- Open can of chipotle peppers in adobo sauce and take out 3 to 5 peppers. Measure 2 tablespoons adobo sauce. Store remaining peppers and sauce for another use.
- Blend chipotle peppers and 2 tablespoons adobo sauce, honey, lime juice, soy sauce, garlic powder, and flour in a blender until almost smooth.

- Preheat oven to 450°F.
- Purée chipotles in adobo with garlic and honey in a blender until you have a smooth glaze.
- Pat pork dry and sprinkle with salt and allspice, rubbing the mixture into the meat.
- Put pork on a foil-lined baking sheet and spread with the glaze to coat well.
- Roast the pork in the middle of oven until an instant-read thermometer registers 155°F, about 20 minutes.
- Let pork stand 5 minutes on a cutting board before cutting into thin slices.

- Heat oven to 400ºF.
- Place half the ribs in single layer on large sheet of heavy-duty foil. Mix mustard, pepper and honey; rub half evenly onto both sides of ribs. Bring up foil sides. Double fold top and both ends to seal packet. Repeat to make second packet. Place packets on baking sheet and bake 2 hours or until ribs are done.
- Heat grill to medium-high heat. Remove ribs from foil; discard foil. Brush ribs with barbecue sauce; grill 2 to 3 min. on each side or until lightly charred, turning occasionally. Serve with lime halves.

- Rinse chipotle chiles under running water. Slit them open and remove seeds. Pat chiles dry on a paper towel. Chop them and put them in a small bowl. Add honey, water and salt. Whisk thoroughly to combine.
- Preheat oven to 350°F. Heat a large oven-proof skillet over medium-high heat. Season pork chops with salt and pepper on both sides and set aside. Add oil to pan. When hot, add pork chops and brown, 1 to 2 minutes per side. If needed, brown chops in batches so as not to overcrowd the pan.
- Return all chops to skillet or a rimmed baking sheet and brush both sides with chipotle-honey glaze. Place in the oven and cook for 15 to 20 minutes, depending on thickness of chops, until they are cooked through. Watch closely as honey glaze scorches easily. Serve chops on a platter and drizzle with any leftover pan juices.

- Preheat the oven to 240°C/220°C fan-forced. Cut the potato (unpeeled) into 1cm fries. Place on an oven tray lined with baking paper. Season with salt and drizzle with olive oil. Toss to coat, then bake until tender, 20-25 minutes. TIP: Cut the potato to size so it cooks in time.
- While the fries are baking, slice the kernels off the corn cob. Heat a large frying pan over a high heat. Cook the corn kernels until lightly browned, 4-5 minutes. Transfer to a large bowl. TIP: Cover the pan with a lid if the corn kernels are "popping" out.
