Amazing Chocolate Chip Cookies {Honey-Sweetened} image

The most amazing honey-sweetened chocolate chip cookies ever.

Number Of Ingredients 9

1 cup (2 cubes) butter (room temperature)
1 cup (12 ounces) raw honey (see note)
2 eggs
1 tablespoon pure vanilla extract (see note)
3 cups (15 ounces) all-purpose white flour (see note)
1 teaspoon salt
1 teaspoon baking soda
3 cups (18 ounces) chocolate chips (see note)
1 cup (4 ounces) coarsely chopped walnuts or pecans

Steps:

  • Preheat oven to 375 degrees F (350 degrees convection bake). Line 2 half sheet baking sheets with parchment paper and set aside.
  • In the bowl of a stand mixer using cookie paddles, combine softened butter and honey and whip 1-2 minutes until lightened, scraping down sides of bowl as needed. Add eggs and vanilla and mix well.
  • Add flour, salt, and baking soda and pulse until just a few streaks of flour remain. Add chocolate chips and nuts and pulse a few more times just until barely mixed.
  • Scoop giant 4-ounce portions of cookie dough (you can use a greased ⅓ cup measuring cup and fill it slightly heaping). Then roll them gently until they start to form a ball. I like to roll it just barely so the cookie still has some rustic character. Place dough balls onto prepared cookie sheets in 2 columns of 3, allowing for 6 cookies per sheet, evenly spaced. Flatten each ball just slightly with a damp hand. See note for size variations.
  • Bake each pan in preheated 375 degree oven (350 convection) for 14-15 minutes or until cookies are golden brown on edges and slightly crackly on top.
  • Remove from oven and let cookies rest for 2 to 3 minutes on cookie sheet before removing to a cooling rack to cool completely.

1/2 cup packed dark brown sugar
1/3 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup milk chocolate chips
1 cup sliced almonds

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually add to the creamed mixture and mix well. Stir in chocolate chips and almonds. , Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Bake at 375° for 9-11 minutes or until edges are firm. Remove to wire racks to cool.

I am allergic to walnuts so if I decide to add nuts I use almonds. Now my daughter and I enjoy making them together.

½ cup honey
2 tablespoons brown sugar
1 egg, beaten
½ teaspoon vanilla extract
1 ¼ cups all-purpose flour

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a baking sheet.
  • Beat shortening, honey, and brown sugar with an electric mixer in a large bowl until smooth. Add egg and vanilla extract; beat until light and fluffy.
  • Sift flour, baking soda, and salt together in a bowl; stir into honey mixture until just incorporated and dough comes together. Fold chocolate chips and almonds into dough. Drop spoonfuls of the dough 2 inches apart onto the prepared baking sheet.
  • Bake in the preheated oven until edges just begin to brown, 12 to 15 minutes.

1 3/4 cups all purpose flour
1/3 cup good quality unsweetened Dutch-process cocoa powder
2 teaspoons of your favorite ground chile powder, such as ancho chile powder
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
3/4 cup (1 1/2 sticks) unsalted butter, at room temp
1 cup packed dark brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
1 cup dark chocolate chunks
1/2 cup unsalted pepitas (shelled pumpkin seeds), lightly toasted

Steps:

  • Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, chile powder, baking soda and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until light and creamy, about 1 minute. Add the brown and granulated sugar and beat until slightly fluffy, about 2 minutes, scraping down the sides of the bowl with a rubber spatula as needed. Add the egg and vanilla and beat until well combined.
  • Reduce the mixer speed to medium-low, add half the flour mixture, and beat until just combined, then add the remaining flour mixture and beat until the mixture just comes together, 1 to 2 minutes, being careful not to overmix. Add the chocolate chunks and pepitas and beat on low until just combined.
  • Use a 2-ounce ice cream scoop or a 1/4 cup measuring cup to scoop the cookie dough onto the prepared baking sheets, making about 14 cookies total and leaving at least 2 inches between each cookie.
  • Bake until the edges of the cookies are crisp but the centers are still tender, about 15 minutes, rotating the baking sheets top to bottom and front to back halfway through the baking time. Remove from the oven, set the baking sheets on wire racks, and let the cookies cool completely on the pans. They should keep up to 5 days in an airtight container.

A good friend, who shares my love of cooking, gave me this recipe about 5 years ago. I don't know where she got it. Everyone who tastes the cookies, loves them. The recipe has no eggs and for those with gluten allergies, they work fine with rice flour. Do let people know they are made with honey; some people are deathly allergic to it.

1 1/4 cups flour
1/2 cup butter
1 teaspoon baking soda
1 pinch salt
1/2 cup honey
1/4 cup sugar
1 teaspoon vanilla
1 cup chocolate chips

Steps:

  • Preheat the oven to 300°F.
  • Mix flour, baking soda and salt in a separate bowl.
  • Cream honey, sugar and butter together until smooth, add vanilla just before you finish with the sugar and butter.
  • Add flour mixture and beat until just smooth. Do NOT overbeat or the cookies will be too soft. (Trust me.)
  • Add chocolate chips.
  • Drop on cookie sheets about 2 inches apart.
  • Bake for 20 minutes (If you have a convection oven, they will be done in about 12 minutes.).
  • Let them cool on the pans unti you can lift them off with a spatula to cooling racks.

After decades of cookie baking, this is the chocolate chip cookie I like best. (For now. My favorites generally last for about six months before I find a new one.) Sometimes I make these cookies with walnuts, and sometimes I leave them out, depending on my mood.

8 tablespoons (4 ounces) butter, softened but still cool
3/4 cup (6 1/4 ounces) firmly packed dark brown sugar
1/2 cup plus 1 tablespoon (4 ounces) granulated sugar
1 large egg (1 1/2 ounces by weight)
1 teaspoon pure vanilla extract
1 teaspoon kosher salt
1 1/4 cups plus 3 tablespoons (7 ounces) all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
8 ounces bittersweet chocolate, chopped the size of chocolate chips, or bittersweet chocolate chips (about 1 1/2 cups)
3/4 cup (3 ounces) chopped walnuts, optional

Steps:

  • In a large bowl, using a wooden spoon, cream together the butter and brown and granulated sugars until smooth but not over mixed. (I do this by hand, but if you use a stand mixer fitted with the paddle attachment or a handheld mixer, beat on medium speed for 1 to 2 minutes, and then scrape down the sides of the bowl before continuing.) Add the egg, vanilla and salt and stir just until combined.
  • Sift in the flour, baking soda and baking powder and stir gently just until combined. Add the chocolate and nuts if using and stir just until evenly distributed throughout the dough. Cover and refrigerate for 30 minutes.
  • Position the racks in the upper third and lower third of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Scoop up 1-inch balls of the dough with a spoon or mini scoop and set them 2 inches apart on the prepared pans. Bake the cookies, rotating the pans after 7 to 9 minutes, for 13 to 17 minutes until the cookies are golden brown. If you like a very soft cookie, bake them for 13 minutes. If you like a crisp cookie, bake them for 17 minutes. Transfer to racks and let cool. I think these cookies are best the day they are baked, but they will keep in an airtight cookie jar for up to 4 days-if they last that long.
