FLUFFY RASPBERRY CHOCOLATE PANCAKES

The most delicious Fluffy Raspberry Chocolate Pancakes to ever grace your kitchen!

1 3/4 cup buttermilk
1/4 cup Stonyfield Organic Greek yogurt
2 teaspoons vanilla extract
3 eggs
1/4 cup unsalted butter, melted and cooled slightly
2 tablespoons white sugar
2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground nutmeg
2 cups fresh raspberries
1/2 cup dark chocolate chips
butter as needed
maple syrup

Steps:

  • In a small bowl, combine the buttermilk, Stonyfield Organic Greek, vanilla, eggs and melted butter, stir to combine
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and nutmeg and whisk to combine
  • Pour the wet ingredients into the bowl of flour and whisk until a semi-lumpy batter forms, don't over whisk. Let the batter rest for 10-15 minutes
  • Heat a nonstick skillet over medium heat, add a teaspoon or two of butter to melt and then quickly wipe out with a paper towel.
  • Use a ¼ cup measurer to pour the batter into the lightly greased pan, and sprinkle with a few raspberries and chocolate chips. With a small spoon cover raspberries and chocolate chunks with a little extra batter, this prevents burning when flipping. Cook for 2-3 minutes or until the edges start to bubble. Flip pancake and continue to cook for another 1-2 minutes until golden brown. Remove from the skillet. Pancakes can be kept warm in a low oven, on a baking sheet fitted with a wire rack, at 225 degrees F until ready to serve. Repeat the process for the remaining batter.
  • Serve with warm maple syrup!

These Chocolate Pancakes are every chocolate lovers' dream plus they're just as easy to make as any pancake breakfast! Top these delightfully fluffy, rich, and tasty pancakes with my chocolate ganache syrup, fresh fruit, whipped cream, or whatever you like most!

2 cups all-purpose flour
1/4 cup cocoa
1/4 cup sugar
4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 3/4 cups milk
1/4 cup butter ((unsalted - melted and cooled))
1 large egg
2 tsp vanilla extract
8 oz semi-sweet chocolate chips
1 cup heavy cream

Steps:

  • In a large mixing bowl, add the dry ingredients and whisk to combine.
  • Make a well in the center of the combined dry ingredients, then add the wet ingredients (milk, butter, egg, and vanilla extract).
  • Mix just enough so that the flour is incorporated into the wet ingredients and you have a slightly lumpy batter. Set aside.
  • Lightly coat a large skillet or non-stick frying pan coconut oil or non-stick cooking spray and bring the skillet to medium heat.
  • Drop pancake batter into the skillet using a 1/4 cup scoop (most ladle portions are this size) and push the batter outward into a circle if needed. Heat for about 1-2 minutes, or until bubbles are forming and the bottom is slightly browned. Your spatula should slide easily under the edges when the pancakes are ready to flip.
  • Flip the pancakes when ready, and cook on the second side for about one minute. Transfer to a plate and cover loosely with aluminum foil or kitchen towel to keep warm while repeating with additional pancakes.
  • Place your 1 cup portion of heavy cream into the microwave and heat to just under boiling, about 200 degrees F (93 degrees C). You will see small bubbles forming at this temperature.
  • Pour the heated heavy cream over the semi-sweet chocolate chips and give it a minute to melt the chips before stirring. Stir after a minute, and continue stirring until the chocolate sauce is smooth. *If your sauce is too thick, add small drizzles of heavy cream until the consistency is smooth and pourable.

1 package (10 ounces) frozen sweetened raspberries, thawed
1/4 cup orange juice
3 tablespoons lemon juice
2 tablespoons sugar
PANCAKES:
1-1/2 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, room temperature
1 cup 2% milk
3/4 cup vanilla yogurt
1/4 cup butter, melted
1/2 cup semisweet chocolate chunks or chips

Steps:

  • Place raspberries, orange juice, lemon juice and sugar in a blender; cover and process until pureed. Press through a fine-mesh strainer into a bowl; discard seeds., In a large bowl, whisk flour, sugar, baking powder, baking soda and salt. In another bowl, whisk eggs, milk, yogurt and melted butter until blended. Add to dry ingredients, stirring just until moistened. Fold in chocolate chunks., Lightly grease a griddle; heat over medium heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with raspberry sauce.

1-1/2 cups warm buttermilk (110° to 115°)

SYRUP:

Steps:

  • In a small bowl, dissolve yeast in buttermilk; let stand for 5 minutes., Meanwhile, in a large bowl, combine the flours, sugar, baking powder, baking soda and salt. BLUEBERRY RASPBERRY SYRUP:
1 c fresh blueberries
1 1/2 c fresh raspberries
1/2 c sugar
1/2 c water
CHOCOLATE PANCAKES:
1 large egg
2 Tbsp melted butter
1 c all purpose flour
1/3 c cocoa, unsweetened powder
1/3 c sugar
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla extract
1/2 c chocolate chips, optional
OPTIONAL:
whipped topping

Steps:

  • 1. Syrup: Combine the raspberries, blueberries, sugar, and water in a small saucepan. Bring this mixture to a boil stirring constantly for 5 minutes, scraping the bottom as needed to keep from burning. Then reduce the heat to low and simmer the mixture until thick. This takes about 10 minutes. Serve warm over pancakes or waffles.
  • 2. Chocolate Pancakes: In a small bowl combine milk, egg, and butter. Mix until blended. In another bowl, combine flour, cocoa powder, sugar, baking soda and salt. Mix together well. Add milk mixture to flour mixture and stir just until dry ingredients are moistened. Batter should still be lumpy. Then fold in the chocolate chips if you choose to use them. For each pancake, pour a 1/4 cup batter onto a hot, greased skillet. Cook 1-2 minutes or until batter is set around edges. Carefully turn over pancake. Continue to cook for 1 to 2 minutes or until pancakes are cooked through. Repeat with remaining batter.
  • 3. To serve pour warm syrup over pancakes and top with whipped cream or topping.
