vinegar; boil until mostly evaporated. Add coconut milk and clam juice; bring to a simmer.
  • Generously season fish with salt and pepper; stir into skillet. Reduce heat to medium-low. Cook at a bare simmer, stirring gently a few times, until just cooked through but not falling apart, about 4 minutes. Ladle into bowls with rice, top with cilantro leaves and chile, and serve.

Cilantro Soup With Monkfish image

Provided by Nobu Matsuhisa

Categories     dinner, main course

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 1/2 strips konbu
1 scant cup dried bonito flakes
1 tablespoon sake
2 teaspoons Japanese soy sauce
Sea salt
9 ounces monkfish
Freshly ground black pepper
2 tablespoons arrowroot
Vegetable oil for deep-frying
2 teaspoons finely minced cilantro leaves
1/4 cup chives cut in 2-inch lengths
4 thin slices lime

Steps:

  • Place konbu in saucepan with 4 cups water over medium heat. Slowly heat to not quite boiling. Adjust heat so this takes about 10 minutes. Immediately remove konbu and discard. Add bonito flakes. Bring to a boil and remove from heat. When flakes sink to bottom of pot, strain broth through fine sieve lined with coffee filter or paper towel. Transfer broth to clean saucepan.
  • Bring broth to a boil. Add sake and soy sauce. Season to taste with salt. Remove from heat.
  • Cut monkfish in 1/2-inch slices. Season with salt and pepper. Dust lightly with arrowroot.
  • Place oil in deep-fryer, deep saucepan or wok. Bring to about 350 degrees and deep-fry monkfish until crisp and golden, 2 1/2 to 3 minutes. Drain briefly on paper towel and place 2 to 3 slices fish in center of each of 4 warm shallow soup plates.
  • Reheat broth. Add cilantro. Pour over monkfish. Top fish with a cluster of chives and slice of lime and serve.

MONKFISH WITH LEMON DRESSING

Monkfish with lemon dressing image

Raymond Blanc's monkfish is superbly lemony and finished with almonds and coriander. Swap the dressing for rocket wilted in a little olive oil and water if you prefer

Provided by Raymond Blanc

Categories     Dinner, Lunch, Main course

Time 1h30m

Number Of Ingredients 15

4 boneless monkfish medallions, about 140g/5oz each
1 stalk lemongrass , bashed and finely chopped
4 lime leaves , chopped
1 tsp lemon thyme leaves
5 tbsp extra-virgin olive oil , plus extra for frying
handful wild rocket leaves, to serve
strips of zest from 2 lemons , pith removed
25g caster sugar
6 tbsp extra-virgin olive oil
2 tsp lemon juice
½ tsp coriander seeds, toasted, then ground
½ tsp black onion seeds
2 tbsp currants
4 tbsp whole blanched almonds
2 tbsp roughly chopped coriander

Steps:

  • Place the monkfish in a bowl with the lemongrass, lime leaves, lemon thyme and olive oil. Cover and chill for 6 hrs to marinate.
  • Meanwhile, make the lemon dressing. Chop the strips of lemon zest into small dice and tip into a pan of boiling water. Bring back to the boil, then drain. In a small saucepan, cook the blanched lemon zest with the sugar in 140ml water for about 5 mins. Drain the lemon zest and mix together with the remaining ingredients and 2 tbsp water. Taste and season, if you like.
  • About 20 mins before you're ready to eat, remove the monkfish from the marinade and lightly season. Heat some olive oil in a large non-stick frying pan over a medium heat and fry the monkfish medallions for 4 mins on each side until golden brown. Remove from the pan and allow to rest in a warm place for 4 mins. To serve, gently warm the dressing, adding more water if needed. Spoon it over the monkfish and around the plate, then scatter with rocket leaves.

SPINACH-AND-CILANTRO SOUP WITH TAHINI AND LEMON

Spinach-and-Cilantro Soup With Tahini and Lemon image

The simplicity of this soup's technique belies its depth of flavor, which is both vivid and complex. The soup is made bright with lemon and fresh with cilantro, but the secret ingredient is tahini, which is layered into the soup to thicken it, and then drizzled generously on top in the form of a gently spiced sauce. The result is a soup that's both vegetal and creamy, tangy and rich. You'll find it so tasty that you'll forget you're drinking your vegetables.

