2 tablespoons sesame oil
5 green onions (chopped)
1 tablespoon sesame seeds
10 oz mushrooms (sliced)
1/4 cup soy sauce
1/4 cup honey
1/4 cup chicken stock
1 teaspoon Sriracha sauce
2 cups snow peas (ends trimmed )
1/2 lb fettuccine pasta

Steps:

  • Heat sesame oil in a large frying pan on medium-high heat. Add chopped green onions and sesame seeds and saute for 2-3 minutes. Add sliced mushrooms and cook for another 2 minutes on medium heat. Remove the pan from the heat, and add soy sauce, honey, chicken stock, Sriracha - mix everything well to combine.
  • In a separate pan, boil snow peas 3-5 minutes until tender but still crunchy. Drain.
  • In another large pan, bring water to boil and cook pasta for 10-12 minutes or longer (according to pasta instructions) al dente. Drain.
  • Add drained snow peas and pasta to the vegetables and sauce in the large frying pan with vegetables from step 1. Mix everything well and heat everything through on medium-low heat.

1 tablespoon olive oil
2 cloves garlic, minced
2 cups cremini mushrooms, sliced
1 red bell pepper, julienned
1 carrot, julienned
1/2 cup snow peas
3 cups baby spinach
2 tablespoons reduced sodium soy sauce, or more, to taste
2 teaspoons sugar
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1/2 teaspoon Sriracha, or more, to taste

Steps:

  • In a small bowl, whisk together soy sauce, sugar, sesame oil, ginger and Sriracha; set aside. In a large pot of boiling water, cook noodles according to package instructions; drain well. Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes. Stir in egg noodles and soy sauce mixture, and gently toss to combine. Serve immediately.

1/4 cup water
3 tablespoons light soy sauce
6 tablespoons dark soy sauce

1/2 cup dark sesame oil
2 tablespoons sherry wine
4 teaspoons rice wine vinegar
1/4 cup honey
4 medium garlic cloves, minced
2 teaspoons minced fresh ginger
1 -2 tablespoon hot pepper oil (see instructions below)
1/2 cup hot water
1 lb chinese noodles (or any spaghetti or fettucini-type pasta)
2 tablespoons dark sesame oil
1 carrot, peeled (optional)
1/2 medium firm cucumber, peeled, seeded, and julienned (optional)
1/2 cup roasted peanuts, coarsely chopped (optional)
2 green onions, thinly sliced (optional)

Steps:

  • Cook noodles in large pot of boiling unsalted water over medium heat until barely tender and still firm. Drain immediately and rinse with cold water until cold. Drain well and toss noodles with (2 Tbsp) dark sesame oil so they don't stick together.
  • FOR DRESSING:
  • Combine all ingredients except hot water in a blender or food processor fitted with steel blade and blend until smooth. Thin with hot water to consistency of whipping cream.
  • For carrot curls: peel flesh of carrot in short shavings about 4" long. Place in ice water for 15 minutes to curl.
  • Just before serving, toss noodles with sauce. Garnish with cucumber, peanuts, green onion, and carrot curls. Serve at room temperature.
  • * HOT PEPPER OIL: the amount you use depends on how hot you like it. 2 tablespoons.
  • will give it a nice "bite." If your tastes run to the very hot, you might want to use 3TB.
  • If you want to make your own oil:
  • 1/4 cup hot red pepper flakes, 1 cup oil. Combine in a saucepan over medium heat. Bring to boil, and immediately turn off heat. Let cool. Strain in small glass container that can be sealed. Refrigerate.
  • Lasts indefinitely.

Steps:

  • Cook noodles according to package directions. Meanwhile, in a small saucepan, bring 1/4 cup water to a boil over medium-high heat. Add snow peas; cook, uncovered, just until crisp-tender, 1-2 minutes. Drain; immediately drop snow peas into ice water. Remove and pat dry., Drain noodles; rinse with cold water and drain again. 2 cans (14.5 ounces each) reduced-sodium chicken broth
1 piece fresh lemongrass (3 inches), smashed, or 3 sticks dried lemongrass
1 piece peeled fresh ginger (1 inch), cut into matchsticks
2 boneless, skinless chicken breast halves (6 to 8 ounces each), thinly sliced crosswise
8 ounces snow peas, trimmed and halved
2 tablespoons fresh lime juice, plus lime wedges for serving
1/4 cup fresh mint leaves
Asian chile sauce (such as Sriracha), for serving (optional)

Steps:

Chinese Noodles With Snow Peas and Soy Dressing image

This is a great recipe that has a lot of possibilities. Serve as a side dish, as a light lunch or dinner, add some roasted chicken or leftover roast pork for a heartier meal, add more veggies. The noodles can be tossed with some of the dressing and refrigerated overnight; add the vegetables close to serving time. Because it's served at room temperature, it's also great for pot lucks or buffets! Originally from a September 1989 Bon Appetit magazine and was featured in a "Casual Elegance" menu. Dried shitake mushrooms may also be used. Soak in hot water to cover until softened, about 30 minutes. Drain and squeeze out excess moisture and cut into 1/2-inch cubes, discarding stems. I find that I can use less oil by "eyeballing" it than the recipe specified, making a less oily ( and lower fat!) final product.

  • For Dressing:.
  • Whisk first 7 ingredients together in small bowl; gradually whisk in oil.
  • (Can be prepared 1 day ahead. Cover and let stand at room temperature. Rewhisk before using.).
  • For Noodles:.
  • Cook noodles according to package directions;drain and refresh under cold water; drain again.
  • Transfer noodles to large bowl; toss with 1/4 cup (or less) oil.
  • Heat remaining 1/4 cup (or less) oil in large heavy skillet over high heat.
  • Add all mushrooms and cook until just barely tender, about 4 minutes; pour off oil, add mushrooms to noodles.
  • Toss noodles with enough dressing to season to taste.
  • Let stand 2 hours at room temperature.
  • (Can be prepared 1 day ahead. Bring to room temperature before continuing.).
  • Cook snow peas in large pot of boiling water 30 seconds.
  • Drain and refresh under cold water; drain again.
  • Add peas, sprouts, green onions and 2 tablespoons sesame seeds to noodles and toss gently.
  • Sprinkle remaining 1 tablespoon sesame seeds over and serve.
