CHOCOLATE SURPRISE COOKIES
Chocolate and peanut butter are popular with our clan, so I roll them together in this recipe. It's fun watching folks' faces when they bite into the middle.

Steps:
- In a large bowl, beat peanut butter and confectioners' sugar until smooth. Roll into thirty 3/4-in. balls. Cover and refrigerate for 30 minutes. , Meanwhile, in another bowl, cream butter, peanut butter and sugars until light and fluffy. Beat in egg white and vanilla. Combine flour, cocoa and baking soda; gradually add to creamed mixture until blended. Roll into thirty 1-1/2-in. balls., Using floured hands, flatten chocolate balls and shape one around each peanut butter ball, sealing edges. Place 2 in. apart on greased baking sheets. , Flatten with a glass dipped in sugar. Bake at 375° for 7-9 minutes or until cookies are set and tops are cracked. Cool for 1 minute. Before removing to wire racks., For icing, in a small bowl, beat shortening and confectioners' sugar until smooth. Beat in vanilla and enough milk to reach spreading consistency. Spoon into a resealable plastic bag or pastry bag; cut a small hole in corner of bag. Pipe icing over cookies in a zigzag pattern.

COCONUT PECAN CHOCOLATE CHIP COOKIES BY FREDA
What can I say, everythings Better with BUTTER!!! When I make these for a Holiday, or special occasion, I drizzle these with melted white or Chocolate zig-zagging across each cookie, they look so attractive, and taste, so good. I'll Bet you won't eat just one!!!

Steps:
- 1. Line Cookie sheet with Parchment paper. Preheat Oven @ 375 degrees. Bake 12 min. Makes about 4 Dozen
- 2. In a large bowl CREAM butter & sugars, ADD eggs one at a time, Mix well with MIxer. Add vanilla
- 3. Slowly add Dry ingredients, "Little at a time", Blend & beat til well mixed. scrape down your bowl well as you blend. Add Chips, Nuts and coconut, Mix on "LOW" just til combined. (DO NOT OVER BEAT)
- 4. Drop by TBS onto Lined Baking sheet. Bake 12 min. Will make about 4 dozen cookies.
- 5. Chocolate Drizzle TOPPING: For drizziling on cookies, melt 1 cup Choc chips in microwave or Double boiler, Pour into Zip lock bag. seal. Cut a tiny hole in the corner of your Bag, Squeeze and drizzle fast across the tops of Your Cooled Cookies. Very easy & makes a very Attractive Cookie. ENJOY!!

- In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa and baking soda; gradually add to the creamed mixture and mix well. Stir in chocolate chips. , Roll into 1-1/2-in. balls. Press two to three frozen marshmallows into each; reshape balls. , Place 2 in. apart on ungreased baking sheets. Bake at 400° for 8-10 minutes or until set. Cool for 5 minutes before removing to wire racks to cool completely.

Steps:
- Preheat oven to 375°F.
- Combine flour, cocoa, baking powder and baking soda in medium bowl; set aside.
- Beat butter, brown sugar and 1/2 cup granulated sugar with electric mixer at medium speed until light and fluffy; beat in eggs and vanilla.
- Gradually add flour mixture and 1/2 cup pecans; beat well.
- Cover dough; refrigerate 15 minutes or until firm enough to roll into balls.
- Place remaining 1/2 cup pecans and 1 tablespoons sugar in shallow dish. Roll tablespoonful of dough around 1 caramel candy, covering completely; press one side into nut mixture.
- Place, nut side up, on ungreased cookie sheet. Repeat with additional dough and candies, placing 3 inches apart.
- Bake 10 to 12 minutes or until set and slightly cracked. Let stand on cookie sheet 2 minutes.
- Transfer cookies to wire rack; cool completely.
- Place white chocolate chips in a small resealable plastic freezer bag; seal bag.
- Microwave at MEDIUM (50% power) 2 minutes. Continue microwaving in one minute intervals at 50% power until melted.
- Knead bag until chocolate is smooth. Cut off tiny corner of bag; drizzle chocolate onto cookies.
- Let stand about 30 minute or until chocolate is set.

These are a slice Chill and bake recipe and a crispy cookie. also great with icing in the center of two cookies. NOTE:You will need a commercial Mixer for this recipe.

