NO-SUGAR CHUNKY APPLESAUCE
This sweet applesauce almost tastes like apple pie without the crust! My family can't resist digging into this side dish at dinnertime.

- Place apples and water in a large kettle. Cover and cook over medium-low heat for 30-40 minutes or until apples are tender; remove from the heat. Using a potato masher, mash apples to desired consistency. Stir in cinnamon and sweetener. Serve warm or cold.

- Combine the apples, pears, lemon juice, cinnamon sticks, nutmeg, 1 tablespoon sugar and 1/4 cup water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce the heat to medium-low and cook until the apples and pears are very soft but still a bit chunky, 15 to 20 minutes. Taste the mixture and add the remaining tablespoon of sugar if desired.
- Remove the sauce from the heat and stir a few times until the sauce is well combined with small chunks. Cool to room temperature. Remove the cinnamon sticks and serve. (For a smoother sauce, remove from heat, remove the cinnamon sticks and then whisk the mixture until smooth before cooling.)

CHUNKY PEAR AND APPLESAUCE
This is our favorite way to make applesauce. It comes from the book, "Baby Let's Eat" for heatlthy cooking for both baby and family. The pears give it a bit of a crunch, even though we don't leave the chunks. We puree it smooth. And there's no sugar in this recipe. We usu. leave out the mace and it tastes fine.

Homemade applesauce is way more delicious than anything out of a jar, and the perk is you can eat it warm-when my family likes it best-and jar any leftovers. Making it from scratch allows you to keep it as chunky as you prefer, or puree it completely. I add pear for juice and sweetness, and just a bit of lemon and cinnamon. The trick is to not overcomplicate it with too many spices and overpower that fresh-picked apple taste. We always double and sometimes triple this batch and make extra to share with friends. - Toss together the apples, pears, 1/4 cup water, maple syrup and 2 teaspoons cinnamon in a large pot with a heavy bottom (a Dutch oven works great for this). Cover and cook, stirring occasionally, over low heat, until the fruit are very tender, about 45 minutes or up to 1 hour. Stir in the lemon juice and use a potato masher to smash to your desired consistency. If you like a completely smooth, pureed sauce, use an immersion blender to blend until smooth. Taste and add additional cinnamon to your liking.
- Serve warm, or cool completely and store in sterile jars with tight-fitting lids up to 1 week in the refrigerator.
