CHUNKY HOMEMADE APPLESAUCE

Chunky Homemade Applesauce image

This baked homemade applesauce is rich, tart and sweet -- almost like apple pie filling -- and a world apart from store-bought.

Provided by Jennifer Segal

Categories     Breakfast & Brunch

Time 1h

Yield About 4 cups

Number Of Ingredients 4

4 pounds apples (about 10), peeled, cored and cut into 1-inch chunks (I like a combination of McIntosh and Golden Delicious)
3 tablespoons unsalted butter, cut into ¼-inch chunks
¼ cup plus 2 tablespoons light or dark brown sugar, packed
Ground cinnamon, for serving (optional)

Steps:

  • Preheat the oven to 400°F.
  • Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
  • Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
  • Make-Ahead/Freezer-Friendly Instructions: The applesauce can be made up to 3 days ahead and refrigerated or frozen in an airtight container for up to 3 months.

CHUNKY RASPBERRY-APPLE SAUCE

Chunky raspberry-apple sauce image

Raspberries add a layer of subtle tartness that gives this apple sauce a distinctive flavor. A combination of lemon zest and lemon juice brightens and balances the sauce. It's rustic chunky texture is what makes it enticing as both a stand-alone dessert and as sauce for sweet or savory items. Try it spooned over Greek yogurt, stirred into oatmeal, and served with roasted pork tenderloin. If you'd like to give it a warmer aroma, stir in some ground cinnamon. Homemade apple sauce will keep in the refrigerator for several days. Double this recipe to enjoy a variety of different ways throughout the week.

RASPBERRY APPLESAUCE

Raspberry Applesauce image

I altered a basic applesauce recipe to come up with this flavored version. Other variations can be made by substituting another flavor of jam for the raspberry. Depending on how sweet your apples are and how you like your applesauce, you may need to add a little sugar in with the jam. I used a combination of Macintosh and Red Delicious with about 1/3 cup jam, and thought it was fine without added sugar.
