CHURRO CAKE WITH SPICED CHOCOLATE SAUCE

This cinnamon sugar cake tastes just like a traditional churro!

2 sticks unsalted butter, at room temperature, plus more for the pan
2 3/4 cups all-purpose flour, plus more for the pan
1 tablespoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 3/4 cups granulated sugar
1 tablespoon pure vanilla extract
4 large eggs plus 2 egg yolks, at room temperature
1/2 cup sour cream
3/4 cup whole milk
1/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons unsalted butter, melted
1 1/4 cups half-and-half
1/4 cup packed dark brown sugar
2 tablespoons unsweetened cocoa powder
1/2 teaspoon pure vanilla extract
1/4 teaspoon ancho chile powder
Pinch of salt
4 ounces semisweet chocolate, chopped

Steps:

  • Make the cake: Preheat the oven to 350 degrees F. Butter a 10-cup Bundt pan, making sure to get in all the crevices; dust with flour and tap out the excess. Whisk the flour, baking powder, cinnamon and salt in a medium bowl; set aside.
  • Beat the butter, granulated sugar and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the eggs, one at a time, then the egg yolks. Beat in the sour cream until combined. (The batter may look curdled.) Reduce the mixer speed to low and add the flour mixture in three batches, alternating with the milk; beat until combined.
  • Pour the batter into the prepared pan, smooth the top and tap the bottom of the pan against the counter a few times to release any large air bubbles. Bake until a wooden skewer inserted into the center of the cake comes out clean, about 55 minutes. Transfer to a rack and let cool 10 minutes in the pan; loosen the edge of the cake with a wooden skewer and invert onto the rack to cool completely.
  • Make the cinnamon sugar topping: Combine the granulated sugar and cinnamon in a large bowl. Working in sections, brush the cake with the melted butter. Hold the cake over the bowl and sprinkle with the cinnamon sugar, pressing to adhere.
  • Make the spiced chocolate sauce: Combine the half-and-half, brown sugar, cocoa powder, vanilla, chile powder and salt in a small saucepan. Bring to a simmer over medium heat; cook, stirring, until the sugar dissolves, 2 to 4 minutes. Remove from the heat and add the chocolate. Let stand 2 minutes, then stir until smooth. Serve the cake with the spiced chocolate sauce.

2 cups unsalted butter (4 sticks), at room temperature, plus more for the pan
3 1/2 cups all-purpose flour, plus more for the pan (see Cook's Note)
1/2 teaspoon fine salt
8 large eggs plus 2 large eggs yolks, at room temperature
2 tablespoons milk, at room temperature
4 teaspoons pure vanilla extract
2 3/4 cups granulated sugar
60 drops red food coloring or Natural Coloring, recipe follows
45 drops green food coloring or Natural Coloring, recipe follows
1 cup confectioners' sugar
2 tablespoons milk
1/2 teaspoon pure vanilla extract
3 tablespoons beet juice
2 tablespoons beet powder
1 tablespoon cocoa powder
3 tablespoons matcha powder

Steps:

  • For the cake: Place a rack in the lower third of the oven and preheat to 325 degrees F. Butter and flour a 9-by-4 1/2-inch loaf pan and a quarter sheet pan (13 by 9 inches).
  • Sift the flour and salt into a medium bowl; set aside. Whisk the whole eggs, yolks, milk and vanilla together in a medium bowl; set aside. Beat the butter in a stand mixer fitted with the paddle attachment at medium speed until smooth, about 1 minute. Gradually add the granulated sugar 1/4 cup at a time until well combined. Turn the machine off and scrape down the paddle and sides of the bowl with a rubber spatula. Continue to beat the butter mixture on medium speed until light and fluffy, about 4 minutes.
  • Turn the machine off and scrape the sides of the bowl again. Turn the mixer to its lowest setting and gradually add in the flour mixture 1/4 cup at a time until just combined. Slowly add the egg mixture. Remove the bowl from the mixer, scrape any batter off the paddle and make sure the batter is well combined. (Take care not to overmix.)
  • Divide the batter in half. Fold the red food coloring into one half and the green into the other half with a rubber spatula until no streaks remain.
  • Pour the red batter into the prepared quarter sheet pan and bake until set, but slightly under-baked, about 18 minutes.
  • Turn the cake out onto a parchment-lined surface. Let cool slightly, then cut 12 hearts out of the sheet cake with a 2- or 3-inch heart cookie cutter.
  • Pour enough green batter into the prepared loaf pan to just cover the bottom. Nestle the hearts point-end down in a row down the center of the batter, so that they snugly fit the length of the pan. Spoon the remaining batter on top and smooth the top with a rubber spatula. Bake until a toothpick inserted into the center comes out clean and the top springs back when lightly pressed, 50 minutes to 1 hour.
  • For the glaze: Meanwhile, whisk together the confectioners' sugar, milk and vanilla in a medium bowl to make a thick but pourable glaze.
  • Cool the cake in the pan on a rack set into a rimmed baking sheet, 10 to 15 minutes. Invert the cake onto a plate. Re-invert the cake and set it right-side up on the rack. Pour the glaze over the cake while still warm, allowing excess glaze to drip into the pan below. Allow the cake to cool completely. Slice into the cake to reveal the heart inside.
  • The cake will keep wrapped in plastic wrap at room temperature for 4 to 5 days, and freezes well for up to 1 month.
  • Combine the beet juice, beet powder and cocoa powder in a small bowl and whisk until smooth. Combine the matcha powder with 3 tablespoons water in another small bowl and whisk until smooth. Use the beet coloring in place of red food coloring and the matcha coloring in place of green coloring in the Hidden Heart Cake.

