CHOCOLATE CHERRY BROWNIE BITES
Steps:
- Heat oven to 350°F. Grease 24 mini muffin pan cups; set aside.
- Combine butter and sugar in bowl; beat at medium speed until creamy. Add eggs and cherry juice; continue beating until well mixed. Add flour, cocoa, salt and baking powder; beat at low speed until well mixed. Gently stir in 3 tablespoons chopped cherries.
- Spoon about 1 tablespoon batter into each prepared muffin pan cup. Bake 12-14 minutes or until toothpick inserted in center comes out clean. Cool in pan 2 minutes; remove to cooling rack. Cool completely.
- Place 1/4 cup whipping cream and chopped baking bar in bowl. Microwave30-60 seconds or until bubbling around edges. Stir until smooth and completely melted. Refrigerate 45 minutes or until thickened. Beat at high speed until light and fluffy; stir in 1 tablespoon chopped cherries.
- Place 1/4 cup whipping cream and chocolate chips in bowl. Microwave 30-60 seconds or until bubbling around edges. Stir until smooth and completely melted. Refrigerate 15 minutes or until thickened.
- Split brownies crosswise. Spread a heaping teaspoonful filling onto each cut-side of brownie bottom half; place cut-side of each brownie top half over filling.
- Stir topping mixture until just slightly thickened and glossy. Spoon about 1 teaspoon topping over each brownie bite, allowing it to drip down sides. Garnish each with 1 cherry slice. Let stand until set. Store refrigerated in container with tight-fitting lid.

- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray.
- Mix brownie batter as directed on box. Stir in 1/2 cup chocolate chips and 1/4 cup cherries. Spread in pan.
- Bake 28 to 31 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Sprinkle 1/4 cup of the chocolate chips over top of baked brownies; cool 30 minutes.

These Chocolate Covered Cherry Brownie Bombs are delicious bites of brownie surrounding cherries and then dipped in chocolate!

- Bake the brownies as directed and let cool completely. Do not overcook the brownies, crunchy brownie bits don't make for good bombs.
- Crumble the made brownies and mix in about 3/4 a cup of chocolate frosting. If you've made cake pops before, you want a similar consistency. You may need to add a little more, but you want to start out on the low side and add more if you need it.
- Once you have it the consistency needed (stays together easily but isn't too sticky to roll into balls), start with about 1 1/2 TBSP of brownie frosting mixture. (A cookie scoop makes it a lot easier.) Form it into a ball, but then make a hole in the middle that you can drop one cherry from the pie filling into.
- Fold the brownie ball in over the cherry or top with a little more of the brownie/frosting mixture and do your best to seal the cherry in.
- Once you have all your bombs made, pop them in the freezer for about 20 minutes.
- While they are hardening up in the freezer, melt your almond bark. You may need a little more or a little less depending on how heavily you coat the bombs.
- After the 20 minutes, take them out of the freezer and keep them in the refrigerator. Working one bomb at a time, drop it into the melted almond bark, pull it back out, and tap off the excess chocolate.
- Place it on wax paper and wait for it to dry completely.

- Lightly grease 1- 24 cup size mini muffin tin pan. Set aside.(Note: I had enough left-over brownie batter to make 6 more mini brownie bites.)
- In a medium mixing bowl, combine brownie mix, water or cherry juice, oil and eggs. Mix just until combined. Fill mini muffin cups 3/4 full. Bake according to package directions, testing after 15 minutes by inserting a toothpick into the center of a brownie bite and it comes out clean. Bake 2 to 3 minutes longer if necessary.
- Remove pan from oven. Immediately push (gently) one whole candied cherry into the brownie bite. Repeat with remaining brownie bites. Cool cups in pan for 10 to 15 minutes. Carefully remove brownie cherry cups from pan. Cool on wire rack.
- In a medium microwavable bowl stir together semi-sweet chocolate chips, sweetened condensed milk and 2 teaspoons cherry juice. Microwave on high for 10 seconds, stirring until chocolate chips have melted. Repeat as needed until all chocolate chips have melted and mixture is creamy. Add more cherry juice if necessary to reach desired drizzle consistency.