Provided by Samin Nosrat

Categories     easy, lunch, quick, soups and stews, main course

Time 20m

Yield 2 quarts

Number Of Ingredients 12

1/4 cup well-stirred tahini
1/4 cup freshly squeezed lemon juice
1 large clove garlic, finely grated or pounded to a smooth paste
3/4 teaspoon fine sea salt
1/2 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
7 cups chicken stock, preferably homemade
12 ounces baby spinach (about 12 packed cups)
4 cups roughly chopped cilantro (from 2 large bunches)
1/4 cup well-stirred tahini
2 teaspoons fine sea salt
2 tablespoons freshly squeezed lemon juice, plus more as needed

Steps:

  • First, make the sauce: Combine tahini, lemon juice, garlic, salt, cumin and red-pepper flakes with 2 tablespoons water in a medium bowl. Whisk until smooth, adding more water as needed to achieve a drizzle-able consistency, and set aside.
  • Next, make the soup: Add stock to a Dutch oven or heavy pot, and bring to a boil over high heat. Stir in spinach, cilantro, tahini and salt, and return to a boil. Turn off heat, and stir in lemon juice.
  • Use an immersion blender to purée soup. Taste, and adjust seasoning with more salt and lemon, if desired.
  • Serve soup immediately, and drizzle with tahini sauce. Cover and refrigerate remaining soup and sauce for up to 1 week, or freeze soup for up to 1 month.

LENTIL SOUP WITH CILANTRO (LOTS OF IT)

Lentil Soup With Cilantro (Lots of It) image

This easy lentil soup is seasoned with cumin and an entire bunch of chopped cilantro, stirred in just before serving.

Provided by Martha Rose Shulman

Categories     dinner, soups and stews, main course

Time 1h

Yield Serves four

Number Of Ingredients 12

1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1 1/4 teaspoons cumin seeds, lightly toasted and ground
Pinch of cayenne
1/2 pound brown lentils (about 1 1/8 cups), picked over and rinsed
1 small onion, cut in half
1 bay leaf
1 1/2 quarts water
Salt, preferably kosher salt, to taste
Freshly ground pepper
1 cup chopped cilantro (from 1 large bunch)
Plain low-fat yogurt for garnish

Steps:

  • Heat the oil in a large, heavy soup pot over medium heat, and add the garlic. Stir until fragrant, about a minute, and stir in the cumin and cayenne. Add the lentils, onion, bay leaf, water and salt. Bring to a boil, reduce the heat and simmer 40 minutes, until the lentils are tender and the broth aromatic. Add pepper, taste and adjust salt. Remove the halved onion and the bay leaf.
  • Coarsely puree the soup in an immersion blender or food mill. Alternatively, puree half the soup in blender, 1 1/2 cups at time, being careful to cover the top of the blender with a towel to avoid hot splashes, then stir back into the soup. Heat through.
  • Chop the cilantro, discarding the stems. Stir into the soup just before serving. Taste, adjust seasoning and serve, topping each bowl with a dollop of yogurt.

  • Poor Man’s Lobster. Because of its texture, monkfish is often called “poor man’s lobster.” It’s less expensive than lobster and is very similar in taste and appearance.
  • Monkfish in Tomato Garlic Sauce. This recipe really showcases the monkfish while still enhancing it with a delicious sauce. Cook the monkfish with salt and pepper and let the tomato garlic sauce do the rest of the work.
  • Monkfish with Lemon Butter Sauce. I love lemon on fish and I love butter on, well, pretty much everything. This pan-seared monkfish is flavored with simple ingredients but it’s still so tasty!
  • Catalan Monkfish. This dish originates from a part of Spain called Catalonia. This is where Spain and France meet on the Mediterranean side. The sauce is a really important part of this dish.
  • Baked Monkfish with Lemon, Rosemary, and Breadcrumbs. Since monkfish is a really firm fish, it can stand up to a crispy topping like this recipe. The breadcrumbs are flavored with lemon juice, rosemary, and garlic.
  • Spiced Monkfish. This recipe is full of strong flavors that pack a punch. Ginger, saffron, and curry seasoning are an exquisite blend of spices. Monkfish is a really good fish for them because of its meaty texture and naturally sweet flavor.
  • Roast Monkfish with Lemon and Parsley Butter. Monkfish really lends itself to different cooking methods due to its firm and meaty texture. I love when meat is pan-seared and then finished in the oven.
  • Grilled Monkfish with Roasted Pepper. Not all fish can be grilled because they fall apart easily, but monkfish can easily stand up to a grill. Grilled peppers and onions also play a big role in this recipe.
  • Pan-Seared Monkfish with White Wine Garlic Sauce. I love this white wine garlic sauce and monkfish recipe. The sauce is absolutely heavenly. Monkfish is pan-seared with salt, pepper, and olive oil.
  • Monkfish and Chips with Remoulade. Any time I have a hearty, firm fish like monkfish, I debate making fish and chips. It does really well in the fryer because of its meaty texture.