½ cup cornflakes, crushed
¼ cup whole wheat flour
1 tablespoon McCormick® Ground Cinnamon
2 teaspoons instant espresso powder
¼ teaspoon kosher salt

½ cup brown sugar
½ cup granulated sugar
2 tablespoons McCormick® Ground Cinnamon
2 teaspoons instant espresso powder
1 teaspoon unsweetened cocoa powder
1 ½ cups granulated sugar
½ cup brown sugar
1 ½ sticks unsalted butter, softened
4 teaspoons baking powder
1 ½ teaspoons kosher salt
1 tablespoon McCormick® vanilla extract
3 large eggs
2 cups all purpose flour
⅔ cup whole wheat flour
1 ¾ cups sour cream
2 teaspoons ancho chile powder
¾ cup dark chocolate chips
½ cup heavy cream, hot
1 cup cajeta, dulce de leche
1 baking sheet, 9 x 13 x 2-inch (22 x 33 x 5 cm)

Steps:

  • Preheat the oven to 350°F (180°C). Grease a 9 x 13 x 2-inch (22 x 33 x 5 cm) baking dish and line with parchment paper.
  • Make the topping: In a medium bowl, mix together the piloncillo, cornflakes, whole wheat flour, cinnamon, espresso powder, salt, and melted butter until well combined. Refrigerate until ready to assemble.
  • Make the filling: In a medium bowl, mix together the piloncillo, granulated sugar, cinnamon, espresso powder, and cocoa powder. Set aside.
  • Make the cake: In a large bowl, combine the granulated sugar, piloncillo, butter, baking powder, salt, and vanilla. Using an electric hand mixer, mix on low speed to combine, then increase the speed to medium and cream until soft and fluffy, about 5 minutes.
  • Add the eggs, 1 at a time, beating between each addition until fully incorporated.
  • In a small bowl, mix together the all-purpose and whole wheat flours.
  • Add half the flour to the wet ingredients and mix with the hand mixer until just incorporated. Add the sour cream and fold with a rubber spatula until combined, then add the remaining flour and mix until just combined.
  • Pour half of the batter into the prepared baking dish and smooth in an even layer. Sprinkle the filling evenly across the top. Pour in the remaining batter, spreading to cover the filling, then crumble the topping evenly on top.
  • Bake until the cake is puffed and firm, about 45 minutes. Let cool completely, about 1 hour.
  • Make the chocolate drizzle: Add the ancho chile powder and chocolate to a small bowl and pour the hot cream on top. Let sit for 1 minute, then stir to melt and mix completely. Transfer to a squeeze bottle or plastic bag with a corner snipped off.
  • Drizzle the cake with the spiced chocolate sauce and cajeta, then slice and serve.

200g soft unsalted butter, plus extra for the tin
200g golden caster sugar
4 eggs
2 tsp vanilla extract
1 tsp almond extract (optional)
75g glacé cherries, patted dry if in syrup, then quartered
175g self-raising flour
50g ground almonds
½ tsp baking powder
100g icing sugar
a drop of almond extract
1-2 tbsp milk
2 tbsp toasted flaked almonds

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 900g loaf tin and line with baking parchment. Beat the butter and sugar together until pale and fluffy, then beat in the eggs one at a time, followed by the vanilla and almond extract (if using).
  • Toss the cherries with 2 tbsp of the flour in a bowl. Tip the rest of the flour, the ground almonds, baking powder and a pinch of salt into the bowl with the sugar and eggs, and mix until just combined. Fold in the cherries and any remaining flour in the bowl. Spoon into the prepared tin and smooth over the top.
  • Bake for 50-55 mins, or until a skewer inserted in the middle comes out clean. Leave to cool for 10 mins in the tin, then transfer to a wire rack to cool completely. Serve as it is, or mix the icing sugar with the extract and enough milk to make a thick but pourable consistency. Drizzle over the loaf cake, and scatter over the flaked almonds to serve.