- NOTE: You will need a Commercial mixer for these. this is a commercial Foodservice recipe. Preheat Oven: @ 350 Ungreased 18X26 Baker sheet pans
- Add Ingredients in BIG Mixer in order Listed. Using Beater at Low Speed, mis 1-2 minutes, or til completely blended. Scrape down bowl once during mixing.
- Divide the Dough in 10 pieces, (about 1 lb 10 oz each)Form into rolls about 2" thick. Wrap in plastic or wax paper and chill at least 3 hrs.
- Slice each roll into 20 slices. Place in rows on baking sheet 5 X 7. on ungreased Baking sheet or Use Parchment paper for eazy cleanup. Bake 10 min. or until done. remove from pan while still warm. - Mix flour, chopped pecans, and margarine together. Press into a baking dish and bake at 350 degrees for 20 minutes.
- Mix cream cheese, confectioners sugar, and cool whip. Spread mixture on cooled crust, set aside.
- Mix instant pudding with milk. Put this mixture on top of cream cheese mixture. Top with cool whip (as much as you want) and a few chopped pecans.
- (Any type of pudding will do, but since it's called chocolate delight, I went with chocolate pudding.).
NO SUGAR DIABETIC CHOCOLATE DELIGHT
Steps:
- Toss nuts with flour and work in margarine until well blended. Press into bottom of 9 x 12 pan. Bake at 350°F for 15-20 minutes.
- Beat half of Cool Whip with cream cheese and Splenda until smooth and creamy. Spread over cooled crust.
- Whip instant pudding with milk and spread over cream cheese filling. Top with remaining Cool Whip and sprinkle with additional nuts.

This was a little invention of mine two days ago and yesterday I tested the frozen cookie bake time. They are a great store ahead and bake when the urge hits for chocolatey delights. These little cookies hold a secret filling inside.

Steps:
- 1. Mix the cake mix with the eggs and butter.
- 2. Divide the cake mix into 2 even bowls and put in the fridge to get cold so it is easier to work with. 1-3 hours
- 3. Cut each block of cream cheese into 12 pieces.
- 4. Take out one bowl of cake mix at a time divide dough into 12 pieces. refriderate after doing the dividing
- 5. Take one piece of dough and wrap around a chunk of cream cheese and roll into a ball and then roll into the sugar.
- 6. Do the same with the rest of the dough and the other bowl.
- 7. At this point you can freeze the balls or bake at 350 degrees for 12 minutes until stress marks no longer look wet.
- 8. If you freeze them when you are ready to bake them just put on a cookie sheet, preheat the oven and bake for 15-17 minutes. Until stress marks do not look wet. Picture above for frozen cookies about to go in oven
THE REALTOR'S CHOCOLATE SURPRISE
My Mom gave me this recipe a long time ago but I've long since taken it over and now it's mine! It's pretty simple to do and tastes wonderful. This is great for potlucks and bar-b-ques... no matter where I take this, I come home with an empty pan. Be sure to allow this to chill for several hours but overnight is best.

- Preheat oven to 375.
- Melt butter, add flour and 1/2 cup nuts. Mix and press into bottom of 13x9 pan. Bake for 15 minutes.
- Cream powdered sugar, cream cheese and 1 cup Cool Whip. Spread over cooled crust.
- Mix instant pudding with milk. Spread over cream cheese layer.
- Spread remainder of whipped cream over chocolate pudding layer. Sprinkle with chopped nuts if desired.
- Chill overnight.

- 1. BROWNIES; Preheat Oven ; in "ROUND (Pam Sprayed) 8" or 9" CAKE PAN" pour in Batter for Brownies. Then Bake your Brownies according to PKG Directions, or Your Favorite Homemade Recipe. COOL. . . COMPLETELY. When Cooled Completely, Remove from Cake Pan, Slice layer in 1/2 . Set aside.
- 2. FILLING; Mix with Mixer; Ricotta Cheese, Lemon juice, & Powdered Sugar Til Smooth and Creamy. PUDDING MIX; Mix according to BOX directions. COOL Well.
- 3. Now LAYER Ricotta mix on one 1/2 of the Brownies. Top with remaining 1/2 layer of Brownies. Top with CHOCOLATE PUDDING, (or Nutella,) Spooned on Brownie Layer and Swirl around top.
- 4. STRAWBERRIES LAYER; Top the CHOCOLATE PUDDING or (the Optional Nutella) 2nd. Layer, with Sliced Strawberries, Starting @ the outer EDGE and working your way into the Center. SEE PHOTO. TIP: To Serve, You can top with Whipped Cream. ENJOY. This is a Treat.
