Coconut Waffles with Chocolate Maple Syrup and Banana image

1 3/4 cups all-purpose flour
2 tablespoons pure cane sugar
1 tablespoon light brown muscovado sugar
1 tablespoons baking powder
1/4 teaspoon fine sea salt
1 1/4 cups whole milk
1/2 cup unsweetened coconut milk
6 tablespoons unsalted butter, melted and slightly cooled, plus more for brushing on the waffle iron
3 tablespoons canola oil
1/2 teaspoon pure vanilla extract
3 whole eggs
1/3 cup shredded sweetened coconut, lightly toasted, plusmore for garnish
1 cup Grade B maple syrup
3 ounces bittersweet chocolate, finely chopped
Pinch sea salt
2 large ripe bananas, sliced

Steps:

  • For the waffles: Whisk together the flour, sugars, baking powder and salt in a medium bowl. Whisk together the milk, coconut milk, butter, oil, vanilla and eggs in a medium bowl. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the coconut. Cover and let rest in the refrigerator for 30 minutes.
  • For the syrup: Meanwhile, bring the syrup to a simmer over low heat in a small saucepot. Add the chocolate and salt and remove from the heat. Whisk it until it becomes smooth. Keep warm.
  • Heat a waffle iron according to manufacturer's directions. Brush the grates with melted butter. Ladle about 1/3 cup of the batter onto each grate. Close the cover and bake until golden brown. Serve the waffles topped with the bananas, drizzled with syrup and garnished with a sprinkling of toasted coconut.

Eat for breakfast sprinkled with powdered sugar, or top it with a scoop of ice cream for dessert. Recipe came with my Cuisinart waffle maker. Recipe called for 1 2/3 cups milk, but I ended up adding at least another 1/3 cup.

2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 2/3-2 cups low-fat milk
1 medium banana, mashed (1/2 cup)
6 tablespoons vegetable oil
2 large eggs
1/2 cup mini chocolate chip

Steps:

  • Place dry ingredients in large mixing bowl and stir until mixed well. Add remaining ingredients and combine until well blended and smooth.
  • Let batter sit 5 minutes before using.
  • Preheat waffle iron.
  • Use 1/2 cup batter per waffle and cook until done (approx. 2 minutes).
  • Serve immediately.

3 tablespoons unsalted butter
3 tablespoons vegetable shortening
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons sugar
3 large eggs
1 cup milk
1/2 cup chocolate syrup, plus more for topping
1/2 teaspoon vanilla extract
Cooking spray
Confectioners' sugar and/or berries, for topping (optional)

Steps:

  • Melt the butter and shortening in a small saucepan, stirring to combine; remove from the heat and set aside. Whisk the flour, baking powder, salt and sugar in a large bowl.
  • Whisk the eggs, milk, chocolate syrup and vanilla in a large liquid measuring cup or a separate bowl. Whisk the egg mixture into the flour mixture until combined. (The batter will be slightly lumpy.) Whisk in the butter mixture until combined.
  • Preheat the oven to 250 degrees F. Preheat a waffle iron and spray with cooking spray. Ladle some of the batter into the waffle iron to within an inch of the edge (1/3 to 1/2 cup batter, depending on your waffle iron); cook until crisp. Transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
  • Divide the waffles among plates. Dust with confectioners'sugar and top with berries and/or chocolate syrup.

  • Beat egg whites until soft peaks form.
  • In a food processor or large bowl beat yolks and golden syrup together, add milk and melted butter then dry ingredients.
  • Fold in egg whites.
  • Heat a waffle iron, preferably one with a non-stick surface.
  • When hot, ladle in a spoonful of mixture to cover the surface.
  • Close lid and cook for approximately 1 minute until steaming ceases.

2 cups all-purpose flour
1/2 cup ground lightly toasted pecans
1 1/2 teaspoons baking powder
1/4 teaspoon salt
4 eggs, separated
1/4 cup sugar
1 teaspoon vanilla extract
1/2 cup melted butter plus 1/2 cup cold butter, cut into pieces
2 1/2 cups milk
Vegetable oil or nonstick cooking spray, for coating the waffle iron
1 cup pecan pieces
1/2 cup cane syrup
4 medium bananas, peeled and cut into 1/2-inch slices

Steps:

  • Preheat the waffle iron according to manufacturer's instructions and preheat the oven to 200 degrees F.
  • Combine the flour, pecans, baking powder and salt in a medium mixing bowl and whisk to combine. In another bowl, combine the egg yolks and sugar and whisk until pale yellow. Add the vanilla extract, 1/2 cup melted butter, and milk, and whisk to blend. Combine the egg and milk mixture with the flour mixture and whisk until just combined. Do not overmix.
  • In the bowl of an electric mixer, beat the egg whites until soft peaks form, about 1 minute. Using a rubber spatula, gently fold the egg whites into the waffle batter. Do not overmix.
  • Using a pastry brush, lightly coat the waffle iron with some of the vegetable oil. Pour enough batter into the iron to just barely cover the waffle grid. Close the waffle iron and cook according to manufacturer's instructions, or until golden brown, 4 to 6 minutes. Transfer to a baking sheet and keep warm in the oven while you prepare the remaining waffles.
  • In a saute pan, add the remaining 1/2 cup of butter and the pecan pieces. Cook, stirring occasionally, until pecan pieces are light golden and fragrant, 2 to 3 minutes. Add the banana slices and cook until light golden and soft, 2 to 3 minutes. Add the syrup and bring to a simmer. Serve with the warm waffles.

Cornmeal adds crunch and sweetness to these fluffy waffles, which are lightened with beaten egg whites. If you'd prefer a little more fiber, you can substitute a third of the all-purpose flour with whole-wheat or rye flour. The banana bourbon syrup, studded with pecans, makes these waffles sweet enough for dessert. If you do go that route, a scoop of vanilla ice cream or whipped cream would not be amiss. Or serve the waffles with some butter, sliced bananas and a drizzle of plain maple syrup for a simple but satisfying breakfast.

7 tablespoons unsalted butter, more for waffle iron
1 large ripe banana, peeled and sliced into 1/2-inch-thick rounds
2 tablespoons bourbon
1/2 cup maple syrup
50 grams toasted chopped pecans (1/2 cup), optional
160 grams all-purpose flour (1 1/4 cups)
100 grams finely ground cornmeal (3/4 cup)
15 grams sugar (1 tablespoon)
8 grams baking powder (1 teaspoon)
5 grams fine sea salt (1 teaspoon)
3 grams baking soda (1/2 teaspoon)
1 cup sour cream or Greek yogurt
1 cup whole milk
4 large eggs, separated

Steps:

  • Melt 5 tablespoons butter either on the stove or in the microwave. Set aside.
  • In a medium skillet over medium-high heat, melt remaining 2 tablespoons butter until foam subsides. Add bananas in a single layer. Cook, without moving, until undersides are golden brown, 2 to 3 minutes; flip and brown other side, 2 to 3 minutes more. Transfer to a bowl.
  • Add bourbon to pan and let simmer until mostly evaporated, about 1 minute. Pour in syrup and nuts; simmer until just heated through. Pour syrup onto the bananas and cover to keep warm (or reheat just before serving).
  • In a large bowl, whisk together flour, cornmeal, sugar, baking powder, salt and baking soda. In a separate bowl, whisk together sour cream or yogurt, milk, melted butter and egg yolks. Fold wet ingredients into dry ingredients.
  • In a mixer fitted with the whisk attachment, whip the egg whites until they hold stiff peaks. Immediately fold into batter.
  • Heat a waffle iron and, using a pastry brush or paper towel, lightly coat with melted butter. Cook waffles (using about 1/2 cup batter per waffle) until golden and crisp. Butter the iron in between batches as needed. Serve waffles immediately as they are ready, or keep warm in a 200-degree oven until ready to serve. Serve with banana syrup on top.

Smother fluffy waffles with fried bananas, vanilla ice cream and caramel sauce for an indulgent dessert or brunch time treat

140g light muscovado sugar
2 tbsp golden syrup
50g butter
300ml double cream
4 large eggs , separated
300g plain flour
½ tsp bicarbonate of soda
2 tbsp golden caster sugar
50g butter , melted
600ml milk
2 bananas , peeled and cut into large pieces
1 tbsp butter
vanilla ice cream (optional)

Steps:

  • Put the sugar, golden syrup and butter in a saucepan and heat gently, stirring occasionally, until everything has melted together. When the mixture starts to bubble, stir in the double cream and cook for 2 mins. Stir in 1/2 tsp salt, then take off the heat and allow to cool slightly in the pan.
  • Heat the waffle maker (if you don't have one, you can use a griddle pan instead - see tip). Whisk the egg whites to stiff peaks. In a separate large bowl, mix together the flour, bicarbonate, caster sugar and a pinch of salt. Make a well in the centre and add the egg yolks and melted butter. Start mixing with a balloon whisk; keep whisking as you slowly add the milk until you get a smooth, thick batter. Carefully fold in the egg whites with a metal spoon. Use a ladle to pour the batter into your waffle maker and cook for 5 mins or according to the manufacturer's instructions. Repeat until all the batter has been used up - keep cooked waffles warm in a low oven until serving.
  • Just before serving, heat the remaining butter in a non-stick frying pan over a medium heat and fry the banana pieces until golden. Divide the waffles between 4 plates, top with the fried bananas, drizzle with salted caramel and top with a scoop of vanilla ice cream, if you like.
