Delicious, nutritious vegetarian noodle bowl. Lots of color and flavor. You can find the green soybeans in the freezer department of your grocery store.

1 (8 ounce) package egg noodles
3 ½ cups vegetable stock
2 tablespoons soy sauce
1 tablespoon chopped fresh ginger
1 teaspoon Asian chile sauce
1 garlic clove, chopped
5 ½ ounces frozen spinach, thawed
1 ½ cups frozen green soybeans, thawed
1 red bell pepper, sliced

Steps:

  • Bring a large pot of water to a boil. Add noodles; cook until tender yet still firm to the bite, 1 to 2 minutes. Drain and divide among 4 large soup bowls.
  • Combine vegetable stock, soy sauce, ginger, chile sauce, and garlic in a saucepan over medium heat; bring to a gentle simmer. Simmer until fragrant, about 5 minutes.
  • Squeeze spinach to drain out excess moisture; coarsely chop. Add to stock with soybeans and red bell pepper; cook until heated through, about 1 minute. Ladle over noodles.

1 pound Chinese noodle
1 package California stir fry
1 tablespoon Vegetable oil
1 cup frozen corn
1 cup Bamboo Shoots
1 cup Classic stir fry sauce
1/2 cup Water
3 green onions (sliced for garnish)
1/2 cup Chow Mein noodles

Steps:

  • Cook the noodles according to package directions, drain, and set aside.
  • Place the California stir fry & oil into a medium sized wok.
  • Add the corn & bamboo shoots. Toss to Combine.
  • Pour the Classic Stir Fry Sauce & 1/2 cup of water. Simmer over medium heat until soft.
  • Add cooked noodles. Garnish with green onions. Toss to combine.
  • Sprinkle with Chow Mein noodles if desired and serve.

3 ounces dried soba noodles
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon olive oil
½ green bell pepper, chopped
¼ onion, sliced
½ cup fresh green beans, trimmed and cut into 1 1/2-inch pieces
1 cup baby spinach leaves

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Drop in soba noodles and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain.
  • Meanwhile, combine soy sauce, oyster sauce, and mirin in a small bowl. Set aside.
  • Heat olive oil in a skillet over medium-high heat. Add bell pepper, onion, and green beans and saute until softened but still crisp, 2 to 3 minutes. Add soba noodles and toss with the cooked vegetables. Mix in soy sauce mixture and cook for an additional 1 to 2 minutes. Add baby spinach and cook until desired doneness, 2 to 3 minutes. Serve in a bowl.

1 package (8.8 ounces) ready-to-serve brown rice
4 cups coleslaw mix (about 9 ounces)
2 cups shredded rotisserie chicken, chilled
2 cups frozen shelled edamame, thawed

Steps:

  • For dressing, whisk together first 7 ingredients. Cook rice according to package directions. Divide among 4 bowls., In a large bowl, toss coleslaw mix and chicken with half of the dressing. Serve edamame and slaw mixture over rice; drizzle with remaining dressing.
