CHORIZO AND EGG TOSTADAS



Chorizo and Egg Tostadas image

1 1/4 cups diced cherry tomatoes (about 8 ounces)
1/2 small red onion, finely diced
2 tablespoons pickled jalapeños, finely chopped, plus 1 tablespoon brine
1/2 cup packed fresh cilantro, chopped, plus more for serving
1 tablespoon fresh lime juice, plus wedges for serving
2 tablespoons extra-virgin olive oil
Kosher salt
8 tostada shells
1 14.5-ounce can refried beans
1/2 pound fresh chorizo, casings removed
1 cup shredded pepper Jack cheese (about 4 ounces)
8 large eggs
Freshly ground pepper

Steps:

  • Preheat the oven to 425˚ F. Combine the tomatoes, red onion, jalapeños and brine, cilantro, lime juice, 1 tablespoon olive oil and 1/4 teaspoon salt in a medium bowl. Set aside.
  • Arrange the tostadas on 2 baking sheets and bake until golden brown, rotating the pans halfway through, about 5 minutes. Remove from the oven. Divide the refried beans among the tostadas (about 2 heaping tablespoons each); spread evenly, leaving a 1/8-inch border. Crumble the chorizo on top of the beans. Return the tostadas to the oven and cook until the chorizo is cooked through, about 10 minutes. Top with the cheese and continue baking until melted, 1 to 2 more minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the eggs and cook until the whites are partially set, 2 to 3 minutes. Cover and cook until the whites are fully set but the yolks are still runny, 2 to 3 more minutes. Season with salt and pepper.
  • Divide the tostadas among plates. Top with the tomato mixture, fried eggs and more cilantro. Serve with lime wedges.

1/2 lb chorizo sausage, diced
1 roasted red pepper, diced (I use jarred)
8 -10 marinated artichoke hearts, drained and diced
4 6-inch corn tortillas, warmed
3 cloves garlic, minced
3 cups grated cheese (I use a mexican blend)
2 scallions, sliced thinly (I've also used shallots, thinly sliced)
1 tomatoes, diced
fresh cilantro, chopped for garnish
sour cream (optional)

Steps:

  • Heat a skillet, then add the chorizo and saute until browned.
  • Place the tortillas on a baking sheet.
  • Divide the chorizo and artichoke hearts between the 4 tortillas.
  • Divide between the 4 tortillas: the garlic, the roasted red pepper, the cheese, and finally the scallions (or shallots).
  • Place them under a heated broiler and broil until the cheese melts and starts to sizzle.
  • Remove from broiler, and sprinkle with tomato and cilantro.
  • Dollop with sour cream if using, then serve hot.

This vibrant dish is packed full of flavours and needs no accompaniment

1.2l chicken stock
50g unsalted butter
5 shallots , finely chopped
3 garlic cloves , finely chopped
350g arborio rice
200ml dry white wine
70g pack sliced chorizo , each slice cut into quarters
175g marinated artichoke (in olive oil), drained and halved
50g parmesan , grated (reserve 25g/1oz for the garnish)
handful flatleaf parsley , finely chopped

Steps:

  • Pour the chicken stock into a large pan and keep on the heat at a gentle simmer. Melt half the butter in a large, deep sided, heavy-based frying pan. Add shallots and garlic and cook until soft, but not brown, then tip in the rice and stir for 1 minute until the rice begins to turn translucent.
  • Pour in the wine and stir well, then add two handfuls of hot stock and stir until the rice has absorbed almost all of the liquid. Lower the heat and continue to add the stock, a couple of ladles at a time, only adding more when the rice has absorbed each additional of liquid. Continue until all the stock is used up - the risotto should be creamy and the rice tender. Add more stock if needed.
  • Meanwhile, throw the sliced chorizo into a small frying pan and fry until some fat has come out of the sausage. Reserve a few pieces for the garnish, then add the artichokes to the pan and stir to warm through. Remove risotto from the heat, then add chorizo and artichokes. Stir in remaining butter, 25g of parmesan and parsley.
  • Season well and transfer to a large serving dish. Garnish with the reserved chorizo and parmesan.

1 chorizo sausage (about 100g)
1 onion, julienned
1 clove garlic, crushed
250 g raw large peeled shrimp
1 (440 g) jar marinated artichokes, drained and quartered-reserve a little of the oil
1 (440 g) can chopped peeled tomatoes
fresh ground black pepper
2 tablespoons chopped fresh parsley

Steps:

  • Peel, and halve the chorizo sausage lengthways.
  • Cut it into 1/2cm half moon discs.
  • Place these in a large pan over medium to high heat, and cook until the fat has started to run, and the sausage is browned.
  • Reduce the heat and add the onion and garlic; cook a further 5 minutes until the onion and garlic are softened.
  • Add a little of the reserved oil if you need to at this stage.
  • Add the shrimp and cook for a further 3 minutes, or until they are pink and just cooked through.
  • Add the canned tomatoes, and bring to the boil, cook for a couple of minutes more.
  • Stir through the pepper and parsley and serve.
  • We ate this over angel hair pasta.
  • *weactually make our own marinated artichokes-buying the cheaper tinned ones, and marinating them in olive oil, crushed garlic, lemon juice and zest and freshly ground black pepper.

I love tostadas. And I used to be able to buy some brand of canned Refried Beans with Chorizo. Haven't been able to find them in years. So...I have come up with this.

corn oil or canola oil, for frying
6 -8 corn tortillas
2 pinches sea salt
1 (14 ounce) can refried beans
1/4 lb bulk chorizo sausage (or one fresh link)
1 cup monterey jack pepper cheese (combination) or 1 cup mexican cheese (combination)
1 romaine lettuce hearts or 1/2 head shredded iceberg lettuce
2 plum tomatoes, diced or 8 grape tomatoes, quartered
diced avocado

Steps:

  • Heat 1/8 to 1/4-inch oil over medium high heat. Fry tortillas 30 seconds on each side to light golden, 1 tortilla at a time. Drain tortillas on paper towels or brown paper sack. Season with a little sea salt while hot.
  • Saute chorizo in medium skillet over medium heat, breaking up the sausage into small pieces. When cooked, add the can of refried beans to the skillet to heat through. Mix chorizo and beans.
  • Spread hot beans on tortillas and top with a handful of shredded cheese, shredded lettuce and diced tomato pieces.
