SOFT MALTED CHOCOLATE CHIP COOKIES

Steps:
- Whisk flour, malted milk powder, baking powder, salt and cornstarch together. Set aside.
- Melt butter in a small saucepan over medium low heat. Remove from heat.
- In large mixing bowl combine the butter and brown sugar, using wooden spoon or mixer set on lowest setting.
- Stir in eggs and vanilla with mixer still on lowest setting until combined.
- Stir in dry ingredients until evenly incorporated.
- Fold in chocolate chips.
- Chill dough for 2 hours or up to 3 days.
- Preheat oven to 350°
- Line baking sheet with parchment paper.
- Scoop approximately 2 Tbsp of dough and form into a ball. Place dough 3 inches apart on lined baking sheet. Press additional chocolate chips into the top of the dough balls if desired.
- Bake for 11-12 minutes until the edges golden. Don't over-bake.
- Allow to cool on baking sheet for 3 minutes and then transfer to a wire rack to continue cooling.
MALTED MILK CHOCOLATE CHIP COOKIES

- Preheat the oven to 375 degrees F.
- Cream the butter, then add both sugars and cream until fluffy. Add the eggs and beat slightly, then add the vanilla and beat until combined. Add the malted milk powder and beat until combined.
- In a separate bowl, sift together the flour, baking soda and salt. Add to the butter mixture, beating gently until just combined. Add the chocolate chips and stir in gently.
- Drop by teaspoonfuls (or use a cookie scoop) on an ungreased baking sheet, leaving plenty of space between the cookies (they spread out quite a bit). Bake for 9 to 11 minutes. The cookies will be very flat and very chewy. Allow to cool slightly before removing from pan with a spatula.
- Optional: Allow to cool completely, then use 2 cookies to make an ice cream sandwich. Add sprinkles to the sides of the ice cream, then wrap individually in plastic wrap.
MALTED CHOCOLATE CHIP COOKIES

- Preheat oven to 350°F with racks in the middle-upper and middle-lower portions. Line two baking sheets with parchment paper.
- Combine flour, baking soda, salt, cornstarch, and malted milk powder. Set aside.
- Using a stand mixer fitted with the paddle attachment (preferred) or a hand mixer, beat butter, brown sugar, and granulated sugar until combined (about a minute or two). Because the butter is cold it won't look as soft and creamy as you might be used to, that's ok, keep beating it. Add egg and vanilla, beating until combined and scraping the sides and bottom of the bowl as needed. Beat in the flour mixture until fully combined. Add the chocolate chips and malted milk balls, mixing until combined (I mix them in by hand with a wooden spoon).
- Scoop the dough into generous 2-tablespoon portions and form into tall balls. Balls should be a bit taller than wider (see photo). This makes thicker cookies. Place on the lined baking sheets with several inches in between each dough ball. If desired, you can press a few chocolate chunks/chips onto the top of each dough ball.
- Bake*** for 9-11 minutes, until the edges are just beginning to set and the centers are still underdone. The cookies should be so soft that if you tried to pick them up off the baking sheet they would fall apart. Place the baking sheets on cooling racks and cool completely, they will firm up as they cool. See recipe notes regarding optional step of shaping the cookies after baking. If desired, sprinkle the tops of the cookies with flaky sea salt.

- Heat oven to 375°F. In small bowl, mix flour, malted milk powder, baking soda and salt; set aside.
- In medium bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.
- Beat in egg yolk and vanilla until smooth. Stir in flour mixture just until blended (dough will be stiff). Stir in milk chocolate chips.
- Onto large ungreased cookie sheet, drop 12 rounded tablespoonfuls 2 inches apart.
- Bake 8 to 10 minutes or until light brown (centers will be soft). Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container at room temperature.

- Heat oven to 180C/160C fan/gas 4 and line 2 baking sheets with baking parchment. Beat the butter and sugars in a bowl until light and fluffy, then beat in the eggs one at a time.
- Add the flour, malted milk drink powder, baking powder and a good pinch of salt, then stir with a wooden spoon until the mixture forms a dough. Tip out onto the work surface and gently knead in the chocolate. Divide the mixture into 20 pieces, roughly the size of a whole walnut. Roll each piece into a ball and place on the baking trays, leaving plenty of room for the cookies to spread. Flatten each ball slightly with your hand.
- Bake for 10-12 mins until starting to turn golden brown on the edges. Remove from the oven, leave on the baking tray for 5 mins to cool slightly then transfer to a wire rack to cool completely. Will keep in a cake tin or cookie jar for up to 5 days.
