CHOCOLATE COCONUT COOKIES

- Preheat the oven to 350 degrees F. Cover 2 sheet trays with parchment paper.
- Whisk together the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl.
- Add the butter and sugars to a large bowl and beat with an electric hand mixer until light and fluffy, about 4 minutes. Add the vanilla and egg and beat until incorporated. Add the flour mixture in increments, beating until well combined. Briefly beat in the coconut flakes, chocolate chips and pecans until mixed together. Using your hands, roll the dough into walnut-size balls and drop 8 on a sheet tray, leaving 2 1/2 inches of space between them. Flatten them slightly. Bake 13 minutes. Let cool on the sheet tray 5 minutes.

- Place egg white in a small bowl; let stand at room temperature for 30 minutes. Beat on medium speed until soft peaks form. Gradually beat in confectioners' sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold in coconut., Drop by rounded tablespoonfuls 2 in. apart onto a parchment-lined baking sheet. Bake at 325° for 18-20 minutes or until firm to the touch. Cool for 1 minute before removing to a wire rack. Store in an airtight container.

CHOCOLATE KISSED COCONUT MACAROONS
Coconut and chocolate were made to be together! These are easy cookies that you can make with any variety of candy kisses.

- 1. Preheat oven to 350F. Line baking sheets with parchment paper or grease well.
- 2. In a large bowl, mix together coconut, flour and salt.
- 3. Add vanilla and sweetened condensed milk. Batter will be stiff.
- 4. Drop onto cookie sheets by a tablespoon or 2 oz cookie scoop. Make sure they are rounded mounds of dough. You should have 24 cookies.
- 5. Bake 16 to 20 minutes until golden. Ovens may vary so keep an eye on them, they should be a rich golden brown when they are done.
- 6. Remove from the oven and gently press a candy kiss into the center of each cookie. Move to wire rack to cool.
NO-BAKE CHOCOLATE COCONUT COOKIES

- Line a baking sheet with waxed paper.
- Mix oats and coconut in a large bowl until thoroughly combined.
- Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. - Heat the oven to 190C/170C fan/gas 5. Beat the butter in a large bowl using an electric whisk or in a stand mixer until very soft. Beat in both sugars and the vanilla until light and fluffy, then beat in the egg until just combined. Sift in the flour and a pinch of salt and stir to combine. Fold in 100g of the toasted coconut.
- Roll the dough into 14-16 balls (about 45g each) and arrange on a baking sheet lined with baking parchment, well spaced apart. Flatten each slightly using the palm of your hand and bake for 12-15 mins until golden brown and slightly firm to the touch. Leave to cool on the sheet briefly, then transfer to a wire rack to cool completely.
- Break the chocolate into pieces and tip into a heatproof bowl, then melt in 20-second bursts in the microwave. Or set the bowl over a pan of simmering water, ensuring the bowl doesn't touch the water, stirring until smooth. Dip one half of each cookie into the melted chocolate, then lay on a sheet of baking parchment and sprinkle with the remaining toasted coconut. Leave to set for about 30 mins.

- To make dough-In large mixer bowl cream butter with the cream cheese and sugar until light and fluffy.
- Add egg yolk and vanilla. Beat well.
- Combine flour,baking powder and salt.NOTE-A touch of almond extract intensifies cherry flavor.
- Gradually add to creamed mixture.
- Stir in cherries and 3 cups coconut. Cover tightly and chill for 1 hour ,or until firm.
- To bake-Shape dough into 1 inch balls.
- Roll in coconut.
- Place on ungreased cookie sheet.
- Bake 350°F for 10-12 minutes or until lightly browned.
- Remove from oven. Immediately press 1 kiss in center of each cookie.
- Cool 1 minute.
- Carefully remove from cookie sheet. Cool completely on wire racks.

- In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Beat in egg yolk and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in 3 cups coconut. Cover and refrigerate for 1 hour or until dough is easy to handle., Preheat oven to 350°. Shape into 1-in. balls and roll in the remaining coconut.
