- Place potatoes in a large pot with enough water to cover. Bring to a boil, and cook until fork tender, about 20 minutes. Drain, add butter, and mash using a potato masher, ricer or mixer. Gradually beat in the heavy cream. Serve hot!

HOLIDAY MASHED POTATOES
My mom passed this recipe on to me several years ago and I have been making it for every holiday dinner since. They can be made ahead, eliminating the need for mashing potatoes on the big day! I sprinkle a little paprika on top before baking to give it some color. Prep time does not include time it takes to boil the potatoes.

Steps:
- Beat hot potatoes until all lumps are removed.
- Add cream cheese (in small pieces) and the butter.
- Beat well until cheese and butter are completely melted and mixed.
- Stir in sour cream.
- Add eggs and onion to milk and add this to the potatoes with salt and pepper.
- Beat until light and fluffy.
- Place in a greased 9-inch casserole.
- Refrigerate several hours or overnight.
- Bake at 350 degrees for 1 hour or until lightly rounded on top (puffy).
MASHED POTATOES
Steps:
- Lightly scrub the potatoes. Put them in a large saucepan with cold water to cover by about 3 inches and season generously with salt. Bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook until the potatoes are fork tender, about 40 to 45 minutes.
- Drain the potatoes in a colander in the sink. Let the potatoes cool just until you can handle them--hot potatoes make better mashed. Meanwhile, melt the butter in the pan over low heat.
- Hold the potatoes in a towel or in a kitchen glove and gently peel the potato skins off with a knife or your fingers. Quarter the potatoes and put then in the pan.
- Heat the milk in a microwave-safe measuring cup or bowl until hot. Mash the potatoes with the butter with a fork or potato masher if you have one, until most of the lumps are gone and the potatoes are smooth and fluffy. Then stir in the milk, until the mashed potatoes are light and smooth, if there are still lumps paddle them smooth with a wooden spoon. Season with 1 1/2 teaspoons salt or to taste, and pepper, to taste. Serve immediately.
CHEF JOHN'S ULTIMATE MASHED POTATOES
Forgot those low-fat or no-fat options... holiday mashed potatoes are supposed to have a ridiculous amount of butter in them! Eating a scoop of these potatoes a few times a year is a well-deserved treat. Garnish with chives if desired.

- Peel potatoes and cut into quarters. Transfer to a bowl of cold water and rinse to remove starch. Drain and transfer to a pot of cold water. Very generously salt the water and bring to a boil over high heat. Reduce heat and simmer until potatoes are soft and the tip of a knife goes in easily, 20 to 25 minutes.
- While the potatoes are cooking, cut butter in chunks and let come to room temperature.
- Drain potatoes thoroughly and return to the pot. Set over medium-low heat and mash with a potato masher until potatoes. Season with salt and pepper and add ¼ of the softened butter chunks. Mash until butter just about disappears.
- Add another 1/4 of the butter and mix with a wire whisk until it just about disappears. Whisk in the remaining butter in 2 additions as before; potatoes will be light and creamy after all the butter has been mixed in.
- Whisk in hot milk until incorporated. Add cayenne and more salt if needed. Serve immediately.

HUNGARIAN CHRISTMAS MASHED POTATOES
I found reference to this recipe at a Budapest Tourist Guide. There it was called 'Mashed potatoes with mustard seeds and deep fried onion'. I couldn't find a recipe but I did sort of find the components at various websites then I combined them & reworked it a bit. The onions need to be very soft & caramelized. This looks like a bowl of sweet potatoes with all that paprika! I would love some feedback!

- Boil peeled and quartered potatoes in salted water till tender.
- While potatoes are cooking --.
- Heat skillet. Add mustard seeds. Cover & shake until the popping slows. Add the butter & when melted, add the onions. Cover and cook over low heat for 15 minutes. Uncover, continue cooking over low heat for until very soft, dark & caramelized. Add the paprika. Stir over lowest heat for a minute or two until the paprika has lost its raw taste. Set aside.
- Back to the potatoes --.
- Strain off cooking water & mash. Add 1/2c of the sour cream and blend into potatoes. Add the egg into the potatoes and whip. Add the stick of butter & the remaining sour cream to taste. Stir in the onion mixture. Add salt to taste.

- Chop the potatoes into 2-inch cubes, leaving the skin on if you’re lazy like I am.
