These Triple Threat Chocolate Fudge Peanut Butter Cookies are heavenly! They are jam-packed with lots of chocolate and peanut butter to give you an explosion of incredible flavor.

2 cups all-purpose flour
1/2 cup dark cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter (at room temperature)
1/2 cup peanut butter
1 ½ cups sugar
2 eggs
2 teaspoons vanilla extract
4 ounces semi-sweet chocolate (melted)
2/3 cup milk chocolate chips
2/3 cup peanut butter chips

Steps:

  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat butter, peanut butter and sugar on medium speed until light and fluffy, about 3 to 4 minutes. Add eggs, one at a time, scraping down the sides of the bowl as needed. Add vanilla and beat until combined. Reduce speed to low and add flour mixture, beat to combine. Add melted chocolate and beat until combined. Fold in milk chocolate chips and peanut butter chips. Transfer the dough to a sheet of plastic wrap, wrap it up and refrigerate 3 to 4 hours.
  • Preheat the oven to 350°F. Line 2 cookie sheets with parchment paper.
  • Roll a heaping tablespoon of dough into a 1½-inch ball and place it on the prepared baking sheet. Repeat with the remaining dough, spacing the balls about 2 inches apart.
  • Bake until cookies are set in center and begin to crack, about 10 minutes. Let cookies cool on sheets for 2 minutes before transferring cookies to wire racks to cool completely.

3/4 cup chopped walnuts
1/2 cup plus 2 tablespoons all purpose flour
1/2 cup sweetened flaked coconut, lightly toasted
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
6 ounces unsweetened chocolate, chopped
2 cups semisweet chocolate chips (about 12 ounces), divided
4 teaspoons instant coffee crystals
1 tablespoon vanilla extract
1 1/2 cups sugar
4 large eggs
1/2 cup peanut butter chips

Steps:

  • Preheat oven to 350°F. Line 2 large rimmed baking sheets with aluminum foil or parchment paper. Combine chopped walnuts, flour, toasted coconut, baking powder, and salt in medium bowl and stir until well blended.
  • Combine butter, chopped unsweetened chocolate, and 1 cup chocolate chips in heavy medium saucepan. Stir over low heat until butter and chocolate are melted and smooth. Remove saucepan from heat.
  • Whisk instant coffee crystals and vanilla extract in medium bowl until coffee crystals dissolve. Add sugar and eggs. Using electric mixer, beat until mixture thickens, about 2 minutes. Beat in melted chocolate mixture, then chopped walnut mixture. Stir in remaining 1 cup chocolate chips and peanut butter chips. Mound 2 tablespoons dough for each cookie onto prepared baking sheets, spacing 2 inches apart.
  • Bake cookies until puffed and cracked but still soft in center, about 15 minutes. Let cookies cool on sheets 10 minutes. Using spatula, transfer cookies to rack and cool. (Can be made 2 days ahead. Store in airtight container at room temperature.)

Steps:

  • Mix sugar, cocoa and milk in a saucepan. Bring to a rapid boil and boil for exactly one minute. Pour over peanut butter and vanilla and nuts in a bowl and beat until thick -- this only takes about a minute. Immediately pour onto a buttered platter and allow to cool. Cut into squares.
  • Tip: Have your peanut butter and vanilla already in a bowl before boiling the mixture as you need to pour it over the peanut butter immediately.

½ cup peanut butter
1 tablespoon margarine
1 tablespoon butter

Steps:

  • Butter one 9x9 inch pan.
  • Combine the sugar, evaporated milk and cocoa in saucepan. Stir over high heat until mixture comes to a rolling boil. Lower heat to medium and continue cooking to a soft ball stage.

3 tablespoons cocoa
1/2 cup milk
1/4 cup butter or 1/4 cup margarine
3 cups quick-cooking oats

Steps:

  • Prepare a cooling surface: sanitize and butter a countertop, butter foil, or spread waxpaper.
  • In a large saucepan, mix sugar, cocoa, milk and butter.
  • Bring to a boil and cook for one minute.
  • (You will notice gloss disappear from mixture and slowly start to become more matified, at this point you must work very quickly. If this happens to completely during cooking, you might want to pour mixture into a bread pan and slice and serve like fudge or simply start over. When this occurs while spooning, speed it up!).
  • Remove from heat and quickly add oats and vanilla (as well as peanut butter and nuts if desired).
  • Drop immediately and rapidly by teaspoonful on waxed paper or buttered countertop.

2 cups granulated sugar
2 tablespoons equal exchange fairly traded baking cocoa
1 cup milk (or less)
1 teaspoon vanilla extract
1/2 cup peanut butter (more or less)

Steps:

  • Stir sugar and cocoa powder together in large saucepan. Stir in milk. Heat at medium-high heat until boiling, then lower heat and let low boil continue. Stir occasionally.
  • Have ready a greased pie plate or similar dish. Start checking temperature with a candy thermometer when bubbles get small and glossy. (Total cooking time will be 20 minutes or less depending on amount of milk.)
  • Remove from heat when mixture reaches 235 F degrees or "soft ball" stage. Set pan in cold water to cool. Add vanilla extract.
  • Let cool slightly and add peanut butter. Remove from cold water and stir quickly to mix in peanut butter. Pour fudge into pie plate. Let cool and cut into pieces.
