Steps:
- Preheat oven to 350 degrees F, then grease & flour a 13"x9" baking pan.
- FOR BASE ~ In a saucepam. combine dates & water. Bring to a low boil, then remove from heat & set aside to cool. Do not drain.
- In a mixing bowl, cream the sugar & shortening.
- Add eggs, flour, baking soda & salt, mixing well.
- Add dates & mix, then pour into prepared baking pan.
- FOR TOPPING ~ Combine the 3 topping ingredients, then sprinkle that mixture over the batter.
- Bake for 40 minutes or until a toothpick inserted in center comes out clean.

GRAMMA'S DATE SQUARES
A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
- In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
- Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

Got this from my mother-in-law. If she had told me ahead of time there were dates in this I may never have tried it. mmmmm good secret: must be prepared day ahead.

Steps:
- In medium bowl mix 1 1/2 c boiling water and 1 1/2 tsp baking soda with the dates.
- Set aside to cool.
- Beat together margarine,1 c sugar and eggs in large bowl.
- To this add vanilla extract and date mixture.
- Add flour, 3/4 tsp baking soda and salt.
- Pour into greased and floured 13x9 pan.
- Sprinkle 1/4 c sugar, nuts and chocolate morsels on top.
- Bake @ 325 degrees 45 minutes.
- The difficult part: set aside until the next day to eat.

- In a large bowl, cream 1 cup butter and brown sugar until light and fluffy. Beat in eggs and 2 teaspoons vanilla. Combine the oats, flour, 1 teaspoon salt and baking soda; gradually add to creamed mixture and mix well. Press two-thirds of oat mixture into a greased 15x10x1-in. baking pan. , In a large saucepan, combine the milk, chocolate chips, salt and remaining butter. Cook and stir over low heat until chocolate is melted. Remove from the heat; stir in walnuts and remaining vanilla. Spread over the crust. Sprinkle with remaining oat mixture. , Bake at 350° for 25 minutes or until golden brown. Cool on a wire rack. Cut into squares.

- Preheat oven to 350 degrees F (180 degrees C).
- Cook chopped dates and water over low heat until soft. Set aside.
- Cream together sugar and shortening. Add eggs and beat well. Stir in flour, salt, baking soda, cocoa and vanilla and mix well. Stir in date mixture.
- Pour in 9 x 11 inch pan and top with chocolate chips and chopped nuts. Bake until toothpick comes out clean. (10 - 15 minutes)

- In a large microwave-safe bowl, combine the marshmallows, peanut butter, chocolate chips and butter. Cover and microwave on high for 1-1/2 minutes. Stir until well blended (the mixture will be lumpy). Add cereal and peanuts; stir until well coated. - Line a 9×5 loaf pan with parchment paper, or use a silicone pan and place on baking sheet, set aside. You may also use an 8×8 square pan, your base will just be thinner.
- In a food processor add drained/pitted dates and nuts. Process until dates and nuts have broken down, and only small pieces of nuts can be seen. Mixture should be sticky.
- Transfer mixture to prepared pan, pressing evenly into all corners and press down flat. I like this roller.
- Using stovetop and small saucepan over low heat, melt chocolate, stirring frequently until smooth. Pour over bars and spread evenly.
