This recipe is a winner! I loved the sweet and salty combination in each handful. The salt of the pretzel and the salt lightly sprinkled on top are just perfect. This would be great for a holiday gift for your mail carrier, school crossing guard or to just munch on while cooking!

1 lb white almond bark
1/2 c peanut butter
4 c broken pretzel pieces
1/2 c heath toffee pieces
small kosher salt

Steps:

  • 1. Melt almond bark in double boiler.
  • 2. Stir peanut butter into melted almond bark.
  • 3. Add pretzel pieces and mix until all pretzels are coated.
  • 4. Spread thin on a foil covered cookie sheet.
  • 5. Sprinkle with toffee bits and a very small amount of kosher salt use a spatula to smooth out.
  • 6. Put in fridge to harden for 15 to 20 minutes. Break into pieces and store in a container.

Here's what you need: all-purpose flour, baking soda, salt, unsalted butter, white sugar, dark brown sugar, vanilla extract, water, egg, chocolate chips, semisweet baking chocolate, coarse sea salt

1 cup all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter
½ cup white sugar
¼ cup dark brown sugar
1 teaspoon vanilla extract
1 teaspoon water
1 egg
⅓ cup chocolate chips
24 oz semisweet baking chocolate
coarse sea salt

Steps:

  • Preheat the oven to 325˚F (160˚C).
  • Make the cookies: in a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a larger bowl, add the butter and sugars. Mix (either by hand or using an electric mixer) until smooth.
  • Add the egg, vanilla extract, and water to the butter mixture and mix until thoroughly incorporated.
  • Add the chocolate chips and dry ingredients, then use a spatula to gently fold them together, being careful not to overmix.
  • Using a small ice cream scoop or spoon, measure out 6 tablespoon-sized balls of dough and space them 2-3 inches (5-7 cm) apart on a prepared baking sheet.
  • Bake the cookies for 18 minutes. They should be thin with crispy edges when finished.
  • Remove the cookies from the oven and allow them to cool for 5 minutes on the baking sheet before transferring them to a wired cooling rack. Bake off the second half of the dough and allow all the cookies to reach room temperature before proceeding.
  • Once thoroughly cooled, place the baked cookies back in the oven, directly on the oven rack, and toast them at 325˚F (160˚C) for 7 minutes. This will completely dry out the cookies leaving them very crispy and brittle.
  • Carefully transfer all the toasted cookies to a parchment-lined baking sheet. Using the back of a heavy spoon or measuring cup, firmly smack the top of the cookies. Set the baking sheet of shattered cookies aside.
  • Make the bark: slowly melt 1 pound (455 g) of the baking chocolate either in a double boiler or in a glass bowl over just-simmering water. Allow the chocolate to melt undisturbed until about two-thirds of it has melted, then stir until it is completely smooth with no visible chunks.
  • Remove the chocolate from the heat and allow it to cool for 10 minutes before adding in the remaining chocolate. The residual heat will melt the solid chocolate. Mix until smooth.
  • Arrange the shattered cookie pieces in a layer on the baking sheet. Pour the melted chocolate over the pieces and use a spatula to quickly and evenly spread the chocolate across the tops of the cookie pieces.
  • Sprinkle with salt and any other desired toppings. Transfer the baking sheet to the refrigerator for at least 30 minutes for the chocolate to set.
  • Once the bark is set, remove the baking sheet from the refrigerator and cover the bark with parchment paper. Use something heavy (like a meat tenderizer) to break the bark into snack-sized pieces.
  • Serve the pieces immediately or store in the refrigerator until desired.

These cookies are so much fun to make and so easy. I love to make them during the holidays and especially for our cookie swap, but they are great any time. I guess you could add the chocolate chips and butterscotch into the cookies, but I like the sweetness it adds as a glaze.

1 cup sugar
1 cup light corn syrup
1 cup peanut butter, creamy or crunchy
6 cups puffed rice cereal (recommended: Rice Krispies)
1 cup semisweet chocolate chips, melted
1 cup butterscotch chips, melted

Steps:

  • For the cookies: In a medium saucepan, bring the sugar and corn syrup to a boil and then reduce to a simmer. Remove from heat, stir in the peanut butter, and then fold in the puffed rice. Let cool until cool enough to touch. Spread waxed paper to cover a 2-foot long area. Press cookie batter, 1/2-inch thick, onto waxed paper. Cut cookies with cookie cutters, and then transfer to a cookie sheet.
  • For the glaze: Melt chocolate and butterscotch separately in a double boiler over barely simmering water or in the microwave at 50 percent power.
  • In a medium bowl, combine melted chocolate and butterscotch. Using the back of a metal spoon, drizzle glaze over the cookies. Set aside until glaze sets, about 15 to 20 minutes.

14 Oreos, broken into pieces
1 and 1/2 cups pretzels, broken
1 cup peanut butter chips
1/2 cup peanuts
1/2 cup miniature Reese's cups
1/2 cup Peanut M&Ms (Christmas Colors)
Christmas sprinkles

Steps:

  • Cover a cookie sheet with waxed paper or foil. Spread the broken pretzels, broken cookies & peanuts on the prepared cookie sheet. Melt the white chocolate in microwave until smooth (1 minute to 1 ½ minutes, make sure to add a little canola oil). Drizzle the melted white chocolate over the pretzel mixture, spreading with a spatula if needed. Before it sets, sprinkle on M&Ms, Miniature Reese's, Peanut Butter Chips and sprinkles. Place the tray into the refrigerator until set. Break into pieces and enjoy!

  • Cover a large cookie sheet with wax paper. (I didn't have any wax paper, so I used parchment paper and lightly sprayed it with cooking spray. I recommend wax paper but this will work if you're in a jam)
  • Spread broken cookies, pretzels, peppermint chips, and about 3/4 of the M&M's onto the baking sheet.
  • Place white chocolate in a container and microwave for 1 1/2 minutes on medium power. Stir and then microwave for another minute until melted and smooth. Watch it carefully to make sure it doesn't burn
