HONEY RICOTTA CHEESECAKE

Steps:
- Preheat the oven to 350 degrees F.
- Wrap the outside of a 9-inch springform pan with 2 3/4-inch-high sides with 2 layers of heavy-duty foil. Finely grind the biscotti in a food processor. Add the melted butter and process until the crumbs are moistened. Press the crumb mixture over the bottom (not the sides) of the prepared pan. Bake until the crust is golden, about 15 minutes. Cool the crust completely on a cooling rack.
- Blend the ricotta in a clean food processor until smooth. Add the cream cheese and sugar and blend well, stopping the machine occasionally and scraping down the sides of the work bowl. Blend in the honey and orange zest. Add the eggs and pulse just until blended.
- Pour the cheese mixture over the crust in the pan. Place the springform pan in a large roasting pan. Pour enough hot water into the roasting pan to come halfway up the sides of the springform pan. Bake until the cheesecake is golden and the center of the cake moves slightly when the pan is gently shaken, about 1 hour and 5 minutes (the cake will become firm when it is cold).
- Transfer the cake to a rack and cool 1 hour. Refrigerate until the cheesecake is cold, at least 8 hours and up to 2 days. Cut the cake into wedges and serve.

- Prepare crumb crust by combining cracker or wafer crumbs, butter or margarine, and 2 tablespoons sugar. Press mixture into bottom and 2 inches up sides of a 9 inch springform pan. Refrigerate.
- Melt chocolate chips in top of a double boiler over hot water. Set aside.
- Beat cream cheese and 1 cup sugar in a large mixing bowl until smooth and creamy. Blend in eggs. Gradually pour in chocolate mixture beating on low speed until well-blended. Add 1/2 cup sour cream, flour, vanilla. Blend until smooth. Pour into prepared crust.
- Bake in a preheated oven at 350 degrees F (175 degrees C) for 55 - 60 minutes or until filling is firm. Turn oven off. Cool cheesecake 1 hour without opening door. Cool completely. Chill several hours or over night. Garnish just before serving with sweetened sour cream made by combining 1 tablespoon sugar with 1/2 cup sour cream.

- Preheat oven to 350 degrees F ( 175 degrees C). Lightly grease a 9 inch springform pan.
- In a small bowl, mix together 1 1/2 cups chocolate wafer crumbs, 2 tablespoons sugar, and melted butter. Press onto the bottom and 1 1/2 inch up the sides of the prepared 9 inch springform pan. Bake at 350 degrees F (175 degrees C) for 10 minutes. Allow to cool. Reduce oven temperature to 325 degrees F (165 degrees C).
- To Make Filling: In a small saucepan, heat 1/4 cup whipping cream and 1/4 cup chocolate chips, stirring constantly, until chips are melted. Remove from heat.
- In a large mixing bowl, beat cream cheese and 1 cup of sugar until smooth. Add cocoa and beat well. Add eggs and beat on low until just blended. Stir in 1 teaspoon vanilla and reserved chocolate mixture until blended. Pour over crust. Bake at 325 degrees F (165 degrees C) for 45 to 50 minutes or until center is almost set.
- To Make Topping: In a small saucepan, heat 1/4 cup whipping cream and 1 teaspoon vanilla until just before boiling. Stir constantly and be careful not to boil over. Have 1 1/2 cups chocolate chips ready in a small bowl. Pour in the hot cream and stir with a spoon until smooth. Spread over baked cheesecake and refrigerate overnight.

- Preheat oven to 350°. In a large bowl, beat cream cheese and sugar until smooth. Beat in mascarpone cheese, sour cream, lime juice and vanilla. Add eggs; beat on low speed just until blended. ITALIAN CHEESECAKE II
This is a sweet, moist chocolate chip cheesecake with a hint of citrus and anise flavors. It is made with Ricotta cheese instead of cream cheese. This dessert has been an Easter tradition in my family since before my father was born. The recipe makes a lot, but it can easily be cut in half for smaller groups. Sprinkle additional chocolate chips on top of the cheesecakes before baking if desired.

- Preheat an oven to 375 degrees F (190 degrees C).
- Beat the eggs in a large mixing bowl, then mix in the sugar, vanilla flavoring, anise extract, lime zest, lemon zest, and ricotta cheese until smooth. Toss the chocolate chips with the flour in a plastic bag to coat. Fold in to the ricotta batter until evenly blended. Place the graham cracker crusts onto baking sheets. Evenly divide the batter among the crusts.

- Preheat oven to 350 degrees F.
- Grease a 9 inch spring form pan.
- To make crust, melt butter and combine with crumbs, prees onto bottom of pan.
- To prepare filling: Beat ricotta cheese, honey, and eggs in a medium bowl, until smooth.
- Bring whipping cream to a low boil in a saucepot.
- Remove from heat and stir in the chocolate until melted.
- Cool slightly.
- Blend into cheese mixture.
- Spoon into prepared pan.
- Bake in preheated oven for 30 minutes.
- Remove and prepare topping.
- Melt honey over low heat, and then remove and stir in the granola.
- Spread on the partially baked cake.
- Return to oven and bake the last 15 minutes.
- Total baking time should be 45 minutes.
- Remove from oven to a wire rack.
- Cool completely before removing sides.
- Wrap and chill.
- Makes 12 servings.

- Preheat the oven to 180° C. Line the base and sides of two 7” round cake tins with baking paper, leaving a high ‘collar’ of baking paper above the edge of the tins.
- Roughly chop the chocolate and place it in a heatproof jug with the coffee (if using) and then pour over the boiling water and stir to melt the chocolate. Set aside to cool. Sift together the flour, Xanthan gum, cocoa and baking soda. Add the ground almonds and whisk to combine thoroughly.
- In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter, sugar and vanilla extract until very light and fluffy. Gradually add the eggs, beating well between each addition. Turn the mixer down to low speed, and add the chocolate mixture and flour alternately, beating well between each addition.
- Scrape down the sides of the bowl, and then add the sour cream, mixing on low speed until just combined. Remove the bowl from the mixer and give the batter a last stir by hand, scraping down to the bottom of the bowl to ensure it’s all thoroughly mixed.
