CHOCOLATE ANGEL FOOD CAKE I
This is a very moist and light angel food. A family favorite at my house.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix confectioners' sugar, cake flour, and cocoa. Sift together 2 times, and set aside.
- In a clean large bowl, whip egg whites, salt, and cream of tartar with an electric mixer on high speed until very stiff. Fold in white sugar 2 tablespoons at a time while continuing to mix. Fold in flour mixture, a little at a time, until fully incorporated. Stir in vanilla. Pour into a 10 inch tube pan.
- Bake at 325 degrees F (165 degrees C) for approximately 1 hour, or until cake springs back when touched.

- Prepare and bake cake according to package directions, using an ungreased 10-in. tube pan. Cool., For filling, in a small saucepan, combine the marshmallows, candy bars and milk. Cook and stir over low heat until marshmallows are melted. Transfer to a small bowl; cool to room temperature. Fold in 3/4 cup whipped topping. , Cut cake horizontally into three layers. Place bottom layer on a serving plate; spread with a third of the filling. Repeat layers twice. Refrigerate for at least 1 hour. , Frost top and sides of cake with remaining whipped topping.

- Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Sift together confectioners' sugar, flour and cocoa three times; set aside. , Add cream of tartar and salt to egg whites; beat on medium speed until soft peaks form. Gradually add sugar, about 2 tablespoons at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Gradually fold in flour mixture, about 1/2 cup at a time., Spoon into an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on the lowest oven rack at 375° for 35-40 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour. , Run a knife around side and center tube of pan. Remove cake to a serving plate. , In a large bowl, combine the first five frosting ingredients; cover and chill for 1 hour. Beat until stiff peaks form. , Spread over the top and sides of cake. CHOCOLATE FILLED ANGEL FOOD CAKE
This is a delicious cake and it looks nice, too. You can bake your own or pick up an angel food cake at your local supermarket.

- Place cake on a serving platter, slice a 1 inch layer from top of cake and set aside.
- Cut around cake 1 inch from outer edge down to 1 inch from the bottom.
- Then cut around cake 1 inch from inner edge down to 1 inch layer on bottom.
- Create a tunnel in middle of cake by removing the tunneled out cake pieces and set aside.
- In a medium bowl, combine milk and pudding mix.
- Beat on low for 2 minutes.
- Fold cake pieces and 1-3/4 cups of whipped topping into pudding.
- Fill trench with pudding mixture.
- Replace top of cake.
- Spread remaining whipped topping over top and sides of cake.
- (AT this point I dust top of cake with a mixture of cocoa that has been mixed with a little powdered sugar) Refrigerate.
LAYERED CHOCOLATE CAKE

