CHRISTMAS MORNING EGG CASSEROLE
This was the casserole my mom made every year for Christmas morning.

Steps:
- Spray a 9x13-inch casserole dish with cooking spray.
- Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.
- Whisk milk, eggs, mustard powder, and salt together in a bowl; pour over American cheese layer. Cover dish with aluminum foil and refrigerate 8 hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from casserole.
- Bake in the preheated oven until cheese is melted and eggs are set in the middle, about 1 hour.

- In a greased 11x7-in. baking dish, combine the bread and cheese. In a large bowl, whisk the eggs, milk, mustard, salt and pepper; pour over bread and cheese. Sprinkle with bacon. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° until a knife inserted in the center comes out clean, 50-55 minutes. Let stand 10 minutes before serving.

CHRISTMAS MORNING WIFE SAVER (BREAKFAST CASSEROLE)
I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

- Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
- Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
- Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

- Prepare Idahoan Steakhouse Cheesy Hashbrown Potatoes, following packaging directions, replacing the 1/2 cup milk with 1/2 cup buttermilk.
- In a medium size skillet, cook bacon and onion until bacon is crisp. Drain and set aside to cool slightly.
- Stir in eggs, Swiss cheese, and bacon-onion mixture.
- Bake uncovered for 25 minutes.
- Sprinkle crunchy onion topping on top of potatoes. Let stand 5 minutes then serve.

This is what we have on Christmas morning. This is a little different than most breakfast casseroles that have been posted here, so I thought I would share. It is very good and I like to keep it special by serving it only this one time a year.

- Spray 9 x13.
- Lay 6 pieces of bread in bottom of pan, and then layer half the bacon and cheese and repeat.
- Combine beaten eggs, salt, pepper and milk, pour over top.
- Let sit overnight Bake at 350 45 to 60 minutes.
- (35 minutes covered and then the last 10-15 uncovered).

I got this recipe from the Cooking in the West with WAASCOE cookbook. It has been a family favorite for years now. My daughter looks forward to Christmas knowing that this will be served for breakfast. It is good anytime of the year though. I hope it becomes a family favorite of yours also.

Steps:
- Beat eggs, milk and soup.
- Add mushrooms.
- Spray or grease a 9x13 inch pan.
- Remove crust from bread, butter bread slices and then place butter side down in bottom of pan.
- Pour egg mixture over the bread slices.
- Top with sausage.
- Sprinkle with cheese.
- Refridgerate overnight.
- Bake at 350 degrees for 45 min or until done in middle when tested with knife.
- I use homemade french bread that I made in the bread machine with this recipe.
- I also just put the whole can of mushroom soup in and use a little more cheese than it calls for.
- We do love the cheese!

- Cook grits and brown ground sausage.
- Stir in remaining ingredients and pour into a 9X13 GREASED pan.
- Sprinkle top with cheese.
- Cook 1 hour at 350 degrees F. Will bubble. If make and refrigerate the day before, it may take a little bit longer to cook. It will be cooked by it not being watery, instead it will be jiggly.
- Note: I do not sprinkle cheese on top of casserole.

- Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
- In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.

- Spray a 13x9 baking pan with cooking spray.
- Brown the ground beef and steam the broccoli.
- Line the baking pan with the slices of bread.
- Whisk together the eggs and milk.
- Crumble the cooked beef over the bread. Add the broccoli and the shredded cheese.
- Pour the egg/milk mixture over all.
- Place in the refrigerator for 12 hours.
- Preheat the oven to 325°F Bake for 1 hour, or until eggs are set and the top of the casserole is light brown.

- Butter a 9-by-13-inch baking dish. In a large skillet, heat the olive oil. Add the pepperoni and cook over moderate heat until the fat is rendered, about 3 minutes.
