CRUSTLESS QUICHE MASTER RECIPE

Steps:
- Preheat oven to 350 degrees F. For the pan: Brush pan with the soft butter and sprinkle the grated Parmesan evenly on top. Or for a Quick Crust, pulse bread into crumbs in a food processor. Heat butter or oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.
- Whisk the half-and-half, eggs and yolks in large glass measuring cup. Season with salt, pepper, and nutmeg, cayenne or paprika to taste. Spread half the desired filling evenly in the pan, top with about half the cheese; repeat with remaining filling and cheese. Pour the custard over the fillings. Top with more herbs or cheese as desired.
- Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.
CHRIS'S MANLY QUICHE
Chock-full of ham, broccoli, and cheese, with just enough eggs to hold it together, this is no girly food. Shared with us by a college student, it is one of the few dishes he knew how to prepare. But if one only knows three recipes, this is certainly a great one to have in the set!

Steps:
- Steam broccoli; drain. Make certain it is cut into small pieces.
- Line a pie plate with prepared pie dough. ( I use a deep dish glass pie plate with a Pillsbury refrigerated pie crust.)
- Sprinkle flour into crust-lined pie plate.
- Mix together ham, broccoli, and shredded cheese; spread evenly into crust.
- Beat together eggs and evaporated milk. Pour it evenly over ham mixture. (Note: Sometimes I throw in some extra cheese or ham here, depending on how much I have on hand and how much space remains in pie plate.)
- Bake at 375 degrees F for 55 minutes, checking after 45 minutes to ensure color isn't getting too dark. If quiche darkens too quickly, cover edges with foil, then continue baking until quiche is set. Allow quiche to rest 10 - 15 minutes before serving.
MANLY QUICHE/OMELET PIE (REAL MEN "DO" EAT QUICHE)

- 1. Preheat oven to 375 degrees F.
- 2. In a large skillet, add sausage & bacon, cook, until no longer pink; 5 - 8 minutes.
- 3. Add butter, onions & mushrooms, season with salt, pepper & garlic powder; cook until onions are translucent; 10 minutes. Set aside & cool slightly, 10 minutes.
- 4. Fit dough into 9" pie plate; flute edge.
- 5. Sprinkle enough cheese in bottom of crust, about ½ - 1 C.
- 6. Beat eggs with cream, salt, pepper & garlic powder. Pour into crust; sprinkle with about ½ - 1 C cheese.
- 7. Bake 50 minutes or until set & golden. Immediately out of oven, sprinkle with remaining cheese. Let stand 20 minutes before serving.

- Pie Crust: Combine the flour, sugar, and salt in the bowl of a food processor fitted with a steel blade. Pulse a few times to mix.
- Add the butter and shortening and pulse about 10 -12 times until the fat is cut into the flour mixture and it's pea size.
- Pour in about ⅔ of the ice water and pulse a few more times until a ball begins to form, adding more water as needed. Be careful not to overmix. The dough should not be completely blended, it will come together on the counter.
- Scrape dough onto the counter and form it into a flat disc. Wrap it in plastic wrap and refrigerate for at least an hour or overnight. (Dough can also be frozen for several weeks. Defrost in refrigerator before proceeding.)