- Preheat the oven to 350 degrees F. Butter 2 (8-inch) cake pans and line with parchment. Butter the parchment. Sift together the cocoa, baking soda, and 1/2 teaspoon salt into a medium bowl. Into a separate bowl, sift the cake flour.
- In the bowl of an electric mixer, beat the brown sugar and butter until very light and fluffy, 5 minutes. Meanwhile, stir together eggs and vanilla in a small bowl. With mixer on medium speed, add the eggs in two batches, scraping bowl occasionally, until incorporated. Beat the batter on high speed 1 minute.
- Lower the mixer speed to low; add the sifted cocoa mixture and mix until just combined. Alternately, add flour in three parts with sour cream, beginning and ending with flour. With motor running, gradually add the hot water; beat until just combined. Scrape the bowl thoroughly and beat on low speed for 30 seconds.
- Divide the batter evenly between the prepared pans. Bake until the cake pulls away from sides of pan, 30 to 35 minutes. Transfer the cakes to wire racks to cool in pans 30 minutes; remove from pans to cool completely. Meanwhile, make the filling.
- To make the filling: In a medium saucepan, combine 2 1/2 cups water, sugar, corn syrup and cocoa. Bring the mixture to a boil over medium-high heat, stirring often. In a small bowl, combine the cornstarch and the remaining 1/2 cup water; stir into cocoa mixture. Return to a boil over medium heat, whisking constantly, boil 4 minutes or until the mixture is very thick and cornstarch is cooked. Remove from heat; stir in the butter and vanilla. Pour into a bowl and cover the surface directly with plastic wrap; cool completely. Refrigerate until chilled, at least 1 hour, before using.
- To make the frosting: In a microwave-safe bowl, combine the butter and chocolates; microwave until melted. Stir thoroughly to combine, then set aside. In a medium saucepan, whisk the eggs, sugar, and salt until combined; whisk in water. Cook the egg mixture over medium to medium-high heat until it registers 160 degrees on a candy thermometer, stirring constantly with a whisk (create as little foam as possible). Strain mixture through a fine-mesh sieve into a bowl; whisk in the reserved chocolate mixture. Cool completely; refrigerate until stiff enough to spread, about 2 hours and up to overnight.
- To assemble: Cut the tops off the cake layers to make them flat and even on top. Place the bottom layer with trimmed-side facing up on a serving platter; spread blackout filling on top. Place the top layer with trimmed-side facing down on top of the filling. Coat the cake with the frosting.
CHOCOLATE ANGEL FOOD CAKE RECIPE
Steps:
- Gather the cake ingredients.
- Place the egg whites in the bowl of a stand mixer fitted with the whisk attachment. Alternatively, use an electric hand mixer. Let stand for about 30 minutes to bring to room temperature.
- Meanwhile, sift 1 cup of granulated sugar, cake flour, and cocoa into a medium bowl. Sift again and set aside (reserve the sifter, you will use it again). Position a rack in the center of the oven and heat to 350 F.
- With the mixer on medium speed, beat the egg whites until frothy.
- Add the cream of tartar and beat on high speed, gradually adding the remaining 1/2 cup of sugar. Continue beating for 3 to 5 minutes, until stiff peaks form. Beat in 1/2 teaspoon of salt and 2 teaspoons of vanilla extract.
- Sift half of the flour-cocoa mixture over the beaten egg whites and gently fold it in with a spatula until blended but still streaky.
- Sift the remaining flour-cocoa mixture over the egg whites and continue folding until well combined.
- Spoon the batter into a two-piece 9.5-inch tube pan. Run a butter knife or spatula through the batter to release any air bubbles.
- Bake the cake for about 38 to 42 minutes, or until a wooden skewer or cake tester inserted into the cake comes out clean.
- Invert the pan and cool the cake completely.
- Slide a knife or spatula around the pan and center tube to loosen the cake. Grasp the center tube to remove the cake from the outer pan; use a knife or spatula to release the cake from the bottom of the pan.
- Place the cake on a cake plate or cake stand and dust with confectioners' sugar, or frost with the optional fluffy chocolate frosting. If desired, garnish with shaved chocolate. Make the Optional Frosting
- Gather the frosting ingredients.
- Put the semisweet and milk chocolate chips in a heat-safe bowl; set aside.
- Pour the cream into a small saucepan and cook over medium heat until steaming hot. Do not let the cream boil.
- Pour the cream over the chocolate chips and let stand for 5 minutes. Stir until melted. If there are still lumps of chocolate, place the bowl over a saucepan of simmering water and stir until smooth. Alternatively, microwave on low in short bursts, stirring frequently, until the mixture is smooth.
- Let the chocolate mixture stand, stirring every 15 minutes, until cooled to room temperature, about 70 F to 75 F. Cooling will take about 1 to 2 hours.
- Add a pinch of salt, the vanilla, and 2 to 3 pieces of butter to the chocolate mixture. Beat with an electric mixer with whisk attachment on low speed, adding the butter a few pieces at a time until smooth and well combined. Alternatively, use a stand mixer fitted with the whisk attachment.
- Increase the speed to high and beat for about 4 to 5 minutes, scraping down the bowl as needed.
- Frost the cake, garnish with the shaved chocolate, if desired, and served.

- In a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in whipped topping; set aside. Cut cake horizontally into two layers. - Sift flour, cocoa and 3/4 cup granulated sugar together 3 times; set aside.
- Beat egg whites at low speed in a large mixer bowl until foamy, about 5 minutes.
- Add vanilla, cream of tartar and salt.
- Gradually increase speed to medium while beating in remaining 3/4 cup granulated sugar, 1 tablespoon at a time, 5 minutes.
- When sugar is incorporated, continue beating to stiff peaks, 2 minutes more.

- Sift together 1-1/2 cups sugar, flour and cocoa; set aside. In a large bowl, beat egg whites, vanilla and chocolate flavoring until foamy.
